8 oz uncooked farfalle pasta (about 2 1/2 cups)
1 lb ground beef
1 can (15 oz) Muir Glen™ organic tomato sauce
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1 cup sour cream
1 cup cottage cheese
1/2 cup shredded Parmesan cheese
3/4 cup sliced green onions
1 1/2 cups shredded Cheddar cheese (12 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch baking dish or 2 1/2 to 3-quart casserole with cooking spray. Cook pasta until al dente, about 11 minutes; drain, and set aside.
  • Meanwhile, in 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain. Stir in tomato sauce, garlic salt and pepper; cover and simmer 2 to 3 minutes or until slightly thickened.
  • In large bowl, mix sour cream, cottage cheese, Parmesan cheese and 1/2 cup of the green onions; stir in cooked pasta.
  • Spoon half of the pasta mixture into baking dish. Top with half of the beef mixture and 3/4 cup of the Cheddar cheese. Repeat with pasta mixture, beef mixture and remaining 3/4 cup Cheddar cheese. Bake uncovered 25 to 30 minutes or until mixture is thoroughly heated and cheese is melted. Top with remaining 1/4 cup green onions, and serve.

1 stick (8 tablespoons) unsalted butter
4 medium zucchini, cut into 1/2-inch-thick rounds (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
1 yellow bell pepper, diced
1/2 medium onion, diced
2 cloves garlic, minced
1/2 cup sour cream
4 large eggs
8 ounces shredded Cheddar (about 2 cups)
1/2 cup fresh flat-leaf parsley, chopped
1/2 teaspoon Italian seasoning
2 cups cornflakes
1/2 teaspoon hot sauce, such as Tabasco

Steps:

  • Preheat the oven to 400 degrees F. Put a large colander inside a large bowl.
  • Melt 2 tablespoons of the butter in a large skillet over medium heat. Add one-third of the zucchini to the skillet, arrange in a single later and sprinkle with 1/2 teaspoon salt and a few grinds of black pepper. Cook, tossing occasionally, until the zucchini begins to soften and is golden brown in spots, about 5 minutes. Transfer to the prepared colander. Repeat to cook remaining zucchini in 2 more batches, using 2 tablespoons of butter and sprinkling with 1/2 teaspoon salt and a few grinds of black pepper for each batch. Transfer each batch to the colander.
  • Add 1 tablespoon of butter to the same skillet along with the bell pepper and onion and cook, stirring occasionally and scraping up any brown bits with a wooden spoon, until the vegetables are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Let cool for 5 minutes, then fold into the zucchini. Transfer the mixture to a 2-quart casserole dish.
  • Whisk together the sour cream, eggs, 1/2 teaspoon salt and a few grinds of black pepper in a large bowl. Fold in the Cheddar, parsley and Italian seasoning. Pour over the zucchini mixture, making sure that some of the egg mixture sinks down to the bottom.
  • Microwave the remaining 1 tablespoon butter in a medium bowl until melted. Fold in the cornflakes and hot sauce. Sprinkle evenly over the top of the casserole. Bake until the eggs are set and the cornflakes are deeply golden, 30 to 35 minutes. Let sit for 10 minutes before serving.

1 small onion, chopped
1/2 teaspoon garlic powder
1/2 teaspoon salt

2 1/2 lb. zucchini, sliced into ¼-inch thick rounds
1 red bell pepper, seeded and diced
1/2 yellow onion, chopped
3 tbsp. olive oil
1 1/4 tsp. kosher salt
1/2 tsp. ground black pepper
3/4 c. heavy cream
2 large eggs
8 oz. sharp cheddar cheese
3 cloves garlic, chopped
1/2 c. grated parmesan
1/3 c. chopped fresh parsley
1 1/2 c. panko or breadcrumbs
1/4 c. butter, melted, plus more for the pan

Steps:

  • Preheat the oven to 400˚. On a large sheet tray, combine the zucchini, bell pepper and onion. Drizzle with the olive oil and sprinkle with the salt and black pepper. Toss gently to combine. Cook for 30 minutes, until the zucchini is slightly softened and has released its liquid. Drain the mixture through a colander. Once cool enough to touch, press gently with paper towels to press out and soak up any extra moisture.
  • In a large bowl, whisk together the heavy cream and eggs. Mix in the cheddar cheese, garlic, ¼ cup of the parmesan cheese and all but 2 tablespoons of parsley (reserve this for later). Gently mix in the drained zucchini mixture. Transfer to a buttered 9- by- 13-inch, or three-quart, casserole dish.
  • Reduce the oven temperature to 350˚. In a small bowl, combine the panko and melted butter. Mix in the remaining ¼ cup of grated parmesan cheese and 2 tablespoons of parsley. Sprinkle all over the top of the casserole. Bake for 35-40 minutes, until the top is lightly golden brown, the edges are bubbly and the center is set. (If the topping is browning to quickly, cover loosely with a piece of foil.) Let rest for 10 minutes, then serve.

1 small yellow onion (diced)
3 cloves garlic (minced)
1 teaspoon kosher salt
2 teaspoons Italian seasoning
1 Tablespoon Worcestershire Sauce
3 Tablespoons flour (optional-helps thicken the sauce)
1 cup chicken broth
16 oz. tomato sauce
1 (14.5) oz can Diced tomatoes (undrained)
½ cup sour cream
2 ½ cups shredded cheddar cheese---1 cup in sauce (1.5 for top)
½ pound Ziti Rigati (see notes)

Steps:

  • Note: A deep, a 12 to 14-inch pot is the perfect size for this recipe, preferably oven-safe.
  • Pre-work: Preheat oven to 400 degrees. Shred the cheese and set it aside along with the sour cream. We don't want those to be cold when we add them to the sauce.
  • Cook and crumble the ground beef over medium heat. Add the onions halfway through and cook until softened.
  • Drain grease. Add the garlic and cook for 1 minute.
  • Add salt, Italian seasoning, Worcestershire sauce, and flour. Stir to combine and cook for 2-3 minutes to remove raw flour taste.
  • Add the chicken broth and use a silicone spatula to "clean" the bottom of the pot.
  • Add the tomato sauce and undrained diced tomatoes.
  • Bring to a boil, then reduce to a simmer. Let it bubble gently to thicken and reduce while you start to boil the water for the pasta.
  • Cook the pasta until al dente (refer to package instructions), and drain. Don't overcook.
  • Remove the sauce from the heat and let the base cool down a bit. Swirl in the sour cream and 1 cup (not all) of the shredded cheese, stir to combine. Stir in the pasta.
  • If your dish is not oven-safe, transfer to a lightly greased 9 x 13 inch casserole dish and top with remaining 1 ½ cups of cheese.
  • Bake uncovered for 10 minutes, until the cheese is melted. Let it sit for 5 minutes and serve with a side of cheesy garlic bread.

Steps:

  • Preheat oven to 400ºF
  • Drain shredded zucchini in a colander, sprinkle with salt and let stand for 10 to 15 minutes. Squeeze out excess moisture.
  • In a large bowl, combine zucchini, eggs, half of cheddar, and pepper jack cheese.
  • Spray a 13 x 9" casserole dish with nonstick spray. Press mixture into the bottom of the dish and bake for 20 minutes.
  • In a skillet over medium-high heat, brown ground beef until no longer pink. Drain fat. Add taco seasoning mix and 3/4 cup water. Cook until liquid is absorbed.
  • Add sour cream and salsa to the meat and stir until combined.
  • Spread the meat mixture evenly over the top the zucchini crust. Top with the remaining half of the cheeses.
  • Bake until cheese is bubbly, approximately 20 minutes.

Ground beef zucchini casserole is a quick and easy skillet meal that's also low carb, gluten free, and a keto ground beef casserole too.

1 lb of ground beef
2 tsp garlic cloves, minced
1 cup onion, diced
3 cups sliced zucchini
1/4 cup beef or chicken broth
1/3 cup sour cream
2 Tbsp cream cheese
1/2 tsp sea salt
1/2 tsp ground black pepper
1 tsp Worcestershire sauce (or coconut aminos for GF)
1.5 cups shredded cheddar cheese

Steps:

  • In a cast-iron skillet, cook the ground beef on medium heat until browned, about 5 minutes. Remove ground beef and drain grease, leaving 1 Tbsp of the grease in the pan to saute the vegetables in.
  • In the same skillet, cook the chopped onions over medium heat until they start to soften, about 3 minutes. Add the garlic to the pan and cook for 1 more minute.
  • Add the zucchini and broth to the pan and cook until the zucchini is soft, about 5 more minutes.
  • Turn the heat down to medium-low add the cream cheese and then sour cream.
  • Add the beef back into the pan along with the salt, pepper, and Worcestershire sauce. Stir gently to combine.
  • Sprinkle with the cheddar cheese over the top.
  • Place the entire dish in the oven and broil for 2 minutes until the cheese is browned and melted. Or, add lid to skillet and cook for 3-4 minutes until the cheese melts. Using the stovetop, your cheddar cheese won't be crispy, but it will melt.
