CREAMY SPINACH AND CARROT SOUP
My mother-in-law made this all the time and even my 7 year old would eat it. Pretty impressive for spinach! I've changed up a few things though by adding more salt, pepper and nutmeg to taste. I also like to use 2 bags of pre-washed fresh spinach instead of frozen. And, I tried it in the crock pot last week and it was sooo simple!

Steps:
- in 2 quart saucepan melt butter, add onions.
- Cook over medium heat, stirring occasionally until onions are tender, 5-6 minutes.
- Stir in flour until smooth and bubbly, 1 minute.
- Stir in half and half and chicken broth.
- Add remaining ingredients.
- Continue cooking over low heat stirring occasionally until soup is heated through, 12-15 minutes.

I have fallen in love with this easy, delicious soup. Yes, I know it uses a soup mix so food snobs stay away. It is only for plain ole regular folks like me. ;)

Steps:
- In a large saucepan, let the butter melt over medium heat.
- Add in the onion, carrot, and spinach; cook and stir frequently for 3-4 minutes or until vegetables are softened.
- Add the soup mix, then the milk; whisk until mixture is smooth.
- Bring to a boil, add in nutmeg and pepper; lower heat to medium-low and simmer 5 minutes or so before serving.

CREAM OF SPINACH SOUP
Serve this creamy spinach soup piping hot, with a fresh buttered baguette. Delicious! You can make a vegetarian version by using vegetable stock in place of the chicken stock. Also, you can add a dash of paprika, cayenne, or red pepper flakes if you like more spice. Note: I used a 32 oz. box of organic chicken stock, and we thought it was fine that way (we like ours with plenty of broth). But the three cups of chicken stock that the recipe calls for should work nicely if you like a thick soup, or are going to blend it. I don't have an immersion blender, but feel free to blend this soup if you prefer a smooth version.

Steps:
- In a medium saucepan, melt butter over medium heat.
- Add the carrots and onion and saute in the butter until softened, about 3-5 minutes.
- Add the stock and bring to a boil over high heat, then add the spinach.
- Reduce heat to medium and let simmer for about 8-10 minutes, or until spinach is done.
- Whisk in the milk or cream and the seasonings and heat through briefly (about five minutes more), stirring occasionally.
- Remove from heat.
- Serve piping hot.
CREAMY LENTIL & SPINACH SOUP WITH BACON

- Put the oil, onions, carrots and celery in a large saucepan, and cook for about 10 mins to soften.
- Stir in the lentils and pour in the stock. Bring to the boil, then turn down and simmer for 30-35 mins or until the lentils are soft, topping up with water if the mixture begins to dry out. Pop in the spinach and cook for a few mins more, until wilted. Blitz the soup until smooth, then stir through the cream and season. Keep the soup warm over a low heat.
- Heat a little oil in a non-stick pan over a medium heat. Add the bacon and fry until crisp and golden. Ladle the soup into bowls, drizzle with a little cream and crumble over the crispy bacon.

- saute garlic and onion until almost golden brown.
- add chopped mushrooms.
- saute for a few minutes
- add the flour and mix well.
- add the veg stock.
- add water.
- add cubed potato.
- add shredded spinach.
- add cubed carrot.
- add milk.
- season with salt and pepper.
- bring to boil.
- reduce heat and simmer for 15-20 minutes or until flavors blend.

- Heat 1 tbsp of the oil in a large saucepan or casserole pot. Fry the onion and celery gently for 5 mins. Add the crushed garlic and cook for 1 min more. Tip in the carrots, stock and thyme, then season and bring to the boil. Lower to a simmer and cook, covered, for 25 mins until the carrots are softened.
- Meanwhile, heat the oven to 220C/200C fan/gas 7. Rub the whole garlic clove over both sides of the sourdough. Tear it into rough chunks and toss with the remaining oil, a good pinch of salt and the seeds. Spread out on a baking sheet and bake for 8-10 mins until golden and crisp. Mix with the chopped parsley and set aside.
- Remove the thyme from the pan and discard. Blitz the soup with a hand blender until smooth. Stir though the cream and season to taste. To serve, ladle the soup into four bowls, top with the croutons and drizzle over a little extra cream, if you like.
