Cheesy Shrimp and Spinach Dip is an unbelievably creamy and rich seafood dip. Two kinds of cheeses, mozzarella and Parmesan, give the dip plenty of cheese flavor.

Steps:
- Preheat oven to 350 degrees.
- Melt butter over medium heat in a large nonstick pan. Add onion and cook until soft.
- Add garlic and cook 1 more minute.
- Sprinkle flour into pan. Cook and stir for 1 minute.
- Gradually whisk in heavy cream. Add Worcestershire sauce, Creole seasoning, red pepper flakes, and nutmeg.
- Stir in cheeses until melted.
- Stir in sour cream and spinach until spinach is wilted. Remove from heat and stir in shrimp.
- Transfer mixture to a baking dish. Bake for 15 minutes.

SPINACH-SHRIMP DIP
Last summer I created this variation on the classic Knorr Spinach Dip ... and it was gone in a flash. Try it; it's really yummy. Don't expect any to be left.

- Thaw the spinach, then squeeze out as much water as possible.
- Combine spinach, sour cream, mayonnaise and horseradish in a mixing bowl; you can also do this in a food processor if you like a more pureed consistency (I often do it by hand, or do it VERY CAREFULLY in the food processor so as not to over-process).
- Stir in the dry soup mix, the chopped water chestnuts and the onion; stir well.
- Refrigerate for at least 2 hours to let flavours meld.
- Before serving, stir shrimp into dip mixture.
- Cut off the top of the loaf of bread and hollow it out, reserving the lid and the inner bread chunks to serve alongside.
- Fill hollowed bread shell with dip and serve with the bread, cut into chunks, along with an assortment of crackers and carrot sticks.
- People are drawn to this; watch it disappear!

CREAMY SHRIMP SCAMPI DIP
This rich, garlicky dip caused a feeding frenzy in the Food Network test kitchen. We've taken a beloved shrimp-and-pasta dish and made it into a creamy, crowd-pleasing appetizer. You can make it ahead to take to a nearby potluck, then ask your host if you can borrow some oven space to quickly bake it.

- Position an oven rack in the top position, and preheat the oven to 375 degrees F.
- Beat the cream cheese, mozzarella, sour cream, mayonnaise, Parmesan, 2 tablespoons of the breadcrumbs and 1/2 teaspoon salt in a large bowl with an electric mixer on medium high until smooth. Cover and refrigerate until ready to add the shrimp.
- Melt 2 tablespoons butter in a large skillet over medium-low heat. Add the shrimp, garlic, 1/4 teaspoon salt and the red pepper flakes, and cook, stirring frequently, until the shrimp just start to turn pink, about 2 minutes. Add the wine, bring to a simmer and cook until the shrimp are pink and cooked through, about 2 minutes (there will be some liquid left in the skillet). Remove the skillet from the heat, and let the shrimp cool completely.
- Meanwhile, mix together the parsley, the remaining 2 tablespoons breadcrumbs and 1 tablespoon melted butter, the lemon zest and a pinch of salt in a small bowl.
- Stir the shrimp, pan sauce and cream cheese mixtures together to combine; transfer to a 2-quart flameproof baking dish. (The dip and breadcrumb mixture can be covered and refrigerated overnight separately at this point.) Sprinkle the breadcrumb mixture over the dip, and bake until hot and bubbly, 15 to 20 minutes. Switch the oven to broil, and cook until the top is golden brown, 1 to 3 minutes. Let rest for a few minutes, then serve hot with bread and/or crackers.
CREAMY SPINACH DIP
A very yummy and creamy dip that's great for parties. Serve with crackers, tortilla chips or pita bread. Scallions may be used in place of diced onion.

- Place cream cheese, mozzarella, Parmesan& mayonnaise in microwave safe 2 1/2 quart casserole.

- Heat oil in a large deep skillet or Dutch oven over medium heat. Add shrimp and cook until starting to turn pink, about 3-5 minutes. Remove from pan and set aside.
- Add mushrooms, onion, garlic, salt and pepper to hot pan and cook 3-5 minutes or until vegetables are tender. Sprinkle with flour and cook 2-3 minutes.
- Stir in evaporated milk and chicken broth. Bring to a boil over medium heat. Reduce heat; simmer uncovered for 2 minutes. Stir in shrimp, spinach and cheese; cook for 1-2 minutes or until shrimp is fully cooked, spinach is wilted and cheese is melted. Serve with your favorite rice.

- Preheat oven to 350°. Place spinach in a colander over a bowl; squeeze dry, reserving 1 cup spinach liquid., In a large saucepan, heat butter over medium heat. Add garlic; cook 1 minute. This spinach and shrimp risotto fills the house with a pungent, lemony aroma, and is a great summery dish.

- Heat 2 tablespoons olive oil and butter in a 12- to 14-inch skillet over medium heat. Add shallot and cook until soft, 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute. Add rice; cook and stir with a wooden spoon until toasted and opaque, about 4 minutes.
- Add wine and let it reduce for 2 minutes. Add one ladle of chicken broth; cook and stir until it's all absorbed. Continue adding one ladle at a time, cooking and stirring until broth is absorbed before adding the next ladle. When finished, rice will be creamy and tender yet firm to the bite. Stirring in the broth should take 15 to 20 minutes in all.
- Meanwhile, season shrimp with salt and pepper.
- Heat remaining olive oil in a skillet; add shrimp and saute just until they turn pink, 2 to 3 minutes; they will not be fully cooked. Remove from the heat.
- When the risotto is finished, stir in shrimp, spinach, 1/4 cup Parmesan cheese, prosciutto, parsley, and lemon zest. Season with salt and pepper and cook until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Let rest for 5 minutes. Serve with more Parmesan cheese.

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

- Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
