1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon ground cumin
1/8 to 1/4 teaspoon cayenne pepper
4 boneless pork loin chops (4 ounces each)
2 tablespoons canola oil
1 can (8 ounces) tomato sauce
1/2 cup chopped onion
1/2 cup chopped green pepper
1/4 cup chopped celery
1 tablespoon Worcestershire sauce
1/2 teaspoon minced garlic

Steps:

  • In a small bowl, combine the first six ingredients; rub over both sides of pork. , In a large skillet, cook chops in oil over medium heat for 2-3 minutes on each side or until chops are lightly browned; drain. Add the remaining ingredients. Cover and cook 4-6 minutes longer or until a thermometer reads 145°. Let stand for 5 minutes before serving.

1/4 cup all-purpose flour
4 boneless pork loin chops (3/4-inch thick and 4 ounces each )
5 tablespoons olive oil
1 large onion, thinly sliced
1/2 cup finely chopped green pepper
1 celery rib, finely chopped
2 garlic cloves, minced
2 cups stewed tomatoes
1/2 teaspoon salt
1/2 teaspoon sugar
1 to 1-1/2 teaspoons dried thyme
1/4 to 1/2 teaspoon pepper
1/4 to 1/2 teaspoon hot pepper sauce
Minced fresh parsley

Steps:

  • Place flour in a large resealable plastic bag. Add the pork chops, one at a time, and shake to coat. , In a large skillet, brown pork chops, over medium-high heat, on both sides in oil. Remove chops and keep warm. , In the drippings, saute onion, green pepper, celery and garlic until vegetables are tender. Stir in the tomatoes, salt, sugar, thyme, pepper and hot pepper sauce., Return pork chops to the pan. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until a thermometer reads 160°. Serve sauce with pork chops; sprinkle with parsley.

1 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon each chili powder, paprika, pepper and ground coriander
Pinch each ground cloves and garlic powder
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion
1 tablespoon butter
1 can (4 ounces) mushroom stems and pieces, drained
1 can (6 ounces) tomato paste, divided
1 boneless pork shoulder butt roast (2 to 3 pounds)
2 tablespoons all-purpose flour

Steps:

  • Combine all of the seasonings; set aside 1/2 teaspoon. In a saucepan over low heat, saute green pepper, onion and remaining seasoning mixture in butter until vegetables are tender. Stir in mushrooms and half the tomato paste. Spread mixture over the roast; place in shallow baking pan. , Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 160°-170°. Place roast on a serving platter; keep warm. , Transfer all but 2 tablespoons drippings to a measuring cup. Add enough water to measure 1-1/2 cups; set aside. Stir flour into drippings in pan. Gradually blend the 1-1/2 cups of liquid into flour mixture, stirring until smooth. Add reserved seasoning mixture and remaining tomato paste. Bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Serve with the roast.

8 pork loin chops, 3/4 inches thick,well-trimmed
3 tablespoons cooking oil
1 cup finely chopped yellow onion
1 cup finely chopped green pepper
1 cup finely chopped celery
2 cloves garlic, finely chopped
1 (28 ounce) can whole canned tomatoes, undrained
3 tablespoons tomato paste
3 cups beef stock or 3 cups beef broth
1 teaspoon sugar
1 bay leaf
1 teaspoon ground oregano
1 1/2 teaspoons salt
1 teaspoon pepper
2 tablespoons finely chopped parsley

Steps:

  • In a large, deep, heavy skillet with a lid, over moderately high heat, heat the oil and brown the pork chops for 3 minutes on each side.
  • Remove the chops as they brown, and keep warm in a 180 degree oven.
  • Reserve 3 tbls.
  • of the pan drippings, and pour off the excess.
  • Over moderate heat, with the pan drippings saute the onion, green pepper, celery and garlic, stirring for 5 minutes.
  • Add the tomatoes, tomato paste, beef stock, sugar, bay leaf, oregano, salt and pepper, and stir.
  • Reduce to moderately low heat, cover, and simmer for 30 minutes, stirring occasionally.
  • Return the chops to the skillet and cook covered for 30 minutes more, turning chops once.
  • Transfer the chops to a large, deep, heated platter, pour the sauce over the chops, sprinkle with pasrley and serve.

1 cup tomato juice
1 tablespoon cornstarch
1 teaspoon chili powder
1 teaspoon lemon juice
1/2 teaspoon sugar
1/4-1/2 teaspoon ground red pepper
1 cup celery (sliced)
9 ounces frozen cut green beans (thawed)
1 green bell pepper (chopped)
2 cups hot cooked rice

Steps:

  • For sauce, stir together tomato juice cornstarch, chili powder, lemon juice, sugar, red pepper, & 1/4C water. Set aside.
  • Spray lARGE SKILLET WITH COOKING SPRAY & heat to medium high heat.
  • Add celery stirring for 2 minutes, add green pepper and thawed green beans; stir-fry bout 1 1/2minutes or until veggies are tender-crisp.
  • Remove, and add oil to hot skillet or wok, if necessary. Add pork and stir fry 2-3 minutesor until no longer pink. Remove from skillet.
  • Stir sauce and add to center of skillet /wok. Cook & stir until bubbly & thickened.
  • Return vegetables/pork & stir all ingredients together to coat.
  • Cook & stir for 2 minutes.

This is a recipe I found on the internet and it was different than my usual method of making stew. I never used tomato paste, worcestershire sauce, sage, oregano or bay leaves in any of my stews so I decided to try this one out. Well, let me tell you no one could have been more pleased than I was after tasting this. This will be the recipe I use from now on when I make pork stew. Be sure not to leave your roux unattended - it must be stirred constantly so it doesn't burn. If you see black flecks it's burnt and the only thing you can do is throw it out and start over or it will have a very bitter taste. If you have trouble with burning you might want to lower your fire a bit and cook it over lower heat. If you're not familiar with andouille it is a very highly smoked and seasoned sausage that adds a tremendous amount of flavor. In fact, I was amazed at the difference in the taste of the gravy after I added the pork and andouille. If you do use andouille be careful not to add too much or it will overpower your dish. One link or 1/3 lb was plenty for this dish. You can use any type of pork - I had some boneless pork chops in the freezer so I just cubed those. I would recommend using a lean cut of pork as you don't want your stew to be too greasy. When pork loins (not tenderloins) go on sale this would be the perfect opportunity to make this dish. Naturally, living in South Louisiana, we serve this over rice and a big scoop of potato salad on the side finishes it off perfectly.

1/2 cup oil
1/2 cup flour (heaping)
2 cups onions, chopped
1 cup celery, chopped
1 tablespoon garlic, minced
1 medium green bell pepper, chopped
2 lbs boneless pork, cut in 1-inch pieces
1/3 lb andouille sausage, sliced 1/4-inch thick (1 Link)
2 tablespoons olive oil
8 cups chicken broth (2-32 Ounce containers)
3 tablespoons tomato paste
1 tablespoon Worcestershire sauce
2 bay leaves
1/2 teaspoon dried sage
1/2 teaspoon dried oregano
salt
black pepper
white pepper
ground cayenne pepper

Steps:

  • Season cubed pork to taste.
  • Heat olive oil in large heavy dutch oven over medium heat.
  • When oil is hot add half of the cubed pork and brown well.
  • Remove and brown the other half then set aside.
  • Add sausage to brown lightly then set aside with pork.
  • Add chopped onions, celery and bell pepper to dutch oven and saute until soft scraping browned bits off the bottom, about 30 minutes.
  • Add chicken broth and bring to a simmer.
  • Cook for 5 minutes.
  • In a large heavy stock pot heat 1/2 cup oil until hot.
  • Add flour, stirring quickly.
  • Stir roux over medium high heat until it turns a dark-reddish brown color (almost the color of milk chocolate - about 25 minutes).
  • Add chicken broth/vegetable mixture to roux to stop the browning process (be careful as it will splatter).
  • Add minced garlic, oregano, sage, worcestershire sauce, tomato paste and the remaining seasonings to taste.
  • Stir until the broth is incorporated into the roux.
  • Cover, lower heat and simmer gently for 45 minutes.
  • Add reserved pork and sausage and return to a simmer.
  • Simmer covered for 30 minutes or until pork is tender.

tony chachere creole seasoning
1 bell pepper (any color is fine)
1 clove garlic

Steps:

  • Make slits in the top of the roast.
  • Add 1 tbsp creole seasoning to the vegetable mixture and stuff into slits.
  • Rub seasoning over the outside of the roast.
  • Place on roaster uncovered at 350F until roast is browned.
  • Reduce heat to 300F cover and continue to cook for 1 1/2 to 2 hours.

8 pork chops, 1/2 inch thick
1/3 cup onion, chopped

1 egg, lightly beaten
1 (14 1/2 ounce) can tomatoes, whole, drained, cut up
1 (8 ounce) can tomato sauce

1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 bay leaf

Steps:

  • Heat oven to 350 degrees. Melt 2 T Butter Flavor Crisco in large skillet on medium heat. Add 4 chops. Brown both sides. Repeat with remaining chops. Remove from skillet. Set aside. Add remaining 2 T Butter Flavor Crisco, onion, celery, green pepper and garlic to skillet. Cook and stir until tender. Remove from heat.
  • Combine cornbread, egg and half of onion mixture in medium bowl. Set aside.
  • Add tomatoes, tomato sauce, brown sugar, chili powder, salt, pepper, cayenne and bay leaf to remaining mixture in skillet. Simmer about 10 minutes. Remove from heat. Remove bay leaf.
  • Place 4 pork chops in 3 qt casserole. Spread cornbread mixture over chops. Arrange remaining chops on top. Pour sauce over chops. Cover.
  • Bake at 350 degrees for 45 to 55 minutes, or until chops are tender.

Steps:

  • In 10-inch skillet, brown chops over medium heat.
