2 cups sour cream
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup melted butter
1 tablespoon salt
1 tablespoon onion, chopped
2 cups crushed corn flakes
1/4 cup melted butter
2 cups shredded cheddar cheese

Steps:

  • Thaw hash browns.
  • Combine sour cream, soup and 1/2 cup butter.
  • Add salt, onion and cheese; mix well.
  • Add potatoes.
  • Place mixture in a 13x9-inch baking dish.
  • Combine 1/4 cup melted butter and cornflakes.
  • Sprinkle on top of mixture.
  • Bake at 350° for 50-55 minutes, or until golden brown.

6 tablespoons unsalted butter
4 medium russet potatoes (about 2 pounds)
Kosher salt and freshly ground pepper
1/2 teaspoon paprika
1/4 cup heavy cream

Steps:

  • Make clarified butter: Melt the butter in a small saucepan over low heat and cook until the white milk solids separate and rise to the top, about 3 minutes. Turn off the heat and carefully skim off the milk solids with a spoon; discard. Strain the remaining butter through a fine-mesh sieve and set aside (you should have about 1/4 cup clarified butter).
  • Peel the potatoes and grate them on the large holes of a box grater into a colander. Squeeze out the excess moisture with your hands, then blot the potatoes dry with paper towels.
  • Heat the clarified butter in a large nonstick skillet over medium-high heat. Add the potatoes to the skillet in a few piles and flatten with a spatula; sprinkle with 1 teaspoon salt, a few grinds of pepper and the paprika. Cook, undisturbed, until the potatoes start browning on the bottom, about 5 minutes. Flip, then drizzle with the cream; cook, undisturbed, until absorbed, about 2 minutes. Continue cooking, flipping the hash browns occasionally, until golden brown and crisp all over, about 15 more minutes. Season with salt and pepper.

  • In a heavy medium skillet, heat 1 tablespoon olive oil over medium heat. Add onions and saute until softened and caramelized. Remove onions from skillet. Add remaining tablespoon oil to skillet and heat. 3 medium-sized potatoes (approx. 370g in total, unpeeled, left whole - Maris Pipers, King Edward and Desirée are all good choices)
50g butter, melted
4 tbsp sunflower oil

Steps:

  • Cook the potatoes in a saucepan of boiling water for 10 mins then drain and set aside until cool enough to handle.
  • Coarsely grate the potatoes into a bowl discarding any skin that comes off in your hand as you grate. Season well with salt and pepper and pour over half the butter. Mix well then divide the mix into 8 and shape into patties or squares. The hash browns can be prepared a day ahead and chilled until ready to cook or frozen for up to a month.
  • To cook, heat the oil and the remaining butter in a frying pan until sizzling and gently fry the hash browns, in batches if needed, for 4-5 mins on each side until crisp and golden. Serve straight away or leave in a low oven to keep warm.

1 cup shredded parmesan asiago and romano cheese blend
32 medium peeled and de-veined raw shrimp
1 cup vegetable oil (for frying)
4 -6 ounces refrigerated basil pesto

Steps:

  • Mix the potatoes and cheese.
  • Heat a thin layer of oil in large oil or on griddle, to medium heat.

4 large boneless skinless chicken breasts
7 ounces frozen mixed vegetables, thawed (antioxidant blend of carrots, broccoli, bell peppers, with garlic oil)
20 ounces Simply Potatoes® Shredded Hash Browns, thawed
2 cups shredded triple cheddar cheese, divided use
1 1/2 tablespoons seasoning salt

Steps:

  • Preheat oven to 375 degrees F. Rinse chicken breasts and pat dry. Remove any excess fat.
  • Using a sharp knife, cut a large pocket into the chicken breasts, cutting horizontally and lengthwise into the chicken, but not cutting through the back or sides.
  • Place the vegetables into a small bowl, add 1/2 cup of cheese and toss to mix. Divide mixture into 4 equal portions and put into the chicken pockets.
  • Use seasoned salt to sprinkle evenly over both sides of the chicken pieces.
  • In a small bowl, mix the Simply Potatoes® Shredded Hash Browns with 1 cup cheese. Use half of the mix to cover the bottom of a baking dish large enough to accommodate the 4 chicken breasts with no excess space between or around them. Lay the chicken breasts on top of the hash browns, then, using the remaining hash brown mixture, patting equal amounts onto the tops of each piece of chicken.

400g peeled celeriac , finely grated
400g potato (about 1 medium potato), peeled and finely grated
1 onion , finely sliced
pinch red chilli flakes
6 sage leaves , finely chopped, plus extra for frying
1 egg , plus 4 to serve (optional)
4 tsp cornflour
6 rashers smoked, streaky bacon
20g butter

Steps:

  • Combine the celeriac, potato, onion, chilli flakes and chopped sage in a bowl and season well with salt and pepper. Crack in the egg and scatter over the cornflour, then use a fork to thoroughly mix everything together, so that the egg is well distributed throughout the mixture.
  • Put the bacon under a hot grill to crisp up. Meanwhile, heat the butter in a non-stick frying pan over a medium-high heat until it bubbles then starts to brown and smell nutty. Add the extra sage leaves and swirl them around in the butter to infuse, then remove with a slotted spoon and place on kitchen paper for later.
  • Spoon enough of the celeriac mixture to form teacup-sized patties (about 7cm) into the pan, pressing them down gently with the back of a spoon or spatula. Turn the heat down a little and fry the hash browns for 3-5 mins on each side until golden and crunchy. Place in a warm oven with the grilled bacon while you fry some eggs, if you like. Serve the hash browns with the fried eggs on top, if using, along with the bacon and crispy sage.

Steps:
