Steps:
- Preheat oven to 350°F.
- Pound chicken to ¼" thick. Season with salt and pepper to taste.
- Top each chicken breast with 1 slice of ham and about 1 oz cheese. Roll the chicken jelly roll style. Secure with a toothpick.
- Combine butter and garlic in a small dish. Mix breadcrumbs and thyme in a separate bowl. Dip each chicken roll in butter and then into the breadcrumb mixture.
- Place in a baking dish and bake 35-40 minutes or until chicken reaches 165°F.

- Heat oven to 325°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In small bowl, mix soup and sour cream. Arrange chicken in single layer in baking dish. Top with ham. Spoon soup mixture evenly over the top.

- Cook rice mix according to package directions. Transfer to a greased 2-qt. baking dish. Top with chicken and ham. , In a large bowl, combine the soup, milk, Colby cheese and pepper; pour over chicken mixture. CREAMY SMOKY BAKED CHICKEN WITH HAM
This is a old throw back recipe, re-done, but it can't get simpler. I don't often use soup in my recipes, but I really happen to like this one. Paired with smoky ham, white wine and smoky gouda; or even a smoky mozzarella or smoky white cheddar will work. This combination of the smoky ham and cheese is what really makes this dish. To serve, try a wild white rice blend or even just white rice. I like to add some fresh scallions to finish off the rice.

- Chicken -- First and most important, bring your chicken to room temp and season well with salt and pepper on both sides.
- Casserole -- Pick a pan so that all 4 breasts fit well side by side. You want the sauce on the chicken not sitting on the bottom of the pan. Too big of pan does not work well for this dish. Spray with a non stick such as Pam and add your chicken.
- Sauce -- In a small bowl, add the sour cream, soup, white wine and ham and mix well.
- Spoon the sauce over each chicken breast and top with a light sprinkle of black pepper.
- Bake -- Heat the oven to 325 degrees and bake uncovered for 45 minutes. Top with 1/4 cup of the cheese and cook another 10-15 minutes, until the cheese is melted and gooey.
- Serve -- I love a mix of wild and white rice (Uncle Bens is great, Whole Foods has a great brown rice, or just any white rice will work. I garnish the rice with fresh scallions (white and green parts) and cooked chicken broth which I think really helps. Then add each breast and any additional sauce over the top. Garnish with the fresh tarragon or you can use parsley. Roasted lemon zucchini is a great side dish.

CHICKEN & HAM CASSEROLE WITH MUSTARDY DUMPLINGS
Serve mustardy dumplings with our chicken and ham casserole for a comforting and filling family feast. You can freeze any leftovers, too - if there are any!

- Heat the oil and butter in an ovenproof casserole over a medium heat. Add the onion, leeks and carrots and a pinch of salt, and fry gently for 10 mins until softened and translucent. Add the chicken, turn up the heat and fry for 5 mins. Pour in the cider, cook for 3 mins, then pour in the chicken stock and add the bunch of thyme. Bring to a simmer, season to taste, then reduce to a low heat and cover the pan. Cook for 30 mins.
- Heat the oven to 180C/160C fan gas 4. Make the dumplings by mixing together the flour, baking powder, mustard powder, the suet or butter, parsley and ½ tsp salt. Swiftly mix in 8-10 tbsp of water and bring together with your hands. The dough should be firm and pliable. Divide into eight equal-sized pieces, weighing for accuracy if you like.
- Remove the bunch of thyme from the stew and discard. Spoon a little of the liquid into a bowl and mix with the cornflour, then stir the mixture into the casserole. Add the ham hock, peas and mustard. Arrange the dumplings on top of the stew, then put in the oven, covered, for 30 mins. Remove the lid and cook for a further 10 mins until the dumplings are puffed up and golden brown. Serve in bowls. To freeze the stew, leave to cool completely, then transfer to a freezerproof container. Will keep for up to three months. Defrost thoroughly, then reheat until piping hot.

- Put the chicken breasts in a medium saucepan with the onion, bay leaves and wine. Pour over just enough water to cover, around 200ml. Put a lid on top and bring to a gentle simmer. Poach gently for 15 mins or until the chicken is just cooked. Transfer the chicken to a board and strain the liquid into a jug.
- Melt the butter in a large non-stick saucepan over a medium heat. Stir in the flour with a wooden spoon and cook for about a minute. Gradually add the milk, a little at a time, stirring well between each addition to ensure the sauce stays smooth. Once all the milk has been added, stir in the reserved cooking liquid and continue cooking for a further 2-3 mins. Adjust the seasoning to taste. Heat oven to 200C/180C fan/gas 6.
- Cut the chicken into small chunks and stir into the saucepan. Add the ham and spinach and cook until the spinach has wilted. Spoon a third of the chicken mixture into the base of a 3-litre lasagne dish (about 26 x 18cm). Top with a third of the lasagne sheets. Repeat the layers twice more, ending with lasagne. Scatter the mozzarella and Parmesan on top and season with black pepper. Can be frozen at this stage (see below). Bake for about 25 mins or until the lasagne is tender, the topping is well browned and the filling hot.

- Preheat oven to 400 degrees F (200 degrees C).
- Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.
- Place melted butter in a small bowl and place cereal crumbs in a shallow dish or bowl. Dip each chicken roll in butter or margarine, then roll in crumbs, turning to coat thoroughly. Place coated rolls in a lightly greased 9x13 inch baking dish.
- Bake at 400 degrees F (200 degrees C) for about 40 minutes or until chicken is golden brown and juices run clear. Serve with cordon bleu sauce, if desired.
- To Make Cordon Bleu Sauce: In a small saucepan mix together the soup, sour cream and lemon juice. Heat over low heat, stirring occasionally, and serve hot over chicken rolls. Makes about 2 cups; 8 servings of 1/4 cup each.
