Canned beans and chickpeas are perfect for mashing when you need a speedy side dish

2 tbsp olive oil
1 shallot or 1⁄2 a small onion, finely chopped
2 garlic cloves , chopped
2 x 400g cans cannellini beans , drained
50ml stock or water
large handful flat-leaf parsley

Steps:

  • Heat the olive oil in a saucepan and tip in the shallots (or onion). Cook gently for 5 mins, then add the garlic cloves and cook for another 2 mins until soft.
  • Tip the cannellini beans into the pan and mash roughly, adding a little stock or water to loosen. Stir in the parsley with plenty of seasoning. Great with roast white fish, spicy chorizo and griddled scallops

Sometimes you've just gotta have mash but you simply don't have the energy (or time) to peel, cut, boil and mash potatoes. On such occasions, this Garlic White Bean Mash In A Flash is simply fabulous to satisfy your craving - suitably named because it requires such little effort to make. I made this as a side for my Healthy Parmesan Garlic Crumbed Fish to make a complete meal in 15 minutes. This recipe is also great to use as a topping for bruschetta.

1 tbsp extra virgin olive oil
1 garlic clove (, minced)
1 can cannellini beans ((15oz / 420g can), drained)
1/3 cup vegetable stock
1/2 lemon zest ((optional))
Salt and pepper to taste

Steps:

  • Heat oil in pan over medium high, add garlic and sauté until fragrant.
  • Add beans, stock and lemon zest.
  • Simmer for 2 minutes, then use a fork or potato masher to mash.
  • Season to taste with salt and pepper.

2 tablespoons extra-virgin olive oil, plus more for drizzling
1 onion, chopped
1 stalk celery, thinly sliced
1 carrot, peeled and thinly sliced
2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
2 cups cooked white beans, drained (equivalent to one 16-ounce can)
Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a medium saucepan over medium heat. Cook onion, celery, and carrot until translucent, 6 to 8 minutes. Add potatoes and white beans and cover with water by 2 inches. Season generously with salt. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 8 minutes. Drain, reserving about 1 cup cooking water.
  • Mash vegetables, adding reserved water to adjust consistency. Season with salt and pepper and drizzle with oil before serving.

  • In a large skillet, heat oil over medium heat. Cook garlic, stirring often, until golden, about 1 minute.
  • Add beans, sage, and 1 1/4 cups water. Cook, stirring often, until beans are hot and liquid thickens, about 4 minutes.
  • Mash beans, leaving some whole. Season with salt and pepper.

Everything you need to make this humble-but-satisfying meal is probably in your kitchen at this very moment. Two cans of beans (chickpeas and white beans) are simmered with milk, a whole head of garlic, herbs and nutmeg for a rich and creamy vegetarian dinner that can be on the table in under a half-hour. Be sure to use whole milk here - it's the most flavorful and will yield the best results. Feel free to wilt greens like chard, watercress, arugula or basil into the beans, and serve with grated Parmesan and red-pepper flakes. A slice of crusty bread slicked with caramelized garlic is the perfect crunchy accompaniment to velvety beans.

1 tablespoon unsalted butter
1 head garlic, halved crosswise
1 cup whole milk
1 (15-ounce) can chickpeas, with their liquid
1 (15-ounce) can white beans, such as cannellini or Great Northern, drained and rinsed
1 thyme sprig, 2 sage leaves or 1 bay leaf
1/8 teaspoon ground nutmeg, allspice or garam masala
Kosher salt and black pepper
4 slices crusty bread or thick toast
Extra-virgin olive oil, for serving
Freshly grated Parmesan, for serving
Aleppo pepper or red-pepper flakes, for serving

Steps:

  • In a medium saucepan, melt the butter over medium-high heat. Add the garlic, cut side down, and cook until golden brown, 1 to 2 minutes.
  • Add the milk, chickpeas and their liquid, white beans, thyme and nutmeg and stir to combine. Season generously with salt and pepper. When the mixture begins to bubble around the edges of the pan (you don't want it to come to a full boil), reduce the heat to low and let it simmer, stirring occasionally, until it has thickened and tastes great to you, about 15 minutes. Season with salt and pepper, to taste.
  • Use a fork to remove the garlic halves from the beans. Set aside until cool enough to handle, then use the fork to remove the cloves from the skins. Spread the cloves on bread or toast.
  • If you would like the beans to be more stew-like, mash some of the beans using a potato masher or the back of a spoon. Serve beans and milk in bowls. Garnish as you wish, with a drizzle of oil, a sprinkle of Parmesan and a pinch of Aleppo pepper and black pepper. Serve with the bread alongside for dipping.

1/2 cup roughly chopped chives
1/2 cup roughly chopped cilantro leaves and tender stems
1/2 cup tightly packed basil leaves
1/2 cup olive oil
Squeeze of lemon

Steps:

  • Make the oil: In a food processor, combine chives, cilantro and basil, and pulse until finely chopped. Add olive oil, and pulse again until mixture is silky and emulsified. Transfer to a small bowl, stir in lemon juice and salt to taste. Set aside.
  • Prepare the beans: In a 10-inch skillet, heat olive oil over medium-low heat. Add garlic and cook until translucent, about 1 minute. Add beans to the skillet and season with salt and pepper. Cook, stirring occasionally, until the flavors have melded, about 2 to 3 minutes. With the back of a spoon or spatula, smash about 1/3 to 1/2 cup of the beans and stir until they are incorporated into the rest of the bean mixture. A good portion of the remaining beans should maintain their structure.
  • Add stock or water and bring to a gentle simmer. Cook until sauce becomes creamy and is reduced by about about half, about 1 to 2 minutes more. Smash additional beans and add a few more tablespoons of water, if needed, to reach desired consistency and stir again to combined.
  • Transfer beans to a bowl and swirl with herb oil on top. Season with flaky salt, if desired.

2 cans white beans ((14oz/400g cans))
1 tbsp olive oil
2 sprig fresh thyme
1 lemon
1/2 cup vegetable stock
salt (to taste)
pepper (to taste)
EVOO (see notes)

Steps:

  • Drain the beans and rinse under a tap.
  • Add the olive oil to a small pan, pull the leaves from the thyme sprigs and add them to the oil.
  • Place over a low heat and gently warm the oil.
  • Once the thyme starts to smell aromatic, add in the drained beans, the zest of the lemon and the vegetable stock.
  • Stir over a medium/low heat until the beans are warmed through.
  • Use your wooden spoon (or a large fork) to squash the beans into the stock until you have a rustic mash.
  • Check your seasoning and serve drizzled with EVOO.

  • To make the white bean mash, add the drained cannellini beans to a food processor along with the grated parmesan, clove of garlic, and plenty of salt and pepper. Blitz thoroughly until smooth.
  • Rub the vegetables lightly with oil, and place in a griddle pan (or frying pan, if you don't have a griddle pan) over a fairly high heat. Allow them to cook for several minutes before flipping each piece over, repeating with the other side. The vegetables should have dark char lines.
  • To make the homemade pesto, add all of the pesto ingredients to a mini food processor, and blitz well until smooth.
  • Before serving, heat the white bean mash in the microwave. Serve it topped with the griddled vegetables and drizzled with the homemade pesto.
