A comforting cheesy potato bake is the perfect accompaniment to a hearty meat dish in winter

1½ kg King Edward potato, Desiree, or similar, peeled
1 onion, finely chopped
knob of butter, plus extra for greasing
100ml white wine
300ml milk
400ml double cream
3 sage leaves, finely chopped
50g gruyère, grated

Steps:

  • Heat oven to 190C/170C fan/gas 5. Boil the potatoes for 3 mins to soften a little, then drain. When cool enough to handle, slice into 5mm pieces. Cook the onion in the butter in a pan until softened, about 5 mins, then pour over the wine, milk and cream and heat through. Place the potato slices into a large bowl, pour over the cream mixture, sage leaves and half the cheese. Carefully stir until the potato slices are coated.
  • Grease a large baking dish (about 20 x 30cm) with a little butter, then tip the potatoes in. Smooth over the top, scatter over the remaining cheese and season with black pepper. Cover with foil and cook for 30 mins, then uncover and cook 30-40 mins more until a fork slides in easily and the top is golden brown.

1 (2 pound) package frozen hash brown potatoes
⅓ cup chopped green onions
2 cups shredded Cheddar cheese, divided
1 (10.75 ounce) can condensed cream of potato soup
¼ cup butter
2 cups sour cream
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a small pot, heat the soup, butter or margarine and sour cream over low heat.
  • Combine potatoes, green onion and 1 cup cheese into a large mixing bowl. Mix in the heated soup mixture. Season with salt and pepper. Pour into a 9x13 inch dish. Sprinkle one cup of cheese over the top of the casserole.
  • Bake 30 to 45 minutes. Serve warm.

1 kilogram sebago potatoes, cut into 5mm-thick slices
2 teaspoon olive oil
1 medium brown onion, sliced thinly
6 slice pancetta (90g), chopped coarsely
1 cup (250ml) cream
1/2 cup (120g) sour cream
2 tablespoon finely chopped fresh chives
1 cup (120g) grated cheddar cheese

Steps:

  • Preheat oven to 200°C (180°C fan-forced). Grease 2-litre (8-cup) ovenproof dish.
  • Boil, steam or microwave potato until tender; drain.
  • Meanwhile, heat oil in medium frying pan; cook onion and pancetta, stirring, until onion softens and pancetta is crisp.
  • Combine cream, sour cream and chives in medium jug.
  • Layer a third of the potato slices over base of dish; sprinkle with half the pancetta mixture. Pour a third of the cream mixture over pancetta mixture; sprinkle with a third of the cheese. Repeat layering, finishing with cheese.
  • Bake, uncovered, in oven, about 30 minutes or until browned lightly. Stand 10 minutes before serving.

  • Preheat your oven to 180°C for 15 minutes.
  • Boil the potatoes on the stove for 10 minutes to soften. This helps to ensure you have beautifully cooked potatoes when serving.
  • While potatoes are boiling, fry the bacon in a pan with olive oil until the bacon is nice and crispy.
  • Place garlic, parsley, cream, sour cream, bacon and 1 cup of cheese into a bowl and mix to combine.

1 lb lean ground beef
1/2 cup prepared pasta sauce
2 cups milk, divided

  • Preheat oven to 375 degrees F.
  • In a skillet, melt 2 tablespoons of the butter and oil.
  • Add the potatoes and cook over medium-low heat for 5 minutes, stirring frequently.
  • Add zucchini, salt and pepper.
  • Cook until the zucchini is tender.
  • Spoon the vegetable mixture into a 13 x 9 inch baking dish.
  • Set aside.

  • Cook beef until no longer pink and drain.

  • Cover and freeze one casserole for up to 3 months.

I got a Food Wish for a classic creamed cod recently (which, by the way, was one of my childhood favorites), but instead of doing the traditional version, I decided I'd try to make it a little bit fancier and refined and present basically all the same ingredients, but in an individual-sized, beautifully browned and bubbling, gratin form. Not to spoil the ending, but I was very happy with how this came out!

2 medium russet potatoes, peeled and quartered
2 (6 ounce) fillets cod
2 pinches cayenne pepper, divided, or to taste
salt to taste
7 tablespoons unsalted butter, divided
2 tablespoons finely chopped shallot
1 cup heavy cream
2 teaspoons lemon zest
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh tarragon
2 teaspoons freshly grated Parmigiano-Reggiano, or to taste

Steps:

  • Place potatoes in a large pot of well-salted water and bring to a boil over high heat. Reduce heat and simmer gently until tender, about 20 minutes.
  • While potatoes simmer, trim, bone, and cut the cod fillets across into 2-inch pieces.
  • Drain potatoes well and return to the pot. Add a pinch of cayenne, salt, and 4 tablespoons butter. Mash until smooth.
  • Preheat the oven to 450 degrees F (230 degrees C). Grease 2 individual-sized casserole or baking dishes with 1 tablespoon butter. Place both dishes on a baking sheet.
  • Transfer about 2/3 cup of the mashed potatoes into each of the prepared dishes. Smooth out evenly and make a shallow depression with a spoon down the middle. Set aside.
  • Heat remaining 2 tablespoons butter in a deep 10-inch skillet over medium-high heat. Cook the shallots in the hot butter with a pinch of salt until they just start to turn golden, 3 to 4 minutes. Add cream, lemon zest, and a pinch of cayenne, and bring to a simmer. Add cod and wait for the sauce to come back to a simmer. Cook for 1 minute, while basting with the sauce; turn and cook for 1 minute more.
  • Pour in lemon juice and turn off the heat; stir for about 30 seconds.
  • Divide the pieces of cod over the potato. Add enough sauce to just cover the fish and return the pan to the stove.
  • Bring sauce to a boil over medium-high heat and cook until the sauce reduces and thickens, 1 to 2 minutes. Turn off the heat and stir in tarragon.
  • Spoon the thickened sauce over the cod. Add a light dusting of Parmigiano-Reggiano cheese.
  • Bake in the center of the preheated oven until cod is cooked through and the sauce is browned and bubbling, 10 to 15 minutes. Let rest for 5 minutes before serving.

1 tsp Dijon mustard
100 g (1 packed cup) mature cheddar cheese (grated)
50 g (1/2 cup) Parmesan cheese (grated)
½ tsp salt
½ tsp pepper
Pinch of dried thyme
375 g (13oz) cooked chicken (approx. 3 chicken breasts, shredded)
100 g (3 1/4 packed cups) baby spinach leaves
350 g (3/4lb) baby new potatoes (thinly sliced (no need to peel))
1 tbsp melted butter
Fresh thyme to garnish

Steps:

  • Preheat the oven to 200C/400F.
  • Heat the oil in a large frying pan. Add the onion, garlic and carrots and cook on medium heat, stirring regularly until the onion softens.
  • Add the wine, bring to the boil, then simmer for 2-3 minutes. Add the cream and mustard and stir together. Heat through until almost boiling, then stir in both cheeses, along with a good pinch of salt, pepper and dried thyme.
  • Add the cooked chicken and spinach and heat through until the spinach wilts.
  • Spoon the chicken mixture into a large baking dish, then layer the potatoes on top, starting from the outside and working inwards. Once covered in the potato slices, brush with the melted butter and sprinkle on a pinch of salt and pepper.
  • Place in the oven to bake for 30-40 mins, until the potatoes are tender and golden brown.
  • Top with fresh thyme before serving.

  • 1 Preheat oven to 200°C. Spray a non-stick pan with oil. Heat over a medium-high heat. Gently cook onions and garlic until softened and slightly brown.
  • 2 Spray a large baking dish with oil. Place potato slices in a layer in the base of the dish, slightly overlapping at the edges. Place one-third of the onion mixture over the top and drizzle with 1-2 tablespoons of the milk. Repeat layering potatoes, onion and milk, finishing with a layer of potato. Pour the remaining milk evenly over the top.
  • 3 Cover with foil and bake in oven for 25 minutes. Remove from oven and sprinkle with cheese and thyme (if using). Return to oven and bake, uncovered, for 10 minutes or until cheese is melted and top is golden.
