CREAMY SPINACH AND POTATO BREAKFAST CASSEROLE

1 1/2 tablespoon olive oil, divided
1/2 cup diced yellow onions
8 ounces raw 99% lean ground turkey
2 teaspoons chili powder
1/2 teaspoon onion powder
3 ounces fresh baby spinach leaves
1 tablespoon minced garlic
1 tablespoon minced fresh sage
2 large eggs
1/3 cup fat free milk
2/3 cup grated raw potatoes, without skin
1/2 cup shredded low moisture Mozzarella cheese
2 tablespoons shredded Parmesan cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees. Grease a small 3-cup casserole dish or ovenproof skillet with nonstick spray.
  • Heat 1/2 tablespoon olive oil in a nonstick skillet over medium high heat. Add the onions and saute for 5 minutes or until soft and fragrant. Add the turkey, chili powder, and onion powder. Brown the meat until fully cooked and crumbled. Transfer to a bowl and set aside.
  • Add the remaining 1 tablespoon olive oil to the pan and reduce the heat to medium low. Add the garlic and sage. Saute for 2-3 minutes. Add the spinach and stir until wilted, about 2 minutes. Transfer to a bowl and set aside.
  • In a mixing bowl, whisk the eggs and milk. Add the cooked turkey, spinach, potatoes, and Mozzarella cheese. Stir until combined. Transfer to the casserole dish. Top with the Parmesan cheese.
  • Bake for 20-25 minutes or until the top is golden brown and the casserole springs back when touched. Season with salt and pepper to taste.

Boy, do we loves potatoes and spinach. When I came across this recipe from Gourmet from 2001, I had to make it, and darn, if it isn't GREAT! I have made a few adaptations, but this is pretty close to the original.Cooks Notes: You may wish to substitute the heavy cream with 1 or 2% milk, I have even used non fat sour cream and thrown in a few cloves of roasted garlic. 2 lbs boiling potatoes (preferably Yukon Gold)
1/2 cup heavy cream
3 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
4 ounces Baby Spinach (6 cups)

Steps:

  • Cover potatoes with salted cold water by 1 inch in a large saucepan and simmer, uncovered, until tender, 20 to 30 minutes.
  • While potatoes are simmering, bring cream, butter, salt, and pepper to a simmer in a small saucepan. Remove from heat and keep warm, covered.
  • Drain potatoes in a colander and cool slightly. Peel potatoes and mash in large saucepan.
  • Stir spinach into warm cream, tossing to coat, and when slightly wilted (after about 1 minute), immediately add to potatoes. Mash potatoes until almost smooth. Serve immediately.

1 1/2 lbs peeled potatoes, cut up (about 3 medium)
water, to cook potato
2 tablespoons margarine (or butter)
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon onion salt
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder (optional)
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 tablespoon grated parmesan cheese

Steps:

  • Cook potato in water in med. saucepan until tender. Drain and then coarsely mash.
  • Melt margarine in medium saucepan. Stir in flour until smooth. Slowly whisk in milk. Add next 4 ingredients. Heat and stir until boiling and thickened.
  • Stir in spinach. Turn potato into greased 2 quart (2 L) baking dish. Pour sauce on top. Poke randomly with spoon to allow some sauce down into potato.
  • Sprinkle with Parmesan cheese. Bake in 350°F (175°C) oven for 30 minutes until hot. Serves 6.

Extra-virgin olive oil
4 strips center cut bacon, chopped
1 medium onion, quartered and thinly sliced

Steps:

  • Place potatoes in a pot and cover with water. Bring up to a boil, salt water and cook until tender, 12 to 15 minutes.
  • To a small skillet over medium heat add a little extra-virgin olive oil and bacon and brown, 7 to 8 minutes. Add onions and cook until soft, 5 minutes more.
  • Drain the potatoes and place back in the hot pot. Add bacon, onions and defrosted spinach to potatoes, mash to combine then add cream. Mash until smooth and season the mixture with salt, pepper and nutmeg.

4 medium russet potatoes (10 to 12 ounces each)
6 tablespoons unsalted butter, plus melted butter for brushing
1 9-ounce package baby spinach (about 10 cups), large stems removed
1 small clove garlic, finely chopped
1/4 teaspoon freshly grated nutmeg
Pinch of cayenne pepper
Kosher salt
2 large egg yolks
1/4 cup grated parmesan cheese
1 cup cold heavy cream

Steps:

  • Position racks in the middle and upper third of the oven; preheat to 400 degrees F. Scrub the potatoes and dry well. Bake directly on the middle oven rack until easily pierced with a knife, 45 to 50 minutes. Remove from the oven; let cool 5 minutes.
  • Meanwhile, melt 3 tablespoons butter in a large skillet over medium-high heat. Add the spinach (in batches, if needed) and cook, tossing with tongs, until wilted, about 5 minutes. Add the garlic, nutmeg, cayenne and 1/2 teaspoon salt. Increase the heat to high and cook until the liquid evaporates, about 2 minutes. Transfer the mixture to a cutting board and finely chop; squeeze dry in a kitchen towel.
  • One at a time, hold each potato with another kitchen towel and halve lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick shell. Mash the flesh with the remaining 3 tablespoons butter until smooth; season with salt. Stir in the egg yolks and parmesan, then the spinach mixture. Brush the potato skins with melted butter; season the insides with salt and pepper. Set on a baking sheet.
  • Beat the heavy cream in a large bowl with a mixer on medium speed until soft peaks form, about 2 minutes. Stir about one-quarter of the whipped cream into the potato mixture, then gently fold in the rest.
  • Mound the filling into the potato skins. Return to the oven on the top rack and bake until the filling is warmed through and starts browning, about 15 minutes. Turn on the broiler and broil until the filling is golden brown and the skins are crisp, 1 to 2 more minutes.

25g butter
1 small onion, finely chopped
2 tbsp plain flour
200ml full-fat milk
2 x 200g bags spinach
100ml single cream
fresh nutmeg, for grating

Steps:

  • Heat 25g butter in a saucepan, then add 1 finely chopped small onion and cook for 5 mins until softened.
  • Stir in 2 tbsp plain flour and cook for 2 mins, then slowly start to whisk in 200ml full-fat milk. When it has all been incorporated, gently cook for 5 mins until the sauce has thickened.
  • Meanwhile, place two 200g bags spinach in a large colander. Pour over a kettle full of boiling water until the leaves have wilted (you may have to do this twice).
  • Place the spinach in a clean dishcloth, squeeze out any excess liquid, then roughly chop.
  • Stir into the sauce with 100ml single cream, gently heat, then finely grate over some fresh nutmeg and season well.

1 (15 ounce) can creamed corn
2 cups nonfat milk

5 cups vegetable stock

1 tablespoon garlic powder
salt and pepper

Steps:

  • To 5 cups of vegetable stock add the spinach, potatoes, and milk.
  • Cook on medium heat until begins to bubble slightly.
  • Transfer to blender in two or three batches and puree. Then return to pot.
  • Add corn, cheese, and spices. Cook about 10 more minutes, stirring often.
  • Allow to cool slightly before serving.

700g baby new potatoes
2 tbsp olive oil
1 lemon , zested
4 garlic cloves , whole and unpeeled
small bunch of thyme , leaves picked and torn, plus a few small leaves to serve
4 bay leaves
chicken legs, including thighs and drumsticks
½ tsp paprika
300g carrots , cooked, to serve
200g bag baby spinach
knob of butter
1 onion , chopped
2 garlic cloves , crushed
2 tbsp plain flour
300ml milk
generous grating of nutmeg
20g mature cheddar , grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Halve any large potatoes so they're all roughly the same size. Put in a pan of water, bring to the boil and simmer for 8-10 mins until tender. Drain.
  • Tip the potatoes into a large roasting tray to sit in one snug layer. Drizzle with 1 tbsp oil, season and add the lemon zest, garlic, thyme and bay. Toss to coat the potatoes. Use a potato masher to gently crack each potato, being careful not to break them up too much. Place the chicken on top, rub with the rest of the oil and the paprika, then season. Roast for 45 mins until golden brown and cooked through.
  • Meanwhile, make the creamed spinach. Boil the kettle and tip the spinach into a colander. Pour over the boiling water to wilt the leaves. Leave to cool.
  • Heat the butter in a pan. Add the onion and cook for 8-10 mins until softened. Stir through the garlic for another minute, then the flour for another minute. Pour in the milk, a little at a time, stirring and adding more until you have a smooth sauce. Bring to a simmer and stir continuously until the sauce has thickened.
  • Squeeze any liquid out of the spinach, then roughly chop. Add to the sauce along with the nutmeg. Season to taste. Transfer to a baking dish, top with the cheese, and bake for 15 mins until golden.
  • Cover the chicken and rest for 5 mins. Set aside 2 legs to cool before chilling for lunch tomorrow. Serve the rest (1 full leg each per adult, a drumstick or thigh each for the children) with the potatoes and spinach alongside some carrots.
