3 tablespoons vegetable oil
1 lb frozen large shrimp, thawed, shelled, deveined
4 teaspoons creole seasoning
1 large green pepper, seeded and chopped
1/2 large onion, chopped
4 celery ribs, thinly sliced
3 medium carrots, peeled and sliced
3 garlic cloves, finely chopped
1 (14 1/2 ounce) can stewed tomatoes
1 cup diced tomato
cooked white rice

Steps:

  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add shrimp and season with 1 teaspoon of the Creole seasoning. Saute for 2 minutes per side. Remove to a plate.
  • Add remaining tablespoon oil. Saute the carrots for about 5 minutes, until just softening. Add the peppers, onion, celery and garlic. Cook for 5 minutes, stirring occasionally. Scrape up any browned bits in bottom of skillet.
  • Add tomatoes and remaining Creole seasoning. Break up large tomatoes with the back of a wooden spoon. Simmer, covered, for 7 minutes.
  • Stir in shrimp and heat through. Serve with cooked rice.

Spicy, sweet and tangy. This is an easy recipe that will get you compliments and requests for the recipe. This recipe comes from an old Better Homes and Gardens Cookbook. I have made a couple of changes. You can always kick it up a notch with extra hot sauce. The chili sauce really gives this dish it's unique flavor.

1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green pepper
2 minced garlic cloves
2 tablespoons olive oil
1 (1 lb) can diced tomato
1 (8 ounce) jar chili sauce
1 teaspoon salt
1 tablespoon sugar
1 teaspoon chili powder (more or less)
1 tablespoon Worcestershire sauce
1/4 teaspoon hot sauce
1 lb cleaned shrimp, raw

Steps:

  • Saute onion, celery, green pepper and garlic in the olive oil until tender, not brown. Add tomatoes, chili sauce, salt, sugar, chili powder and worcestershire. Simmer uncovered 45 minutes. If you want a thicker sauce, mix 2 teaspoons cornstarch with 2 tablespoons cold water; stir into sauce. Add the shrimp and cover, simmer about 5 minutes.
  • Serve over rice.

8 tablespoons (1 stick) unsalted butter
1 tablespoon plus 1 teaspoon all-purpose flour
2 green bell peppers, cut lengthwise into 1/4-inch-thick slices
1 large onion, halved lengthwise and cut into 1/4-inch-thick slices
2 celery stalks, cut into 1/2-inch-thick pieces
6 canned whole plum tomatoes (from one 28-ounce can), crushed
1 can (14 1/2 ounces) low-sodium chicken broth
2 teaspoons chopped fresh flat-leaf parsley, plus more for garnish
1 1/2 teaspoons Cajun seasoning
1/2 teaspoon paprika
1/2 teaspoon coarse salt
1/2 teaspoon hot sauce, such as Tabasco, or to taste
1 pound large shrimp (21 to 30), peeled and deveined
2 cups cooked white rice, for serving

Steps:

  • Melt butter in a large Dutch oven over medium heat. Add flour, and stir until light brown, 3 to 4 minutes. Add bell peppers, onion, and celery; cook, stirring occasionally, until softened, about 7 minutes. Add tomatoes, broth, parsley, spices, salt, and hot sauce.
  • Bring to a boil; reduce heat, and simmer until vegetables are soft and mixture is slightly thickened, about 30 minutes. Stir in shrimp, and cook until pink and cooked through, 3 to 5 minutes.
  • Sprinkle shrimp with parsley, and serve over rice.

1 1/2 lbs small shrimp, shelled,reserving the shells,and deveined
1/4 cup butter
2 cloves garlic, halved
1/3 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
3 ounces chopped mushrooms
1/4 cup finely chopped celery
2 teaspoons sweet paprika
3 tablespoons all-purpose flour
1 tablespoon tomato paste
2 tablespoons sour cream
1/4 teaspoon Tabasco sauce, to taste
rice, ring (recipe is in my cookbook)
1/4 cup minced fresh parsley

Steps:

  • Rinse shrimp well and pat dry on paper towels.
  • In a bowl, rinse reserved shells well in several changes of water, drain them in a colander.
  • Combine them with 2 cups water in a saucepan.
  • Bring to boil and simmer mixture for 20 minutes.
  • Strain broth through a sieve lined with a dampened paper towel (there should be about 1 ¼ cups of broth, if not, add enough water to measure, or reduce).
  • Reserve.
  • In a large skillet, melt 2 tblsps butter over moderately-low heat and in it cook the garlic, stirring, until it is pale golden.
  • Discard garlic and add shrimp to the oil.
  • Cook over moderate heat, stirring, for 3 minutes, or until barely pink, but not cooked through.
  • Transfer shrimp to a bowl, add remaining 2 tblsps of butter to the skillet and cook onion, peppers, mushrooms and celery, stirring, for 5 minutes.
  • Add paprika and flour and cook over moderately-low heat, stirring, for 3 minutes.
  • Stir in tomato paste and reserved shrimp broth and bring to boil.
  • Add shrimp mixture and simmer, stirring occasionally, for 3 minutes, or until shrimp are cooked through.
  • Stir in sour cream and Tabasco.
  • Bring mixture to a simmer, stirring, and season with salt and pepper (may be made 1 day in advance and kept covered and chilled. Reheat in skillet over moderately-low heat, stirring, until heated through, but do not let boil.) Spoon Shrimp Creole in center and around edge of rice ring and garnish with parsley.

1 cup uncooked rice
2 tablespoons butter or 2 tablespoons margarine
1 lb medium shrimp, peeled and deveined
1 (10 ounce) package frozen whole baby okra, sliced and thawed
1 onion, chopped, about 1 cup
1 garlic clove, minced
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon crushded red pepper flakes
1 bay leaf
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (10 2/3 ounce) can condensed tomato soup
1 tablespoon vinegar

Steps:

  • Cook rice according to package directions; set aside.
  • Meanwhile, in large nonstick skillet melt 1 T. butter over medium-high heat. Add shrimp; cook, turning once, until pink and opaque, 1-2 minutes per side. Remove from skillet: set aside.
  • In same skillet melt remaining 1 T. butter over medium-high heat. Add okra, onion, garlic, thyme, salt, pepper flakes and bay leaf; cook until vegetables are softened, about 6 minutes. Stir in tomatoes with juice, soup and vinegar; bring to a boil. Reduce heat to low. Cover; simmer until flavors blend, about 8 minutes.
  • Stir in reserved shrimp; heat through, 1 minute. Remove and discard bay leaf; serve over rice.

1 tablespoon Worcestershire sauce
1/2 teaspoon hot pepper sauce

2 pounds fresh or frozen uncooked medium shrimp, peeled and deveined
Hot cooked rice

Steps:

  • In a large heavy skillet, combine flour and oil until smooth. Cook and stir over medium heat until flour is a rich deep brown. Add onion, green pepper and celery; cook until vegetables are tender, 5-6 minutes. Add garlic; cook 1 minute longer. Stir in next 6 ingredients. Cover and simmer until heated through, 4-5 minutes. , Add shrimp. Simmer, uncovered, until shrimp turn pink, 5-6 minutes. Discard bay leaves. Serve with rice.

8 slices bacon, diced
1/2 cup chopped yellow onion
1/2 cup chopped green onion
1 1/2 cups chopped green bell peppers
1 cup chopped celery
1 clove garlic, minced
2 (14 1/2 ounce) cans plum tomatoes, coarsely chopped,with juice
3 tablespoons tomato paste
1/2 cup chicken stock or 1/2 cup broth
1/4 cup red wine vinegar
1/2 teaspoon dry mustard
4 drops Tabasco sauce
1 teaspoon salt
fresh ground pepper
1/2 cup dry red wine
1 lb large raw shrimp, peeled and deveined

Steps:

  • In a large skillet over medium-high heat, fry bacon until crisp, about 6 minutes.
  • With a slotted spoon, remove bacon to a plate, leaving 2 tablespoons bacon drippings in (the best part!) Reduce heat to medium.
  • Add onions, bell pepper, celery, and garlic and sauté until tender, about 6 to 7 minutes.
  • Add tomatoes, tomato paste, stock, vinegar, mustard, Tabasco sauce, salt, and pepper.
  • Return bacon to pan.
  • Simmer over medium-low heat, uncovered, for 20 minutes, stirring occasionally.
  • Add wine and shrimp and cook until shrimp turn pink, about 5 minutes.
