CREAMY PUMPKIN ALFREDO PASTA
This rich and creamy pumpkin alfredo pasta is made with canned pumpkin puree and a dash of nutmeg.

Steps:
- Cook fettuccine according to package instructions until al dente. Strain pasta, reserving 1 cup pasta water.
- While pasta is cooking, melt butter in large skillet over medium high heat. Add cream and pumpkin puree and whisk until smooth.
- Add parmesan cheese, salt, pepper and nutmeg and stir until combined.
- Add drained pasta and toss in sauce. If sauce is too thick, add reserved pasta water a tablespoon at a time until smooth; keep warm over low heat while making the topping.

- Cook the pasta according to package instructions, and reserve 1 cup of the cooking water.
- Melt the butter in a large pan big enough to hold your pasta, and add the minced garlic. Sauté for just a minute or two until the garlic is fragrant, but don't let it brown.
- Add the cream, the pumpkin puree, and nutmeg (if using) and whisk gently until everything is well combined.
- Heat the mixture until just simmering, and then, off the heat, add the shredded cheese, and salt to taste. Stir to melt the cheese thoroughly into the sauce, and then put back on low heat.
- Use your 1 cup of reserved pasta water to thin down the sauce as much as you'd like. I used about 1/2 cup of my pasta water.
- Toss the cooked pasta into the alfredo sauce, and serve topped with the fried sage leaves, pine nuts, and extra parmesan cheese.

CREAMY PUMPKIN PASTA

Steps:
- Heat the oil in a large, shallow, flameproof casserole or frying pan over a low-medium heat and fry the onion with a pinch of salt for 10-15 mins until softened and translucent. Add the garlic and fry for 1 min more. Remove from the heat and leave to cool slightly.
- Meanwhile, cook the pumpkin in a pan of boiling salted water for 10-15 mins until tender when pierced with a cutlery knife. Drain and tip into a blender (or use a hand blender). Blitz with 50ml milk and the onions until completely smooth, gradually adding more milk until the mixture is thick enough to just coat the back of a spoon (you may not need all the milk). Tip into a large frying pan with the tomato purée and mascarpone, and bring to a simmer over a low heat.
- Cook the pasta in a large pan of boiling, salted water following pack instructions. Drain, reserving a cupful of the cooking water. Toss the pasta with the pumpkin sauce, parmesan and 50-100ml of the reserved water to loosen. Season and scatter with extra parmesan.

PUMPKIN ALFREDO
This is quick and really different. The sauce can be thinned out with some chicken or vegetable broth if it seems too thick. Sometimes I also add onions in with the garlic.

- Saute the garlic in the oil over medium/low heat, but do not brown.
- Add the pumpkin, cream, Parmesan and seasonings and heat through (until cheese is melted).

- In a medium size skillet over medium heat, melt the butter then cook the garlic for 30 seconds until fragrant. Add in the pumpkin and half & half. Whisk to combine. Add in the grated parmesan, chopped sage leaves, salt and pepper. Stir to combine. Taste to see if you want to add more salt and pepper. Continue to cook the sauce over low heat until the pasta is done cooking.
- When the pasta is done cooking, combine the pasta, sauce and chicken. Toss to combine. Serve warm, topped with fresh sage leaves for garnish.
