- In skillet crumble and cook sausage with onions until done. Drain.
- In a bowl combine hot cooked sausage and onions with cream cheese and Rotel tomatoes. Mix until creamy.
- Spread a thin layer of beans on each tortilla. Top with 1/4 cup of meat mixture. Top with a pinch of cheese. Roll up and place seam side down in a greased casserole.
- Top all enchiladas with remaining cheese.
- Bake at 350 degrees for 20 minutes, or longer if chilled from preparing ahead of time.

CREAMY SAUSAGE PENNE
This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

- Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
- After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
- In a large skillet, heat olive oil over medium-high heat.
- Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
- Cook until sausage meat is no longer pink (about 5 minutes or so).
- Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
- Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
- Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
- Taste; add more salt and/or pepper if you wish.
- Sprinkle chopped herbs over top and serve.

- Take sausage out of casings and crumble.
- Put olive oil and chopped garlic in a skillet and turn the heat to medium.
- When the garlic becomes pale gold, add the sausage.
- Turn from time to time, until nicely browned all over, about 15 minutes.
- Add the tomato and cook, uncovered, stirring occasionally, adjusting the heat if necessary so it will cook at a gentle simmer.
- After about 20 minutes, when the fat separates from the other juices and floats free, add the cream and turn up the heat.
- Cook for 1 to 2 minutes, stirring frequently, until the cream is reduced.
- Add salt and a liberal grinding of pepper.
- Turn off the heat and stir in the chopped parsley.
- Cook pasta in pot of boiling salted water.
- When tender, but firm to the bite, drain; toss immediately with sauce.
- Serve at once with freshly grated parmesan cheese.
- NOTES: The sauce maybe be prepared several hours in advance.
- It should be reheated gently when the pasta is almost cooked.
- I always double the sauce because in my house there never seems to be enough.
- My family loves this sauce.
- Double everything except the sausage, pasta and parmesan cheese to double the sauce.

- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the oregano and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the oregano and stir in the ricotta. Season with salt and pepper.
- Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until browned, about 5 minutes. Transfer the sausage to a large bowl using a slotted spoon. Add the escarole and a pinch of salt to the sausage drippings in the skillet and cook, stirring occasionally and reducing the heat slightly if necessary, until wilted, about 4 minutes. Transfer the escarole to the bowl with the sausage.
- Cook the farfalle in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the mixing bowl.
- Add the tomato sauce, half of the mozzarella and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

- Preheat the grill. Grill the sausages for 15-20 minutes, turning occasionally, until they are evenly browned and cooked through.
- Meanwhile, chop the onion, carrots and celery into small pieces. (A food processor can make short work of this.) Heat the sunflower oil in a medium pan. Fry the bacon for 2 minutes, then stir in the chopped vegetables and thyme. - Place Sausages in a pot with water and boil until thoroughly cooked through. Add minced garlic clove to pot for added flavoring.
- Once cooked through, grill sausages to brown outer casing.
- Meanwhile set a deep pot to boil with 5 quarts of water. Salt water, eyeball it, to season pasta, and add either Extra Virgin Olive Oil or Butter to make sure Pasta does not stick. (I prefer EVOO, again eyeball it).
- In a large skillet, slowly heat Alfredo Sauce, Olives and Sun Dried Tomatoes.
- Once Suasages are cooked to desired liking, slice in 1/4 in rounds and add to sauce.
- Cook pasta to just under al dente. Drain and add to sauce and sausages. (Remember the pasta will continue cooking in sauce.).
- Serve it up on a plate and sprinkle chopped Italian Parsley and Parmesean Cheese over the top. Serve with Garlic Bagel Chips or any other side of your choice.

- Cook the pasta according to package directions, until al dente. When the pasta is finished, drain and toss with a small amount of olive oil to keep from sticking, if desired. Set aside.

- In a large pan add the can of cream of celery with the 4 cans of water and chicken bouillon stir in the peeled and diced potatoes along with the chopped carrots. Heat on medium.

CREAMY SLOW-COOKER POLENTA WITH SAUSAGES
The key to creamy polenta is a relatively high ratio of liquid to dried polenta: about five to one, instead of the more standard four to one. But the more liquid you use, the longer it will take the polenta to absorb it. That's why the best polenta is made in a slow cooker, where the dried corn can gently hydrate all day, with no stirring or worrying about clumps or molten splatters. In this recipe, the polenta is cooked with marinara (which is part of the liquid) and roasted red peppers. Then it's topped with quick-roasted sausages and sizzled capers and pepperoncini. If you are feeding spice-adverse kids, leave off the pepperoncini.

- Whisk together the polenta, roasted red peppers, marinara, garlic, olive oil, oregano, garlic powder and 1 teaspoon salt in a 6- to 8-quart slow cooker. Whisk in 5 1/2 cups of water. Cook on low for 6 hours. (The polenta will keep very well on warm.)
- About 10 or 15 minutes before you want to eat, heat the oven to 450 degrees. Lightly coat an oven-safe skillet with olive oil, and roast the sausages in the skillet in the oven until sizzling and browned, about 10 minutes. Remove the skillet and put it over medium-high heat on the stovetop. Add a little more oil if the pan is relatively dry. Add the capers and pepperoncini to the hot skillet with the sausages, and let the capers pop, 1 or 2 minutes. Turn off the heat.
- Stir the Parmesan into the polenta. The polenta will continue to firm up as it cools; stir in a few tablespoons of water if you would like it to be looser. Serve the polenta in shallow bowls topped with sausages, capers and pepperoncini. Pass more Parmesan at the table.

- Heat the oil in a large frying pan and cook the onion for 3-4 mins over a medium-high heat. Add the sausage chunks and cook for another 5 mins to brown all over. Add the garlic and cook for 1 min before stirring in the cream, mustard, chilli flakes and seasoning. Cook for another 2 mins, then stir in the basil.
- Heat oven to 200C/180C fan/ gas 6. Divide the sausage chunks and some sauce between the lasagne sheets and roll each one up. Arrange in a casserole dish, spoon over the remaining sauce, then top with the mozzarella. You can freeze the dish at this point. If freezing, defrost fully before cooking. Bake in the oven for 20 mins until the pasta is cooked and the mozzarella gooey and crisp at the edges.
