1 (8 ounce) package refrigerated crescent roll dough
2 cups mozzarella cheese
4 eggs, beaten
¾ cup milk
salt and pepper to taste

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 425 degrees F (220 degrees C).
  • Lightly grease a 9x13 inch baking pan. Lay crescent rolls flat in the bottom of the pan. Combine cooked sausage, cheese, eggs, milk, salt and pepper; pour over crescent rolls.
  • Bake in preheated oven for 15 minutes, until bubbly and rolls are baked.

1 (8 ounce) package refrigerated crescent rolls
1 pound bulk pork sausage
½ cup chopped red bell pepper
¼ cup chopped onion
¼ cup chopped green onions
½ cup cream cheese
1 teaspoon ground black pepper
2 cups shredded Cheddar cheese
6 large eggs
¾ cup low-fat milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with nonstick spray. Line the bottom of the pan with crescent roll dough, pinching the perforated seams together.
  • Heat a large skillet over medium-high heat. Cook and stir sausage, bell pepper, and both onions in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Remove any extra oil from the pan. Stir in cream cheese and black pepper; cook until cream cheese is melted, 2 to 3 minutes. Remove from the heat and let cool slightly.
  • Arrange sausage-cream cheese mixture evenly over the dough and sprinkle Cheddar cheese over top. Beat eggs and milk together and pour over the cheese.
  • Bake casserole in the preheated oven until the bottom is brown, cheese is melted, and eggs in the center are set, about 30 minutes.

To increase to a 13x9-inch casserole you will need 1-1/2 packages of crescent rolls and all other ingredients will need to be increased slightly, I have even made this without the crescent roll crust!

1 1/2 lbs pork sausage links (casings removed)
1 small onion, finely chopped
1 (8 ounce) package refrigerated crescent dinner rolls
1 cup grated cheddar cheese
1 cup mozzarella cheese
1 cup half-and-half cream
6 large eggs, beaten
1/2 teaspoon seasoning salt (or to taste, or use white salt to taste)
1/2 teaspoon black pepper (or to taste)
1 pinch cayenne, pepper (optional)
1/3 cup grated parmesan cheese (or to taste, or use mozzarella or cheddar cheese)

Steps:

  • Grease an 11x7-inch baking dish.
  • In a large skillet over medium heat brown the pork sausage meat with onion until browned; place into a large bowl to cool slightly.
  • To the bowl with the sausage mixture add in mozzarella cheese, cheddar cheese, half and half cream, eggs, seasoned salt, black pepper and cayenne (if using) mix to combine well; set aside.
  • Unroll the crescent rolls then pinch all perforations to seal.

  • Remove then spread the sausage mixture evenly over the baked crust.

For kids, I usually have to choose the mozzarella though. For adults, I sometimes add some green chiles or a seeded jalepeno, chopped very fine. But I really like heat. I also sometimes increase the garlic!

Although I have 4 cups listed for the hash browns, you can really use any amount you wish, just make certain that it covers the bottom of the baking dish, when I make this dish, 4 cups seems to be the right amount, but you can increase it to 5 or 6 six cups, and also you can use as much sausage meat as you want, for this casserole the exact amounts do not really matter, but do use only one can crescent rolls for a 13x9-inch dish. If you are using Italian sausages in place of breakfast sausages, remove the meat from the casings first before browning.

  • Pour the eggs over top.
  • Lightly sprinkle paprika over the eggs.
  • Then sprinkle Parmesan cheese over the top.
  • Bake for about 45 minutes.

Steps:
