3/4 cup finely crushed saltines (about 22 crackers)
1 teaspoon seasoned salt
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/3 cup butter, melted
4 catfish fillets (about 8 ounces each)

Steps:

  • In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, covered, over medium-hot heat or broil 4 in. from the heat for 5 minutes on each side or until fish flakes easily with a fork.

1 pound catfish, flounder or other delicate-texture fish fillets
1/4 cup yellow cornmeal
1/4 cup dry bread crumbs
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1/4 cup French or ranch dressing

Steps:

  • Heat oven to 450°. Spray broiler pan rack with cooking spray. If fish fillets are large, cut into 4 serving pieces.
  • Mix cornmeal, bread crumbs, chili powder, paprika, garlic salt and pepper. Lightly brush dressing on all sides of fish. Coat fish with cornmeal mixture.
  • Place fish on rack in broiler pan. Bake uncovered 15 to 18 minutes or until fish flakes easily with fork.

1 shallot, thinly sliced
1/4 cup rice vinegar
Kosher salt
1/2 teaspoon granulated sugar
1/4 cup cilantro, tender stems and leaves, finely chopped
One 1-inch piece ginger, minced
3 cloves garlic, minced
2 tablespoons store-bought chile crisp
2 tablespoons honey
2 tablespoons fish sauce
Two 4- to 6-inch-long fillets halibut, tilapia, trout or cod
1 tablespoon neutral oil, such as canola or vegetable oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the shallot, vinegar, 1 teaspoon salt and the sugar in a small bowl. Cover and refrigerate while you prepare everything else.
  • Combine 2 tablespoons of the cilantro, the ginger, garlic, chile crisp, honey and fish sauce in another small bowl and stir into a thick paste.
  • Lay out 2 pieces of aluminum foil, each large enough to enclose a fish fillet in a packet, and place a fillet in the center of each. Sprinkle the fillets with the oil and season both lightly with salt all over. Coat both fillets with the chile crisp paste, making sure to cover all sides. Fold each piece of foil to enclose the fish, ensuring each is airtight. Place the packets on a baking sheet and bake for 10 to 15 minutes; when you open the packets, the fish should be opaque all the way through.
  • Unwrap the fillets and serve each topped with quick-pickled shallots and the remaining 2 tablespoons of cilantro.

½ cup shallots, thinly sliced
½ cup chopped fresh cilantro
¼ cup chopped green onions

4 tablespoons fish sauce
2 tablespoons lime juice, or more to taste
3 Thai chiles, finely chopped, or to taste
1 teaspoon white sugar

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Place catfish on a baking sheet.
  • Roast in the preheated oven until flesh is opaque, 10 to 15 minutes. Flake into large pieces with a fork. Lay the flaked fish out on a plate to dry.
  • Heat oil in a large pan over medium-high heat. Fry fish in batches until golden brown, about 5 minutes. Try not to break up the fish too much in the pan.

2 pieces catfish fillets
3 wedges lime and lime zest; quarter the lime after zesting (this recipe uses three quarter-wedges. Use the fourth in Kale curry (see recipe)))
3 tablespoons rice flour
1 piece green bird's eye chili,
1-1/2 teaspoons raw sugar (coconut palm sugar is best)
1-1/2 teaspoons Ponzu sauce (or soy sauce)

Steps:

  • CHILI SAUCE:
  • In a bowl, combine sugar, ponzu sauce, chili and juice of one lime wedge. Stir until sugar dissolves. Set aside.
  • FISH:
  • Place flour on a plate. Pat catfish dry and season both sides with salt and pepper (or mice salt and pepper into flour)
  • Coat one side of each fillet in flour
  • Heat 2 teaspoons of olive oil over medium to medium-high heat until hot. Add the fillets, coated side down and cook 5-7 minutes on the first side.
  • Flip the fillets and cook 1-2 minutes.
