Steps:
- Bring water to a boil in a large cooking pot and add a tablespoon of salt. Cook the pasta al dente according to the instructions on the packet. Depending on the pasta, it will be around 10 minutes. Drain the water from the pasta. Keep a ½ cup (100 ml) of pasta water for later.
- Wash the leeks thoroughly and cut in fine rings. Peel and mince the garlic. Drain the liquid from the canned tuna.
- Heat the olive oil in a large cooking pan on medium-low heat. Add the leek and garlic and gently cook for 4-5 minutes while stirring frequently until the leeks start to soften.
- Add the flaked tuna, basil, oregano, nutmeg, salt and pepper and fry for 2 minutes. Add the cream, lemon zest, lemon juice and the ½ cup of pasta water and leave to cook for 4 minutes.
- Mix the cooked pasta with the creamy tuna and leek sauce and serve immediately. Garnish with parmezan cheese shavings and parsley.

- Stir the lemon juice and dijon mustard into the sauce and season with salt and lots of pepper. Pour the rigatoni, sweetcorn and creamy tuna sauce into a baking dish (around 12 inch x 10 inch). - In a large nonstick pot (the skillet in pictures was used only for photos to better show the dish -- use a pot). add in the olive oil. Turn the stove to medium-high heat and once the oil is shimmering, add in the onion. Saute for a few minutes and add in the garlic. Stir until fragrant, about 30 seconds.
- Add in 1 cup of the milk, the water, broth, and UNCOOKED pasta shells. Add some salt and pepper to taste (I use about 1 teaspoon salt and 1/2 teaspoon freshly cracked pepper). Lower the heat and bring the mixture to a simmer and cook, uncovered, stirring often until the pasta is al dente (according to package directions) The pasta will continue to cook a bit over the next few minutes so don’t overcook it here*.
- Stir in the remaining 2 tablespoons milk, Dijon mustard, and 1 tablespoon fresh lemon juice. Add the drained tuna and mix gently until combined. Season with salt and pepper. Let the pasta rest for about 6-8 minutes. It will continue to thicken and get nice & creamy. Stir in the frozen peas.
- Add freshly shredded cheddar cheese and fresh parsley as desired. Or serve without the cheese and with additional lemon as desired. Enjoy immediately.

- Cook the pasta according to the packet instructions minus 2 or 3 minutes. You want the pasta to slightly under done.
- While the pasta is cooking make the sauce. Melt the butter on a medium saucepan. Once melted add the flour, stir for about 1 minute. Then pour in the milk, I add 100ml at a time. I use a whisk to stir in the milk. This has always worked to achieve a really smooth sauce.
- As soon as all the milk has been added, stir in the mustard and a small pinch of the black pepper. When the sauce has thickened and starts to bubble turn off the heat then add 100g of the cheese and stir until the cheese has melted.

- Bring a pot of water to a boil for the pasta. Once boiling, add the pasta and continue to boil until the pasta is tender. Drain the pasta in a colander.
- While the pasta is cooking, prepare the rest of the dish. Add the butter and minced garlic to a large skillet. Sauté the garlic over medium heat for about one minute, or just until it is soft and fragrant, but not browned.
- Add the frozen peas and season with a pinch of salt and pepper. Sauté for a couple minutes more, or until the peas are heated through.
- Add the half and half to the skillet and allow it to come up to a simmer, stirring frequently to keep a skin from forming on the surface or the bottom from scorching. Let the half and half simmer for about 3-5 minutes, or just until it reduces slightly.
