CRISP WONTONS WITH STRAWBERRY YOGURT
Sweet, crispy wonton wrappers topped with yogurt and fruit make a light dessert.

Steps:
- Heat oven to 400°F. Place wonton wrappers on cookie sheet. Brush with melted butter. Mix sugar and cinnamon; sprinkle over wontons. Bake 4 to 6 minutes or until golden brown and crisp.
- To serve, place 1 wonton on each of 6 plates. Spoon about 2 tablespoons yogurt on each wonton; top with about 1 tablespoon strawberries. Top with second wonton.
- Melt chocolate chips, and drizzle over wontons.

- Preheat oven to 400 degrees. Place wonton wrappers on a rimmed baking sheet and brush with butter. Sprinkle with sugar and almonds. Bake until golden brown and crisp, 5 to 7 minutes. Transfer wontons to a wire rack and let cool.
- Dividing evenly, top 6 wontons with yogurt, a drizzle of honey, and strawberries, then sandwich with remaining wontons. Serve immediately.

RHUBARB WONTONS
This is an Asian twist on rhubarb pie. Sweet and tangy rhubarb is wrapped in a wonton wrapper and fried to make a sweet treat with a nice crunch!

- Place the chopped rhubarb into the container of a blender or food processor. Blend until liquefied. Pour into a large bowl and stir in the flour and sugar until smooth.
- Lay a few of the wonton wrappers out at a time on a clean surface. Keep a small bowl of water nearby for dipping your fingertips. Place a generous spoonful of the rhubarb mixture into the centers of the wrappers. Dip your finger in the water and brush onto the edges to moisten. Fold the wrapper into a triangle to seal, then moisten the inside of the two corners and press them against the top corner to seal. Repeat with remaining wrappers and filling.
- Heat the oil in a deep fryer or deep heavy skillet to 375 degrees F (190 degrees C). Fry as many wontons as you can at one time without crowding. Turn as needed until golden brown on all sides, about 5 minutes per batch. Use a slotted spoon to remove to a paper towel-lined plate. Serve warm.

- Combine pork, water chestnuts, green onions, soy sauce, cornstarch, salt and ginger in medium bowl; mix well. Place 1/2 teaspoonful pork mixture in center of each wonton skin. Fold wonton skin over filling to form a triangle. Turn top of triangle down to meet fold. Turn over; moisten 1 corner with water. Overlap opposite corner over moistened corner; press together firmly.

STRAWBERRIES WITH CRISP WONTONS

- Heat oven to 425 degrees. Brush both sides of wonton wrappers lightlywith melted butter. Spread 2 tablespoons sugar on a plate and pressskins into sugar to coat evenly on both sides. Place on a nonstickor buttered baking sheet. Bake for 4 to 5 minutes, or until wontonsbegin to turn golden brown. Turn and cook an additional 2 minutesor until evenly browned. Remove from baking sheet and let cool.
- Slice the strawberries and toss with 1 teaspoon sugar. Whip thecream with five-spice powder or cinnamon and cloves.

- In a small bowl, beat cream cheese until smooth. Stir in the coconut, banana, walnuts and pineapple. Fold in marshmallow creme., Position a wonton wrapper with 1 point toward you. Keep remaining wrappers covered with a damp paper towel until ready to use. Place 2 teaspoons of filling in the center of wrapper. - In a large skillet, cook the pork, turkey and onion over medium heat until meat is no longer pink; drain. Transfer to a large bowl. - Preheat oven to 350 degrees.
- Spray a baking sheet with non-stick spray. Lay the wonton wrappers flat on the sheet.
- Melt the margarine in the microwave and brush each wonton wrapper with melted margarine. Sprinkle with cinnamon and Splenda to taste. Bake at 350 for approximately 8 minutes.
- Meanwhile, in a small bowl, combine yogurt and strawberry preserves, adding Splenda to taste, and a drop or two of liquid Stevia.
- Break the baked wonton wrappers into "chips" and dip into the yogurt!
