WALDORF CHICKEN SALAD SANDWICHES

Steps:
- Preheat the oven to 400 degrees F.
- Set the chickens on a rimmed baking sheet, sprinkle them all over with salt and pepper, and drizzle with olive oil. Roast to an internal temperature of 160 degrees F, taken between the breast and thigh, about 1 hour.
- Allow to cool. With two forks, shred all the meat off the bone.
- In a large bowl, combine the shredded chicken, mayonnaise, grapes, walnuts, celery, apples, chives, lemon juice and big pinches of salt and pepper. Toss well.
- To assemble the sandwiches: Fill a leaf of butter lettuce with some chicken salad. Sandwich the stuffed lettuce with two slices of bread spread with mayo. Repeat for the remaining sandwiches. Slice in half and enjoy.
TURKEY WALDORF SANDWICH
I like to make this with holiday leftovers which makes it a snap to make. It's good on both raisin bread and croissants.

- In medium bowl, combine turkey, celery, apple, walnuts, mayonnaise,
- yogurt, nutmeg and cinnamon.
- Cover and refrigerate at least 1 hour or overnight to allow flavors to blend. (Turkey mixture will keep in the refrigerator up to 4 days.)
- To serve, arrange a lettuce leaf on a bread slice. Spoon 3/4 cup turkey mixture over lettuce leaf and top with other bread slice. Repeat with remaining ingredients.

CREAMY WALDORF SALAD
This Waldorf salad is different; it has pears in it. This is new to me and the dish is delish. It's more of a dessert than a sandwich spread. These are the salads I love to snack on.

Steps:
- In a large bowl, toss apples and pears with lemon juice. Add celery, cream, mayo, and salt; toss to coat.
- If not serving right away, cover and refrigerate up to 6 hours.
- To serve, gently stir bananas into fruit mixture. Arrange lettuce leaves on a large platter or line a pretty bowl. Spoon salad onto lettuce and sprinkle with nuts.
- If desired, place one lettuce leaf on each individual plate and spoon salad onto lettuce leaf and garnish with nuts.
APPLE WALDORF TEA SANDWICHES
I believe this is from Family Circle, January/February 2007. This salad does not contain meat. I'lm listing it exactly as specified, but I did cut the recipe in half and also used pecans instead of walnuts. Think you could add craisins. I also have seen different recipes using cinnamon bread.

- Using an electric mixer, combine cream cheese, mayonnaise, and sugar together. Add apple, walnuts, celery and cheese to mixture and stir until well combined. Spread onto a slice of white bread and top with a slice of bread. Use a bread knife to cut off crust; cut into 4 pieces.
