4 chicken cutlets (about 1 1/4 pounds), patted dry
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
All-purpose flour, for dredging
1 tablespoon unsalted butter
2 scallions, thinly sliced
8 ounces mushrooms (button, cremini, shiitake or a combination), quartered
1 1/4 cups low-sodium chicken broth
3/4 cup heavy cream
2 cups sugar snap peas, stemmed and halved lengthwise

Steps:

  • Preheat the oven to 200 degrees F. Heat a large skillet over medium-high heat. Season the chicken with salt and pepper. Add 1 tablespoon oil to the skillet. Dredge 2 chicken cutlets in flour, shake off any excess and place in the skillet. Cook until golden, about 1 1/2 minutes per side; transfer to a baking dish. Repeat with the remaining 1 tablespoon oil and the other 2 chicken cutlets. Cover the dish loosely with foil; place in the oven while you prepare the vegetables.
  • Add the butter to the hot skillet, then add the scallions and mushrooms; cook, stirring occasionally, until the mushrooms brown, about 4 minutes. Pour in the broth and bring to a boil, scraping up any browned bits with a wooden spoon. Cook until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce thickens slightly, 3 to 4 more minutes. Stir in the snap peas and heat through; season with salt and pepper. Serve the chicken topped with the creamy vegetables.

8 ounces fresh mushrooms, sliced
1 tablespoon butter
1 (10.75 ounce) can condensed cream of mushroom soup
10 ¾ fluid ounces milk
1 ¾ cups instant rice
1 ½ cups frozen green peas

Steps:

  • In a large skillet, saute mushrooms in butter. Set aside.
  • Warm condensed cream of mushroom soup and milk. When it comes to a slow bubble, add instant rice and cover. Let sit for at least 5 minutes.
  • While the soup mixture is warming, thaw the peas in the microwave at 30 second intervals. Do not overheat the peas.
  • When the rice is tender, stir mushrooms and peas into the rice and season with salt and pepper to taste.

2 cloves garlic, minced
1 onion, diced
1 pound cremini mushrooms, thinly sliced
2 teaspoons Worcestershire sauce
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste
3/4 cup brown rice
1 1/2 cups vegetable broth
2 tablespoons unsalted butter
2 tablespoons chopped fresh chives

Steps:

  • Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic and onion, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in mushrooms, Worcestershire and thyme and cook, stirring occasionally, until mushrooms are tender and browned, about 5-6 minutes; season with salt and pepper, to taste. 1 c sliced mushrooms - i use baby bella's
2 Tbsp chopped onion
1 clove garlic, minced
10 - 12 oz frozen peas, thawed
1 -10.4 oz cream of mushroom soup or chicken would be good as well
1 1/2 c instant rice
1 1/2 c milk or more if needed
salt & pepper to taste
green onion, sliced for garnish

Steps:

  • 1. In a large skillet, melt butter and add to the pan the mushrooms, onion and garlic. Salt & pepper. Saute until lightly browned.
  • 2. Add the milk, soup, peas and rice, bring to a boil, then simmer 5 minutes, stirring occasionally. If more milk is needed add to your liking. Sometimes the rice will absorb more than expected. You want it creamy - not dry.
  • 3. Place lid on pan and turn off burner. Let set for 5 minutes or until rice is tender. This is where I would add desired add ins if using. Serve immediately.

2 tablespoons butter

1 small chopped onion

  • Fill a small saucepan with one inch of water. Bring to a boil, add peas, and cook until tender, about 5 minutes. Drain and set aside.

1/2 pound fresh mushrooms
1 tablespoon butter
2 tablespoons finely chopped shallots
Salt to taste if desired

1/2 cup heavy cream

Steps:

  • If fresh peas are used, there should be about 1 1/2 cups of them, shelled. Drop the peas into boiling water and let simmer about five minutes or less until tender. Drain. If frozen peas are used, put them in a sieve and pour boiling water over them briefly until all are unfrozen. Set aside.
  • Meanwhile, cut the mushrooms into quarters.
