1 24 oz bag frozen gnocchi
4 tablespoons butter
4 tablespoons flour
2 ½ cups milk
8 oz cream cheese
1 ½ cups shredded mozzarella
⅓ cup grated Parmesan
1 1/2 cups shredded chicken
3 tablespoons jarred pesto

Steps:

  • Preheat oven to 350 degrees.
  • Prepare gnocchi according to package directions.
  • Place butter in a saucepan over medium heat. When butter has melted, whisk in flour and stir until combined.
  • Slowly whisk in milk until the mixture is smooth. Continue to heat milk on medium-low heat until the mixture begins to thicken.
  • Stir in cream cheese until fully incorporated.
  • Stir in mozzarella and Parmesan until smooth and creamy.
  • Add gnocchi and chicken to the cheese mixture.
  • Stir in pesto. Place gnocchi mixture in a 9 x 13 inch casserole dish that has been coated with cooking spray. Bake gnocchi for 20 minutes or until bubbly.

½ cup sundried tomatoes in oil (chopped)
¾ cup (180ml) heavy cream ((double cream in the UK))
4 tablespoons pesto
½ teaspoon salt

Steps:

  • In a pot, bring lightly salted water to a boil and cook the gnocchi according to the package instructions.
  • In a pan over medium heat, heat sundried tomato oil and sear the sundried tomatoes for a minute just to release the flavor. Add the cream, simmer for a minute (don't boil), remove from heat and mix in the pesto. Season with salt.
  • Add the cooked and drained gnocchi to the sauce, and toss until the gnocchi is covered in sauce.
  • Serve warm. If desired, top with grated parmesan or vegetarian hard cheese.

Quick recipe that can be made with prepared gnocchi and pesto, plus chicken breast and fresh mozzarella. Very easy; so easy, I'm sure it borders on a non-recipe. You're really just combining ingredients. You can also experiment with adding other ingredients, like mushrooms or veggies. Anything that needs to be cooked can probably be added at the chicken stage. I did not add any onions or garlic, because the pesto I used already had both, but if your pesto does not, you can add those with the oil as well.

1 skinless, boneless chicken breast half - cut into 1 1/2-inch cubes

Steps:

  • Heat olive oil in a saucepan. Season chicken pieces with salt and pepper; cook and stir in the hot oil until no longer pink in the middle, 7 to 10 minutes. Remove chicken to a bowl using a slotted spoon, retaining drippings in the pan.
  • Pour chicken broth into the saucepan. Bring broth to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon; continue cooking until the broth reduces in volume by about half, 7 to 10 minutes. Return cooked chicken to the saucepan. Stir pesto through the chicken mixture; remove from heat.

Steps:

  • Add the pesto, cream, wine, and garlic to a deep skillet over medium heat.
  • Once the sauce starts to gently bubble, stir in the gnocchi. Cover the pan and cook for 5 minutes.
  • Uncover the pan and give it a good stir. Continue to cook it for a couple more minutes, stirring often (the sauce will thicken quickly as the gnocchi releases more starch).

1 1/2 pounds boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper, to taste
5 tablespoons unsalted butter, divided
1 medium shallot, diced
3 cloves garlic, minced
2 teaspoons chopped fresh thyme leaves
3 tablespoons all-purpose flour
1 1/4 cup chicken broth
1/4 cup dry white wine*
1/2 cup half and half
1 bunch kale, stems removed and leaves torn into bite-sized pieces
1/2 cup freshly grated Parmesan, about 2 ounces

Steps:

  • Preheat oven to 400 degrees F. In a large pot of boiling salted water, cook gnocchi according to package instructions; drain well. Season chicken with 3/4 teaspoon salt and 1/2 teaspoon pepper. Melt 2 tablespoons butter in a large skillet over medium heat. Working in batches, add chicken to the skillet in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side; set aside. Melt remaining 3 tablespoons butter. Add shallot, and cook, stirring frequently, until tender, about 3-5 minutes. Stir in garlic and thyme until fragrant, about 1 minute. This is a shortcut version of a dish my grandma made from scratch. It is super yummy either way. I have added chicken to her recipe to make it a main dish rather than a side.

2-3 boneless chicken breast (pounded 1/2 inch thick)
1/4 c olive oil, extra virgin
1 pkg dry italian dressing mix
1 pkg prepared potato gnocchi
4 Tbsp butter (divided)
1/2 c dry white wine
1/4 c chicken broth
1/2 c pesto
1/2 c heavy cream
1/2 c parmesan cheese (plus some for garnish)

Steps:

  • 1. Prepare gnocchi per package instructions. Melt 2 tbs butter in a medium saute pan over medium high heat. Add gnocchi with a little salt and pepper. Saute just enough to give a little caramel color to some of the gnocchi. Just a few spots. Don't overcook. Remove from heat and set aside.
  • 2. Rub chicken with dry Italian dressing mix. Heat olive oil over medium high heat in a large saute pan. Saute chicken until it's nice and colored on both sides (about 5 minutes per side). Remove from pan. Cut into bite size pieces.
  • 3. Add butter to pan and scrape up bits stuck to pan. Add chicken broth and wine and bring to boil. Reduce to simmer and cook about 5 minutes. Stir in pesto. Stir in heavy cream and Parmesan cheese. Return chicken to pan, fold in gnocchi and heat to serving temperature. Garnish with Parmesan cheese and enjoy!
  • 4. My grandmother made her own gnocchi and pesto which was wonderful. I make this from scratch a lot but wanted to also have a quick and easy version for those days I don't have much time or don't feel like destroying my kitchen, lol.

1 quart chicken broth or 1 quart stock, plus water
2 tablespoons olive oil or 2 tablespoons grapeseed oil
1 medium onion, diced
1 large garlic clove, minced
8 ounces mushrooms, sliced
1 1/2 lbs boneless skinless chicken, cut into 1 to 1 1/2 inch cubes
1 (10 ounce) can cream of mushroom soup, undiluted
3/4 cup basil pesto
1 teaspoon sundried tomato and basil seasoning (like Sbarro) or 1 teaspoon italian seasoning

1 (16 ounce) package potato gnocchi

Steps:

  • Put a pot on the stove with the chicken broth in it and heat to boiling.
  • Meanwhile, in a large saute pan, saute the onion in the oil on medium heat until soft. Add the minced garlic and saute for a minute more until fragrant. Add the mushrooms and saute until lightly brown and most of their liquid is evaporated; push to the side of the pan. Add the chicken and saute, stirring often, until just cooked through. Add the soup, the pesto, and the seasonings to the pan and stir to combine everything thoroughly. Reduce heat and simmer gently until the gnocchi are ready.
  • When the broth reaches a boil, carefully add the gnocchi and stir to separate. Add extra water if needed to give the gnocchi plenty of liquid. Cook until the gnocchi are done and float to the surface. Using a spider strainer, transfer the gnocchi to the saute pan. Stir gently to coat the gnocchi. If the sauce is too thick, add a little of the cooking broth and stir to combine. Serve in pasta bowls with grated parmesan and bread.

  • Combine all of the ingredients in a large bowl and refrigerate until the 'dough' holds the shape of a ball when rolled between your hands, at least 1 hour.
  • On a lightly floured surface roll the dough into long strips and pinch off 1-inch pieces (the same size as regular gnocchi). Work fast or your dough will start to become super tough to work with! Put the gnocchi on a plate and put back into the refrigerator for at least 1 hour.
  • While the gnocchi is resting, make the pesto sauce by combining all of the ingredients in a blender and pulsing until combined. Set aside.

6-8 oz. pesto, (store bought or fresh made, 3/4 - 1 cup)
1/2 cup light cream (or half and half)
1/2 cup freshly grated parmesan cheese

Steps:

  • In a large pot, cook the gnocchi according to the package directions. Drain, rinse and return them to the pot.
  • In a 12" skillet, heat oil over medium heat and saute the snap peas and red peppers until tender, about 4 minutes. Toss into the pot with the reserved cooked gnocchi. In the same skillet, cook and crumble Italian sausage until cooked through about 8-10 minutes. Transfer sausage to the pot with the vegetables and pasta.
  • Over med-low heat, stir to combine the pasta, vegetables and sausage mixture. Add the pesto and light cream; toss gently to coat all the ingredients. Heat through and serve with freshly grated parmesan cheese.

  • * Substitution, if you can't find gnocchi, try this easy pesto and cream sauce on any type of pasta. You can also use 3/4 cup of frozen peas in place of the snap peas.
