1/2 cup butter, cubed
2 carrots, finely chopped
2 celery ribs, finely chopped
1 medium onion, chopped
1/2 cup all-purpose flour
4 cups chicken or turkey broth
2 cups cooked wild rice
2 cups cubed cooked turkey
2 cups half-and-half cream
1 teaspoon dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a Dutch oven, heat butter over medium-high heat. Add carrots, celery and onion; cook and stir until tender., Stir in flour until blended; cook until bubbly. Gradually stir in broth. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened., Stir in remaining ingredients; return to a boil. Reduce heat; simmer, uncovered, 20 minutes, stirring occasionally.

4 ounce mushrooms (sliced)
1 cup carrots (sliced)
1 cup celery (sliced)
1 small onion (sliced (about 1/4 cup))
2 Tablespoons flour
3 cups chicken broth
1 cup quick cooking wild rice
1 12 ounce McCormick Simply Better Turkey Gravy
1 cup half and half
3 cups Turkey (shredded)
salt and pepper to taste
fresh chopped parsley for garnish

Steps:

  • In a large stock pot over medium high heat, add olive oil, mushrooms, carrots, celery and onion. Cook about 5 minutes until tender. Add the flour and cook for 1-2 minutes more.
  • Add the broth and bring to a boil. Add in the wild rice and reduce to a simmer and cook the rice until tender.
  • Add the turkey gravy, half and half, and turkey and cook until heated through. Add salt and pepper to taste and garnish with freshly chopped parsley.

⅔ cup uncooked wild rice
2 cups water
6 tablespoons butter
¼ cup finely chopped onion
¼ cup finely chopped celery
⅓ cup all-purpose flour
4 cups turkey broth
⅓ cup shredded carrot
2 cups chopped cooked turkey
½ teaspoon kosher salt, or to taste
½ teaspoon ground black pepper, or to taste
¼ cup chopped slivered almonds
½ teaspoon lemon juice
¾ cup half-and-half cream

Steps:

  • Bring the wild rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender but not mushy, 40 to 45 minutes. Drain off any excess liquid, fluff the rice with a fork, and cook uncovered 5 minutes more. Set the cooked rice aside.
  • Melt the butter in a soup pot over medium heat. Cook and stir the onion and celery until the onion is translucent, about 5 minutes. Stir in the flour, and cook until it turns a pale yellowish-brown color, 3 to 5 minutes. Gradually whisk in the turkey stock until no lumps of flour remain. Stir in the carrot. Bring the mixture to a simmer, and cook, whisking constantly, until the stock is thick and smooth and the carrot is tender, about 2 more minutes.

1 cup carrot, chopped
1 cup onion, chopped
1 cup green onion, chopped
1 teaspoon fresh rosemary, chopped or 1/4 teaspoon dried rosemary
1/4 teaspoon black pepper
3 garlic cloves, minced
32 ounces fat-free low-sodium chicken broth
1 1/2 cups smoked turkey breast, chopped (~1/2 lb)
1 cup wild rice, uncooked (or mixed brown & wild)
1/3 cup all-purpose flour
2 3/4 cups 1% low-fat milk or 2 3/4 cups skim milk
2 tablespoons dry sherry
1/2 teaspoon salt

1/2 cup diced onion
2 cloves garlic - minced
¾ cup diced celery
¾ cup diced carrots
½ cup diced mushrooms
2 cups diced/shredded turkey - leftovers work perfectly
1 box quick cook long grain wild rice
4 cups chicken broth
1 cup water
2 cups milk - I used skim
2 tsp salt
2 tsp pepper
1/2 cup all purpose flour
7 tbsp butter

Steps:

  • In a large pot over medium heat, saute the onions and garlic in 1 tbsp of butter.
  • Once the onions start to get translucent add in the carrots, celery and mushrooms.
  • While the vegetables are cooking, in a medium saucepan over medium heat, melt butter.
  • In a small bowl, combine salt, pepper and flour.
  • Stir in contents of rice seasoning packet into the saucepan with the melted butter (NOT the rice).
  • Reduce heat to low, then stir in flour mixture by adding 1- 2 tablespoons at a time, to form a roux.
  • Whisk in milk, a little at a time, until fully incorporated and smooth. Cook until warm, 5 minutes.
  • Pour the broth, water and turkey into the larger pot with the vegetables. Bring just to boiling, then stir in rice.
  • Stir the milk mixture into broth and vegetables. Cook over medium heat until heated through and the rice and vegetables are tender.
  • Enjoy!

1 smoked turkey or 1 chicken carcass, cut into 4 pieces

1 tablespoon small diced celery

1 teaspoon freshly cracked black pepper

1 cup heavy cream

  • In a small saucepan over medium heat, melt butter. Add the vegetables and saute for 4 to 5 minutes. Season with the salt, black pepper and cayenne. 2 tablespoons frying oil
1/2 lb (225g) button mushrooms
2 tablespoons butter
1 large onion (or 2 medium)
2 large carrots
2 stalks celery
4 cloves garlic
1 teaspoon thyme
1/2 teaspoon poultry seasoning (optional)
1 tablespoon flour
1/3 cup dry white wine (80ml)
1 cup (175g) wild rice
8 cups turkey or chicken broth (2 liters)
3 cups cooked turkey chopped into small cubes (375g)
1/4 cup heavy cream
1 teaspoon lemon juice
salt and pepper (to taste)

Steps:

  • Prepare the ingredients: cut the mushrooms into 1/2-inch (1 cm) cubes or slices, dice the onion, finely chop garlic, cut celery into slices, cut carrots into 1/2-inch (1 cm) cubes, chop turkey meat into small cubes.
  • Heat the oil in a large pot over medium-high heat. When hot, add the mushrooms in an even layer. Don't stir for the first 1-2 minutes letting the mushrooms brown. Then cook for 2-3 minutes, stirring from time to time until the mushrooms have reduced their volume and are browned. Transfer the mushrooms to a plate.
  • Reduce the heat to medium/medium-low. Add the butter to the pot. When it's melted and bubbling, add the onions, carrots, and celery. Cook for a couple of minutes until the onions are soft and translucent.
  • Add the garlic, thyme, and poultry seasoning. Cook for 30 seconds.
  • Stir in the flour, cook for 1 minute.
  • Add the wine, cook until almost evaporated.
  • Add rice and broth. Bring to a boil then simmer over low heat for 40 minutes.
  • Add turkey and mushrooms to the pot. Cook for a further 5 minutes.
  • Add cream and lemon juice. Take the pot off the heat and season with salt and pepper.

1/2 cup plain whole milk yogurt (or sour cream)
2 cups shredded cooked turkey
1/2 medium lemon, juiced

Steps:

  • Preheat the oven to 450 degrees F.
  • In a dutch oven or stock pot, lightly sauté the garlic and chopped onion in the oil over medium-high heat.
  • Add in the chopped carrots and celery and continue to sauté for about 5-7 minutes.
  • Add in the wild rice and chicken broth, then bring to a simmer.
