1 tablespoon butter or margarine
2 teaspoons finely chopped garlic
1 package (8 oz) sliced fresh mushrooms
1 1/2 lb pork boneless loin roast, cut into 1-inch pieces
2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
1 cup white wine or Progresso™ chicken broth (from 32-oz carton)
1 1/2 cups frozen pearl onions
3 medium carrots, cut lengthwise in half, then cut into 1/4-inch slices
1 small onion studded with 4 whole cloves
1 teaspoon salt
1/8 teaspoon pepper
1 cup whipping (heavy) cream
1/3 cup Gold Medal™ Wondra® quick-mixing flour
Chopped fresh parsley, if desired

Steps:

  • Heat oil and butter in 4 1/2- to 5-quart Dutch oven over medium-high heat. Cook garlic and mushrooms in oil mixture 5 to 6 minutes, stirring frequently, until mushrooms are softened.
  • Stir in pork. Cook 6 to 7 minutes, stirring frequently, until pork is lightly browned.
  • Stir in broth, wine, pearl onions, carrots, onion with cloves, salt and pepper. Heat to boiling; reduce heat to medium-low. Cover and cook 25 to 30 minutes, stirring occasionally, until pork is tender and no longer pink in center.
  • Remove onion with cloves; discard. Beat in whipping cream and flour with wire whisk. Cook 5 to 6 minutes, stirring constantly, until hot and slightly thickened. Sprinkle with parsley.

Steps:

  • Place a large saucepan over medium heat and add the butter, onion, thyme and salt.
  • Saute for 5 minutes, until the onion is beginning to turn translucent.
  • Add the diced pork and cook for 5 minutes, until the pork has started to color.
  • Add the seeded mustard, chicken stock and sour cream and bring to a simmer.
  • Simmer for 20 minutes before adding the mushrooms. Stir well.
  • Continue to simmer for 40-60 minutes, until the pork is tender and the sauce has thickened.
  • Remove from the heat, add the fresh basil and stir through.
  • Serve and enjoy.

olive oil for the pan
1½ cups diced onion (bite-sized pieces),
1 tablespoon minced garlic
1 pound Crimini or Button mushrooms, (washed and dried, thinly sliced)
2 teaspoons dried thyme
1 teaspoon dried tarragon
¼ cup medium dry sherry
1½ pounds pork tenderloin, (cut into bite-sized pieces)
⅓ cup vegetable or meat stock
1⅓ cup frozen peas, (thawed)
salt and freshly ground black pepper

Steps:

  • Sauté the onions. Coat the bottom of a large sauté pan (12 inch, at least) with olive oil and place it over medium-high heat. Add the onions and garlic to the pan. Cook, stirring from time to time, until the onions are soft and slightly golden, about 7 minutes.
  • Sauté the mushrooms and deglaze. Add a bit more oil, to be sure the bottom of the pan is well coated, turn the heat to high and add about half of the mushrooms. Once they begin to brown, add the other half, and continue to sauté until they're all golden and tender, about 10 minutes total. Now deglaze the pan by drizzling the sherry over the mushrooms and quickly stirring with a flat-edged spatula, scraping anything that's stuck to the bottom off and back into the mixture. Stir in the tarragon and thyme.
  • Add the pork and cook. Season the pieces of pork with salt and pepper and add them to the pan. Mix and add the stock. Once the pieces are cooked through - about 5 minutes - add the peas.
  • Season and serve. Season generously with salt and pepper to taste. (Here's How to Season to Taste.) Serve over rice, pasta or a toasted baguette.

1/2 Cup Flour Seasoned With Salt & Pepper
6 Tablespoons Olive Oil
1 Large Onion, Cut Into Chunks
4 Medium Carrots, Peeled & Cut Into 1-inch Pieces
3 Celery Stalks Cut Into 1-inch Pieces
3 Garlic Cloves, Minced
1/2 Cup White Wine
2 (14 Ounce) Cans Diced Tomatoes
1 Teaspoon Dried Oregano
1 Teaspoon Finely Chopped Fresh Rosemary
1/2 Teaspoon Fennel Seeds

Steps:

  • Trim the roast of fat, and cut into 1-inch pieces.
  • Place the flour in a plastic bag, dump in the pork pieces and shake the bag until coated.
  • Heat half the oil in a heavy skillet or Dutch Oven, and cook half the pork pieces over medium heat until lightly browned.
  • If Using a Slow Cooker, place the browned pork pieces in the slow cooker, then continue to brown the remaining pieces, and place these in the slow cooker when browned as well.
  • Dump the rest of the browned pork and remaining stew ingredients except the garnish into the slow cooker and turn it on low for 8 hours.
  • If using a Dutch Oven, after browning the meat, remove it to a plate, and saute the onion, carrots, celery, and garlic until tender, about 5 minutes.
  • Return the meat to the pot along with the remaining stew ingredients except the topping.
  • Bring to a boil, then reduce heat to a simmer,cover, and cook for 2 1/2 to 3 hours or until the rest is very tender.
  • Just before the stew is finished, chop the topping ingredients together.
  • Serve the stew on polenta, or in bowls with a sprinkling of Gremolata on top.

2 pounds boneless pork shoulder or pork butt (diced into (1.5-2) inch chunks)
1 tablespoon butter
1 tablespoon olive oil
1 small onion (chopped)
2 garlic cloves (minced)
½ teaspoon dried thyme
½ teaspoon dried rosemary
2 bay leaves
salt and pepper to taste
2 cups yukon potatoes peeled and diced
2 large carrots (cut into 1-inch chunks)
2 large ribs celery (roughly chopped)
4 cups chicken broth
15 ounces canned diced tomatoes (undrained)
1 cup frozen green beans
2 tablespoons freshly minced parsley cup
1-2 tablespoons cornstarch (plus an equal amount of water or broth)

Steps:

  • Cut pork into 1-inch chunks (or a little larger).
  • Heat a large soup pot or dutch oven on the stove over medium-high heat. Melt 1 tablespoon each oil and butter. Add pork, onions and celery and brown for several minutes on all sides; pork does not have to be cooked all the way through.
  • Add garlic, dried thyme, rosemary and bay leaves and cook for about a minute, then add broth and tomatoes (with the juice). Bring to a boil, reduce heat to low and simmer for about an hour or until pork is tender.
  • Add potatoes, carrots, and green beans to the stew and bring to a boil. Reduce the heat to low again and cover. Simmer for an additional 15-20 minutes or until vegetables are tender and broth is slightly thickened.
  • To thicken the stew: In a small bowl, whisk together cornstarch and water or broth with a fork until smooth. Stir in the cornstarch slurry and simmer, uncovered, for 5-10 minutes or until thickened. Stir in fresh minced parsley.

2 tbsp olive oil
500 g (1.1lbs) pork shoulder steaks (chopped into large chunks)
1/2 tsp salt
1/2 tsp pepper
1 medium onion (peeled and diced)
12 button mushrooms (sliced in half)
2 cloves of garlic (peeled and minced)
2 tbsp plain (all purpose) flour
240 ml (1 cup) dry cider
420 ml (1 3/4 cups) chicken stock
1/2 tsp dried sage ((or 1 tbsp finely chopped fresh sage))
2 crisp dessert apples
80 ml (1/3 cup) double (heavy) cream
6 fresh sage leaves ((optional))
1 apple (cored and thinly sliced)

Steps:

  • Preheat the oven to 170c/325f.
  • Add the 2 tbsp of oil to a large casserole pan and heat over a medium-high heat.
  • Add the chunks of pork and sprinkle over the 1/2 tsp each of salt and pepper. Brown the pork on both sides - this should take about 5-6 minutes altogether.
  • Turn the heat down to medium and add in the diced onion and 12 button mushrooms that have been sliced in half. Cook for 5 minutes, stirring occasionally, until the onion softens.
  • Add in the 2 cloves of minced garlic and cook for a further minute.
  • Sprinkle over the 2 tbsps of flour and stir it all in to coat the meat, onion and mushrooms.
  • Pour in the 240ml (1 cup) of cider and the 420ml (1 3/4 cups) of chicken stock. Add in the 1/2 tsp of dried sage.
  • Turn up the heat and bring to the boil, scraping up any bits that might have stuck to the bottom of the pan.
  • Place a lid on the dish and place in the oven for 90 minutes. Check a couple of times towards the end of cooking and add a splash of water or stock if it's starting to look a little dry.
  • Remove the casserole from the oven and add in the sliced apples and the 80ml (1/3 cup) of cream.
  • Stir together, place the lid back on the dish and place back in the oven for 25 minutes - until the apples are tender.
  • Remove from the oven and serve. I like to top mine with a few fresh sage leaves and some very thinly sliced apple for a bit of crunch. I love to serve this dish with mashed potatoes, cabbage and roasted radishes.

1 cube chicken bouillon

2 (10 1/2 ounce) cans cream of celery soup
1 1/2 cups apple juice
2 medium red potatoes, cubed

3 cups cabbage, roughly chopped
1/2 cup milk

Steps:

  • In a skillet brown the cubed pork.
  • To the crock pot, add the undiluted soup, apple juice, potatoes, carrots, caraway seeds, and pepper. Cover and cook on high for 3 1/2 hours. If using the stove, use a dutch oven on medium for an hour.
  • Add the milk and cabbage. Cook for 2 1/2 hours longer in the crock pot. About 35 minutes on the stove top. Careful not to burn the milk on the stove.
  • Re-season to taste. We found it need some extra salt but we like our salt.

  • Combine pork, broth, potatoes, onion, celery, parsnips, wine, garlic and herbs in a 5 - 6 quart slow cooker. Stir to combine. Cover and cook on high heat setting for 4 1/2 hours.
  • Whisk flour and butter together in a small bowl until smooth. Stir in cream until incorporated.

6 tbsp Water
4 tbsp Canola oil
4 tsp Cornstarch
2 cup Water
2 tbsp Lime juice
2 tsp Kosher salt
4 Japanese Eggplants (cut into 1 inch chunks)
2 cup Coconut cream
1/2 cup Red curry paste
2 tbsp Brown sugar or Palm sugar
1.5 cups Butternut squash (diced)
2 cups Coconut milk (mixed with 2 cups of water)
4 Red Thai Chiles (sliced, seeds removed)
2 cup Thai basil leaves
12 Lime leaves (thinly sliced)
4 tbsp Fish sauce

Steps:

  • In a large mixing bowl combine water, oil, cornstarch and salt. Add the sliced pork shoulder to the bowl and mix well. Cover and marinate for at least 2 hours or overnight.
  • In a medium bowl, stir together water, lime juice and salt. Add eggplant chunks to the bowl and soak to prevent the eggplant from turning brown. Set aside. Drain and rinse before cooking.
  • In a large wok over high heat, heat the coconut cream until it bubbles, 2 to 3 minutes. Add the red curry paste, brown sugar, pork, and squash and stir to mix. Reduce the heat to medium-low and simmer, stirring often, for approximately 5 minutes. Add the thin coconut milk and continue cooking, stirring for 15 minutes.
  • Add the eggplant and cook, stirring constantly to fully submerge the eggplant to prevent from discolouring. Add the chiles, Thai basil leaves, lime leaves and fish sauce. Mix well and cook for another minute. Season to taste then remove from the heat.
  • Serve Thai Red Pork Curry with steamed rice.
