CHICKEN WITH CREAMY ROSEMARY SAUCE

An easy creamy chicken recipe with a rosemary sauce that is to die for!

Number Of Ingredients 8

1 lb boneless, skinless chicken breasts (2 large chicken breasts OR 4 cutlets)
4 Tablespoons butter
1 1/2 Tablespoons olive oil
1 1/2 cup heavy cream (aka heavy whipping cream)
3/4 cup chicken broth
2 cloves garlic (minced)
1/2 teaspoon black pepper (ground)
2 Tablespoons fresh Rosemary (chopped)

Steps:

  • If you have two large chicken breasts, slice each one in in half horizontally in order to make four cutlets total.
  • In a large skillet over medium high heat, add the olive oil. Let the olive oil heat up, then add the chicken to the pan.
  • Cook the chicken for four minutes without moving it around in the pan. Then flip each piece and cook it for another four minutes. Set aside on a clean plate.
  • In the same pan, add all remaining ingredients (butter, cream, broth, garlic, black pepper, and rosemary) and stir to combine, making sure to break up any bits and pieces left in the pan from cooking the chicken to combine those into the sauce as well.
  • Stirring occasionally, let the sauce simmer and reduce for about 5 minutes.
  • Add the chicken back to the pan and ladle the sauce over it. Allow it to warm in the simmering sauce for 1 min.
  • Remove the pan with the chicken and creamy rosemary sauce from the heat and serve over pasta, rice, zoodles, or cauliflower rice! Optional: Top with a few sprigs of fresh rosemary for garnish.

chicken. bone in or out, skinless or with skin, light or dark, the choice is yours.
1 qt. whipping cream
dill weed, i prefer fresh but dried or frozen will work
salt and pepper to taste
couple tbsp. flour in 1/4 cup cold water for slurry
few tbsp. oil for browning chicken
1 cup water
please note: you can use any amount of chicken and cream just adjust so cream covers chicken. also means less gravy!!!!!

Steps:

  • 1. Salt and pepper chicken pieces(i like to use skinless boneless chicken breast,but great with any.) Brown in large heated skillet with the oil, until nice and brown.
  • 2. Add l cup water and let steam, on high, uncovered until chicken is tender and water is mostly gone (10-15 min.). Turn a couple of times.
  • 3. Turn heat down to med. add cream and dill and heat till just simmering, add dill and salt and pepper to taste, and dill weed.
  • 4. Add slurry of remaining water and flour, a little at a time, till slightly thickened. Taste and adjust salt and pepper. heat to simmer for a couple minutes and it is ready to serve. You are going to love this dish.!!!!

2 large boneless skinless chicken breasts
¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
4 tablespoons butter (divided)
1/3 cup diced shallots
2 tablespoons chopped fresh rosemary
½ cup white wine or low-sodium chicken broth
1 cup low sodium chicken broth
2 tablespoons Dijon mustard
1/2 cup heavy cream
Salt and pepper

Steps:

  • Halve each chicken breast lengthwise to create 4 even-sized pieces.
  • Whisk together the flour, salt, and pepper in a shallow bowl. Dredge both sides of the chicken in the flour mixture. Set aside.
  • Melt 2 tablespoons butter in a large skillet over medium-high heat. Add in the chicken and sear on both sides until golden. Remove from the pan and set aside.
  • Add in the remaining butter, shallot, and rosemary. Sautee until the shallots soften.
  • Add in the wine, and cook until evaporated, scraping the brown bits from the bottom of the pan.
  • Add in the chicken broth, mustard, heavy cream, salt and pepper.
  • Stir to combine and simmer for 2-3 minutes until the sauce slightly thickens. Add the chicken back into the skillet. Cook, until the sauce thickens and the chicken is warmed through. When the chicken reaches an internal temperature of 165F, it is fully cooked.

3/4 cup half & half light cream
1/3 cup shredded mozzarella cheese
1/3 cup romano cheese, grated is fine
1/2 tablespoon dill weed
1 teaspoon rosemary

Steps:

  • Preheat oven to 375°F.
  • Lightly salt chicken on both sides.
  • Place chicken in lightly greased baking dish.
  • Pour half and half into saucepan and begin to heat on low.
  • Add cheeses while stirring.
  • When cheeses are melted add the seasonings. Mix well.
  • Slowly add flour, 2 tbsp at a time stir 2 minutes, and allow mixture to thicken.
  • Mixture should be thickened but still pourable. Pour over chicken breasts and bake covered 30minutes.
  • Remove covering and bake 10 more minutes.
  • Reccommended to serve over bed of cooked spinach.

This stew takes inspiration from long-simmered tagine dishes with many layers of flavors. In this weeknight version, a broth seasoned with salted lemon, rosemary and tomatoes bathes the chicken and chickpeas, making a lovely, hearty stew. For a bold and bright finish, lemon slices quick-pickled in juice and salt are added to the stew. A handful of hearty greens, a scattering of fresh herbs and a spoon of creamy yogurt ensures every bite is rich and flavorful. Serve over steamed couscous or with thick slices of crusty bread for dipping.

2 1/2 pounds whole chicken legs or bone-in, skin-on thighs
1 lemon, halved lengthwise
1 teaspoon kosher salt, plus more to taste
2 tablespoons olive oil, plus more as needed
1 medium onion, peeled and thinly sliced
4 garlic cloves, smashed
1 fresh rosemary sprig
1/2 cup dry white wine
1 (15-ounce) can whole peeled tomatoes
1 (15-ounce) can chickpeas, rinsed
Black pepper
4 cups hearty greens like spinach, kale or mustard greens, trimmed and torn
1 cup mix of fresh herbs like dill, parsley and mint
Full-fat Greek yogurt, for serving

Steps:

  • If using whole chicken legs, cut the joint just enough to bend the leg, and make a deep, 2-inch-long cut on the meat without cutting all the way through.
  • Cut one half of the lemon crosswise into 1/8-inch-thick half moons. Transfer them to a medium bowl. Sprinkle with 1 teaspoon salt and use a fork to lightly crush the slices and release the juice. Cut the other lemon half into wedges for serving.
  • Pat the chicken pieces dry and season both sides with salt. In a large lidded skillet or Dutch oven, heat 2 tablespoons oil over medium-high. Working in batches if necessary, add the chicken pieces skin-side down, cover, and cook until the skin is golden brown, about 8 to 10 minutes. Flip, cover and cook for another minute or two, then transfer chicken to a plate. If working in batches, add 2 more tablespoons oil to the skillet, sear the remaining chicken legs then transfer them to the plate.
  • Pour off all but about 2 tablespoons of fat from the pan. Add the onions and sauté until just softened, about 2 minutes, then add the garlic and rosemary and cook until fragrant, about 1 minute. Add the white wine, then add the tomatoes with their juices, crushing the tomatoes with your hands as you go. Rinse the tomato can with 1 cup water. Add the water and the chickpeas to the pan. Season lightly with salt and black pepper.
  • Bring to a boil, return the chicken and any accumulated juices to the pan and reduce heat to low. Cover and simmer until the chicken is cooked through and tender, 15 to 18 minutes.
  • Uncover the pot and transfer the chicken to bowls or a large rimmed serving platter. Add the sliced lemon plus any accumulated juices to the pot, increase the heat to medium-high and allow to thicken slightly, 2 to 3 minutes. Discard the rosemary stem, then stir in the hearty greens, remove from heat and season with additional salt if needed.
  • To serve, spoon the stew over the chicken legs, top with a handful of the herbs, yogurt and fresh lemon wedges for squeezing. Drizzle with olive oil, if desired, and serve with steamed couscous or slices of crusty bread for dipping.

Steps:

  • Season chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5 minutes.
  • Reduce heat to medium and add onion; cook until translucent and soft, about 3 minutes. Add mushrooms and cook, stirring occasionally, for 4 to 5 minutes. Stir in garlic and sauté until fragrant, about 30 seconds.
