If anyone knows Creole food, it's Emeril. Get a nice BAM! to your food with this delicious sauce/dip. Terrific on any meat and it also works really nicely as a salad dressing. Enjoy!

- In a blender or food processor, combine all the ingredients except the oil and process for 20 seconds. With the machine running, add the oil in a steady stream through the feed tube and process until smooth and thick. Adjust the seasoning to taste.

- Smoky Mustard Dipping Sauce - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments. To make the grilled vegetables that are shown, slice 1 or 2 medium/large zucchini, 1 extra-large yellow summer squash, and 1 extra-large red bell pepper into bite-sized pieces or strips, toss them with 2 tablespoons olive oil, 1 teaspoon salt, and 1 teaspoon pepper. Grill the vegetables over medium-high heat for about 7 minutes, or until as done as desired; flip intermittently to ensure even cooking and serve with Smoky Mustard Dipping Sauce.
- Comeback Sauce - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments. Note - I used 1 1/2 tablespoons and this has a very good kick; start slowly with the chili sauce if you're sensitive to heat and spices.
- Herbed Mustard Vinaigrette - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments.
- Spicy Garlic Mustard Marinade - Combine all ingredients in a small bowl, whisk to combine, taste, and make any necessary flavor adjustments. Note - if you are sensitive to heat and spices, you may wish to initially halve the amounts of chili garlic sauce and sriracha, taste, and work up from there if desired. To make the grilled chicken that is shown, add 1 to 1.25 pounds boneless skinless chicken breast tenders to a large ziptop plastic bag, add the Spicy Garlic Mustard Marinade, 2 tablespoons olive oil, seal the bag, squish contents around to distribute the marinade evenly, and place bag in the refrigerator to marinate for at least 30 minutes, or up to 24 hours. Grill the chicken over medium-high heat for about 7 minutes, or until done; flip intermittently to ensure even cooking and serve with additional Spicy Garlic Mustard if desired.
- Sweet and Sour Mustard Dressing- Combine all ingredients in a small bowl whisk to combine (or add to a small mason jar with a lid, seal, and shake vigorously), taste, and make any necessary flavor adjustments.

KIELBASA WITH MUSTARD DIP

- Slice the kielbasa crosswise 1/2 inch thick diagonally. Heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan, add the kielbasa, and cook over medium-high heat for 5 to 6 minutes, turning occasionally, until the kielbasa is nicely browned on both sides.
- Meanwhile, in a medium bowl, whisk together the mayonnaise, Dijon mustard, whole-grain mustard, horseradish, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Serve the kielbasa hot from the pan with small wooden skewers and a dish of the mustard sauce on the side for dipping.

- With a mandoline slicer for fast and even slices (be sure to use the guard and be very careful not to cut fingers) cut onions 1/8 inch for straws and thicker for onion rings if desired.
- Once sliced, for straws separate rings and pull slightly apart to break them.
- In a bowl place evaporated milk, sugar, 1/4 teaspoon salt and hot sauce; whisk to dissolve sugar.
- Place onions in mixture and let sit for 5 to 10 minutes, stirring to coat well.
- Mix flour, cornmeal, baking soda, Old Bay Seasoning, cayenne pepper, and.
- 1 teaspoon salt in a ziploc bag; close and shake to mix.
- Heat oil hot to about 375 or 350 degrees Fahrenehit.
- Drain a handful or two of onions; place in bag and shake to coat well.
- Shake off excess and fry until crispy and golden brown, about 4 minutes.
- Drain on paper towels.
- Repeat until all onions are done.
- Serve immediately with the creole mustard dipping sauce.
- CREOLE MUSTARD DIPPING SAUCE:.
- In a small bowl, combine creole seasoning, garlic powder, onion powder, spicy brown mustard, dry ranch dressing mix, lemon juice, hot sauce, sour cream, and salt.
- Cover and chill.

CREOLE HONEY MUSTARD DRESSING
This is a wonderful salad dressing that works great as a dipping sauce for bread, raw veggies or fried chicken tenders. It is very spicy, but the spiciness can be adjusted by altering the ratio of creole mustard to Dijon mustard. While it isn't low calorie (it DOES contain a half cup of honey!), it can be made nonfat by using nonfat mayo. However, the amount of mayo called for is relatively small. I guarantee you that the nonfat version does NOT taste nonfat!

- Coarsely grind or crush the two cereals and set aside.
- Beat the egg with milk and set aside.
- Stir together the flour, onion and garlic powders and black pepper.
- Set aside.
- Dip the chicken: pieces in the seasoned flour.
- Move around to coat well, then shake off the excess flour.
- Dip in the egg wash, coating well, then dip in the cereal mixture, coating well.
- Heat oil in a large heavy skillet to 325.
- Drop coated chicken tenders carefully in the hot oil and cook until golden brown and fully cooked, 3 to 5 minutes depending on size.
- Drain and serve immediately with creole mustard sauce.
- For sauce:Mix all ingredients together.
