- Squeeze spinach completely dry.
- Place in small bowl and mix in cream cheese, mascarpone, and ground nutmeg.
- Season to taste with salt and pepper.
- Cut one 3/4-inch-deep, 2 1/2-inch-long slit down center of top side of each salmon fillet, forming pocket for spinach mixture.
- Fill each slit with spinach mixture, dividing equally among salmon fillets.
- (Can be made 4 hours ahead. Cover and chill.) Preheat oven to 450°F.
- Brush rimmed baking sheet with olive oil.
- Sprinkle salmon fillets with salt and pepper.
- Mix breadcrumbs, melted butter, and Parmesan cheese in medium bowl.
- Top each salmon fillet with breadcrumb mixture, pressing to adhere.
- Place salmon fillets, skin side down, on prepared baking sheet.
- Bake salmon until opaque in center, about 12 minutes.
- Transfer to plates and serve.

- Heat oven to 400°F.
- Mix mayo, lemon zest, lemon juice and 1 tsp. dill until blended. Reserve half the mayo mixture for later use.
- Mix remaining mayo mixture with cream cheese spread in medium bowl until blended. Add spinach and tomatoes; mix well.
- Use sharp knife to cut salmon fillet horizontally in half, being careful to not cut through to opposite side of fillet. Place on rimmed baking sheet sprayed with cooking spray.
- Open salmon fillet. Spoon spinach mixture onto bottom half of fillet; cover with top of fillet. Brush with reserved mayo mixture. Cover loosely with foil.

- Heat 1 teaspoon oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove from the heat and transfer to a bowl.
- Combine cream cheese and blue cheese in a microwave-safe bowl. Heat on high for 25 seconds.
- Add cheese mixture, spinach, bread crumbs, garlic, salt, and pepper to the onions; mix until well combined. Put stuffing in the freezer until chilled, 15 to 20 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with parchment paper.
- Cut salmon into 2 portions. Slice each portion in half, leaving a connecting point at one side.

- Make the spinach stuffing. Place the cream cheese, feta, and mozzarella into a medium mixing bowl. Roughly chop the baby spinach and add it to the cheese. Massage the spinach and cheese with your hands, until well combined (it should look like thick paste).
- Prep the salmon. Using a sharp knife, cut a pocket in the center of each salmon fillet.
- Season the salmon. Generously season the salmon fillets with the Cajun seasoning and brush them with olive oil on both sides.
- Stuff the salmon. Divide the spinach stuffing into four equal parts and spoon it into the salmon pockets.
- Bake the salmon. Bake the stuffed fillets in a preheated oven at 400ºF for 15-20 minutes, depending on how large your fillets are.

- *Soften cream cheese then mix in shredded/chopped spinach and sun dried tomatoes.
- Prepare Salmon:.
- 1. Pre-heat oven at 400 degrees.
- 2. Take Salmon Fillet and slice a center cut for filling Salmon.
- 3. Sprinkle Adobo seasoning and Creole seasoning and rub onto all sides of fillet.
- 4. Take butter knife and spread Spinach stuffing mixture inside slice cut previously. (You can also spread some on top of Salmon if you like).
- 5. Place Salmon Fillets on greased casserole dish.
- 6. Bake at 400 degrees for 20 minutes.
- 7. Enjoy.

If it doesn’t go in all the way, use the paring knife to help push it in without ripping through the other side.
- LEMON GARLIC SAUCE: In a small saucepan over medium heat, combine the lemon juice and minced garlic, allow the lemon juice to reduce to 2 tablespoons. Add in 1 tablespoon of butter, remove the pan from heat and swirl so the butter starts to melt. Place back on the heat for a few seconds, removed and continue to swirl until the butter completely melts. Repeat with the remaining butter, one tablespoon of butter at a time. When butter is completely melted, remove sauce from stove; set aside for later. You can also just place it on a simmer burner on the lowest setting if you’d like to keep it warm.
