Easy air fryer potato skins! A delicious appetizer for any occasion.

4 baking potatoes (small)
2 tablespoons olive oil
1 cup shredded cheese
4 strips of bacon, cooked and crumbled (optional for topping)
1/2 cup sour cream (optional for topping)
coarse salt and ground black pepper for seasoning
1 diced green onion (optional for topping)

Steps:

  • Clean and dry potatoes. Coat the skins with olive oil and sprinkle with salt. Pierce a few holes in the potatoes with a fork.
  • Place potatoes in the air fryer basket. Cook at 390 degrees for 30 minutes.
  • Let potatoes cool and then cut in half lengthwise. Scoop out inside of the potato leaving a little to hold the shape of the skin.
  • Season the inside of the potatoes with salt and pepper. Add in shredded cheese and then place skins back in air fryer.
  • Cook at 390 degrees for 5 minutes to melt the cheese.
  • Top with your favorite toppings like sour cream, bacon and green onion.

10 potato skins
1 cups cheddar cheese
1/2 cup bacon bits
1/2 cup green onions (chopped)
1/2 tbsp oil (avocado or olive oil spray)

Steps:

  • Place potato skins in one row in an air fryer basket. Spray them with oil. Air fry for 5 minutes at 360°F.
  • Top each potato skin with a generous handful of cheddar cheese.
  • Sprinkle with bacon bits. Air fry for 5 more minutes or until they are golden brown and the cheese is gooey and melted.
  • Top with green onions, sour cream and/or salsa.

4 medium russet potatoes, scrubbed
1 tablespoon olive oil, or as needed
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
1 teaspoon onion powder

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions for 3 minutes.
  • Place potatoes on a plate and use your hands to lightly cover them all with olive oil. Sprinkle with salt, pepper, and onion powder.
  • Cook in the preheated air fryer for 30 minutes, flipping over with tongs halfway through cooking. Let cool for a few minutes before serving.
