Steps:
- Melt butter in a large pot over medium heat. Cook and stir leeks, garlic, salt, and pepper in the hot butter until leeks are tender and lightly browned, about 15 minutes.
- Stir chicken broth and cornstarch together in a bowl until cornstarch is dissolved; pour over the leek mixture. Add potatoes to the broth mixture and bring to a boil; season with onion powder and garlic powder. Reduce heat, add half-and-half to broth mixture, and simmer until potatoes are tender, about 30 minutes.
- Remove pot from heat and blend soup using a hand blender until smooth; season with salt and pepper.

LOW CAL CREAMY POTATO LEEK SOUP
A nice creamy potato leek soup that's lo cal and easy to make. My mom gave me the recipe and I'm not sure where she got the recipe.

Steps:
- Clean leeks and dice (using only the white& green area up to where the leaves get tough).
- Wash,peel& dice the potatoes.
- Combine diced vegetables with the 3 cups of water& the chicken bouillon in a pot.
- Bring to a boil.
- Cover and simmer for 25 minutes.
- Puree one half of the mixture and then puree the other half (I used the blender).
- Return the pureed mixture to the pot and add the 1/4 cup of non-fat milk.
- Heat through and serve.

Steps:
- Saute leeks and onion in olive oil for 10 min on med/low heat until soft and fragrant.
- In a large pot, boil broth. Add sautéed leeks and onion, garlic, potato cubes and spices. Cover and simmer for 20-30 min, until potatoes are very soft and fall apart when forked.
- Puree the soup with a blender or immersion blender. Make sure not to fill the blender more than 1/2 way so soup doesn't go flying (blend portions at a time). Pour soup back in pot and reheat. Season to taste with salt and pepper.

- In a large pot, melt 3 tablespoons of the butter over low heat. Add the leeks and cook, stirring often, until tender, about 3 minutes. Add the garlic and cook for 30 seconds. Add the chicken stock and potatoes. Cover and simmer gently until the vegetables are tender, about 30 minutes.
- Remove from the heat. With a hand-held immersion blender, or in batches in a food processor, puree the soup until smooth. Season, to taste, with salt and ground white pepper. Ladle into soup bowls and garnish with parsley and 1 tablespoon of soft herbed cheese. Serve immediately.
CREAMY POTATO LEEK SOUP (NOT LOW FAT!!)
Yes, there are other Potato Leek Soups listed, but this is my neighbor's favorite and I don't want to loose the recipe. We make it for him in exchange for all the tools we borrow and all the handyman work we convince him to do! (Thanks Sean!) The recipe originally came from another recipe website, but I forgot to write which one when I copied it over by hand! Be sure to rinse the leeks well! The best way is to slice the end off, slice off most of the green part (it stays too firm for the soup), then slice it in half- long way (like you would a sandwich roll). Now rinse well, being sure to get water into each ring of the leek. It makes them easier to slice too :0)

- In a large pot, bring potatoes and chicken broth to a boil. Lower to a simmer and cook until potatoes are tender (checking with a fork).
- Meanwhile, place bacon in a large skillet and cook until crisp (I sometimes cheat and bake it in the over on a cookie cooling rack over a cookie sheet lined with tin foil. Bake at 350 for about 15-20 minutes I keep checking it, so not sure of the time. Bacon comes out crispy every time and the dripping end up on the foil lined cookie sheet for easy clean up!).
- In the same frying pan (or in a frying pan if you used the oven method to cook the bacon), with 3-4 Tablespoons of the bacon grease (if you cooked the bacon in the frying pan- skim off until you have about this much- if you baked the bacon, add this amount to the frying pan!). Add the leeks- making sure that you have rinsed them well! Saute over med-low heat until they are limp and tender, stirring often.
- Mash or even better, use a submersion blender to mash the cooked potatoes until almost smooth.
- Blend in heavy cream.
- Add cooked leeks and 3/4 of the cooked bacon.
- Continue to blend until soup is almost smooth.
- Mix in remaining crumbled bacon or reserve as a garnish (I add it).
- If you find the soup is too thick for your liking, add small amounts of cream or chicken broth until it reaches the desired consistency- we like it pretty thick.
- Enjoy.

- Pour 4 cups vegetable broth into large pot; add potatoes; bring to a boil and simmer until fork-tender; drain and slightly mash potatoes; reserve broth.
- Pour remaining 1 cup vegetable broth into medium pot; add cauliflower and onions; bring to a boil and simmer until very soft.
- Scoop cauliflower mixture into blender and process until smooth. Add reserved broth from cooked potatoes if necessary.
- Blend 1/2 cup milk with brown rice flour in a bowl with a fork; set aside. Pour pureed cauliflower and remaining 1 cup milk into medium pot. Heat until warmed through, then slowly whisk in milk/rice flour mixture.
- Continue whisking while heating until soup base thickens. Add reserved potatoes (and remaining broth if needed); heat until thickened and bubbly.
- Serve soup into bowls garnished with 1 Tbs. shredded cheese and 1/2 slice prepared turkey bacon.

LOW FAT POTATO LEEK SOUP
This is the simple Potato Leek Soup I like to make in big batches the day after I roast a chicken. One chicken carcass usually yields about 8 cups of broth which works perfectly for this recipe. I developed it using inspiration from a few online recipes but deliberately took out the usual milk and reduced the butter. I also didn't want too many complicated ingredients to prepare - so kept the spices to a minimum. For safety you will need to use a pressure cooker if you plan to jar and preserve it.

Steps:
- 1. Get a big pot that will fit all the ingredients and warm butter or margarine on medium heat till it melts.
- 2. Toss in the leeks and stir fry on medium for 5 minutes.
- 3. Add in the potato cubes and stir fry on medium for another 5 minutes.
- 4. Add in the broth and bring to a boil on high heat while slowly stirring, then immediately reduce to medium low and allow to simmer for 15 minutes or until the potato cubes are just tender.
- 5. Reduce heat to very low so the soup does not cool off.
- 6. Scoop 50% of the soup with potato cubes into blender and puree.
- 7. Put the pureed soup back in the pot and stir.
- 8. Add in the dill, marjoram, salt and pepper.
- 9. Simmer until ready to serve or put in jars for preserving. (you must use a pressure cooker - 10lbs @ 45 minutes).
- 10. When serving you can garnish with crumbled bacon or chopped dill.

- In a saucepan combine the cubed potatoes with onion, celery, cayenne, garlic powder and bouillon powder and chicken broth (start with 2 teaspoon bouillon powder) bring to a simmer over medium heat.
- Reduce heat cover and simmer for about 20 minutes or until veggies are tender (at this point you may add in more bouillon powder if desired).
- In a small bowl whisk together 1/4 cup evaporated milk with 3 tablespoons cornstarch until smooth; stir into the simmering broth mixing constantly.
- Add in the remaining evaporated milk; bring back to a boil, reduce heat to low and simmer for about 3-5 minutes or until bubbly and thickened.
- Remove from heat season with black pepper and salt if desired, then stir in the shredded cheese.
