2 tablespoons olive oil
1 medium onion, chopped
3 medium carrots, chopped
5 garlic cloves, minced
3 cans (28 ounces each) crushed tomatoes, undrained
1 carton (32 ounces) vegetable broth
1 tablespoon sugar
1 teaspoon dried basil
1 bay leaf
3 packages (9 ounces each) refrigerated cheese tortellini
3/4 cup half-and-half cream
Shredded Parmesan cheese and minced fresh basil

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion and carrots; cook and stir until crisp-tender, 5-6 minutes. Add garlic; cook 1 minute longer. Transfer to a 6- or 7-qt. slow cooker. Add the tomatoes, broth, sugar, basil and bay leaf. Cook, covered, on low until vegetables are tender, 6-7 hours., Stir in tortellini. Cook, covered, on high 15 minutes. Reduce heat to low; stir in cream until heated through. Discard bay leaf. Serve with Parmesan cheese and basil. Freeze option: Before stirring in half-and-half, cool soup and freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add half-and-half as directed.

This might just be the best tomato soup you've ever had! It's so easy to make, perfectly flavorful and satisfyingly hearty. And talk about comforting soup after a long day. The cheesy tortellini and cream in this soup just make it truly irresistible!

1 3/4 cup diced carrots ((3 medium))
1 3/4 cup diced yellow onion ((1 large))
2 Tbsp olive oil
5 cloves garlic (, minced)
3 (28 oz) cans whole Roma tomatoes
1 (32 oz) carton vegetable broth
1/3 cup chopped fresh basil (, plus more for garnish)
2 bay leaves
1 Tbsp granulated sugar
Salt and freshly ground black pepper (, to taste)
16 oz refrigerated three cheese tortellini
3/4 cup heavy cream
Parmesan (, shredded, for serving)

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add carrots and onion and saute 3 - 4 minutes, add garlic and saute 1 minute longer.
  • Pour mixture into a 6 or 7 quart slow cooker along with tomatoes, vegetable broth, basil, bay leaves, sugar. Stir and season with salt and pepper to taste. Cover slow cooker and cook on LOW 6 - 7 hours or HIGH 3 - 3 1/2 hours.
  • Remove bay leaves then puree mixture well in small batches in a blender (only fill blender 2/3 full and cover removable insert with a kitchen towel) or us an emulsion blender*.
  • Stir in tortellini, cover and cook on HIGH heat 15 - 20 minutes longer (or until heated through).
  • Reduce heat to warm, stir in heavy cream. Serve topped with parmesan cheese and fresh basil.

2 cups fresh baby spinach
1/2 cup fresh basil
1/2 cup grated Parmesan cheese, (plus more for serving)

9 ounces refrigerated cheese tortellini
1/2 cup vegetable broth

Steps:

  • Puree of the tomatoes (14 oz) in a food processor until smooth.
  • In a medium skillet over medium heat, add pureed tomatoes, garlic and heavy cream. Bring to a boil and stir. Reduce heat to low simmer and stir until slightly thickened.
  • Increase heat to medium. Add spinach, basil, Parmesan cheese, oregano, tortellini and remaining tomatoes (including liquid) to the skillet. Stir until spinach is wilted. Add vegetable broth and press the tortellini below the liquid (if needed added a bit more cream or broth). Cook until the tortellini is warmed through, about 5 to 8 minutes.
  • Sprinkle with additional Parmesan cheese and enjoy!

480 grams/1 pound ground Chicken (also known as minced chicken in Asia.)
1 TBLS Olive Oil
2 TBLS Unsalted Butter
1 medium Yellow Onion - diced
1 large Carrot (350-385 grams) - diced
6 Garlic cloves - minced
5-8 Red Chilies, to taste and deseeded depending on your heat level preference
½ cup Dry White Wine (I use sauvignon blanc, but unoaked chardonnay or pinot grigio would work too!)
2 (14-ounce) cans chopped tomato (I used chopped Italian tomatoes with olive oil & garlic. But you can use any type of chopped canned tomatoes, including fire roasted for an extra bold and smoky flavor.)
1 (15-ounce) can Chili Beans (I use S&W Chili Beans with pinto beans, chili peppers, onion, garlic in a zesty tomato sauce. But feel free to use any other canned beans you prefer such as pinto, butter, or cannellini beans. See notes.)*
12 pitted Black Olives - sliced
5-6 cups Low Sodium Chicken Broth
200ml Cooking Cream (Single Cream) - (Use half and half or milk if you want to make this lighter.)
2 TSP Kosher Salt, to taste
1.5 TSP freshly cracked Black Pepper, to taste
1 TSP ground Cayenne, to taste
1 TSP Crushed Red Pepper Chili Flakes, to taste
1 TSP Smoked Paprika (I use La Chinata Smoked Paprika (Hot) because it's incredibly robust and flavorful, but you can use a sweet one if you prefer.)
1 TSP Garlic Powder
1 TSP Onion Powder
2 TSP Mint Flakes
½ cup freshly grated Parmigiano Reggiano (or Parmesan) Cheese, plus more for serving
35-40g Italian or Thai Sweet Basil Leaves (about 2 cups loosely packed) - washed, dried, and chopped
½ cup fresh Mint Leaves - washed, dried, and chopped
2 (250 grams/8 ounce) packs fresh refrigerated or frozen Tortellini of your choice (I used a tortellini with a ricotta and spinach filling. See notes.)*

Steps:

  • Heat olive oil in a large Dutch oven or stockpot over medium-high heat. Once hot, add the ground chicken and cook for 6-8 minutes, breaking up the lumps with a wooden spoon/spatula as you go. Once cooked through, transfer to a clean bowl and set aside.
  • In the same pot, melt the unsalted butter over medium-high heat. Once frothing and foamy, add the onion and carrots. Sauté for 4-5 minutes until softened. Add the garlic and red chilies, sauté for another minute or two until fragrant.
  • Pour in the white wine and deglaze the pot, making sure to scrape up any brown crispy bits at the bottom of the pot.
  • Add the canned chopped tomatoes, chili beans, olives, low sodium chicken broth, cooking cream, and all of the seasonings and spices. Stir to combine and bring to a slow boil. Simmer for 8-10 minutes, stirring occasionally.
  • Mix in the cheese until fully melted. Then add the basil and mint leaves, tortellini, and cooked ground chicken back into the pot. Cook, stirring occasionally, for another 5-7 minutes, or until the tortellini is nice and tender. Then switch off the heat.
  • Transfer to serving bowls and garnish with chopped basil leaves and freshly grated Parmigiano Reggiano cheese. Serve immediately! (Or cool quickly and refrigerate in airtight sealed containers for 3-4 days. See notes.)

1 small onion (chopped)
2 (15 ounce) cans diced fire-roasted tomatoes
2 (10 3/4 ounce) cans campbell's tomato soup
2 (10 ounce) cans milk (use soup can)
10 fresh basil leaves, chopped or 1 tablespoon dried basil
1 (14 1/2 ounce) can chicken broth
3 tablespoons Italian-style tomato paste

Steps:

  • Coat soup pan with olive oil. Add onion and garlic and saute till soft.
  • Add canned diced tomatoes, basil, tomato soup and two cans milk. Stir till blended.
  • Add chicken broth and stir in tomato paste till blended.
  • Simmer for 20 minutes
  • Add light cream and parmesan cheese.

28 ounce can whole San Marzano tomatoes
4 cups reduced sodium chicken broth

1 wedge fresh parmesan cheese
9 ounce package refrigerated cheese tortellini
½ cup fresh basil, sliced into ribbons, plus more for garnish
1 teaspoon fresh or dried oregano
½ cup heavy cream

½ teaspoon freshly cracked black pepper

Steps:

  • Heat a dutch oven or large soup pot over medium heat, add olive oil, yellow onion, and a pinch of salt.
  • Cook until onions are translucent, about 4 minutes. If onions begin to brown, add a splash of chicken broth to cool the pot.
  • Add in tomato paste and garlic, cook for 1 minute.
  • Slice the rind off the end of the parmesan cheese wedge, save the rest for serving.
  • Add the tomatoes to the pot and mash with a potato masher or spoon.
  • Add broth, sugar, chicken, and parmesan cheese rind to the pot, reduce to low and simmer for about 15 minutes.
  • Add refrigerated tortellini, oregano and basil, and simmer until tortellini have puffed up and just cooked through, about 5 minutes.
  • Turn off heat. Stir in heavy cream, taste for seasoning and add salt and pepper.
  • Serve with freshly grated parmesan cheese, more fresh basil, and crusty bread.

1 cup heavy whipping cream

  • Sauté minced garlic in vegetable oil until slightly browned and fragrant.
