I found this recipe for this vegetable casserole, which is my husband Rory's favorite, in an old magazine I bought at a yard sale right after we got married. It has stood the test of time! It's a wonderful side dish for meat.

Number Of Ingredients 9

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
3/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
3 cups frozen chopped broccoli, thawed
1-3/4 cups frozen cauliflower, thawed and cut into bite-size pieces
8 ounces wide egg noodles, cooked and drained
1-1/2 cups shredded Swiss cheese, divided

Steps:

  • In a large bowl, combine the soup, sour cream, onion, salt and pepper. Add the broccoli, cauliflower, noodles and 1/4 cup of cheese; mix gently. , Pour into a greased 13x9-in. baking dish. Top with remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through.

30-Minute Creamy Veggie Pasta image

This creamy vegetarian pasta is a sneaky yet delicious way to get a full serving of veggies. Made in just 30 minutes!

2 tbsp Unsalted Butter
1 red bell pepper
1 small onion
2 cups mushrooms
16 oz pasta (Cavatappi is great option)
2 garlic cloves
3/4 cup parmesan cheese
2 cup broccoli
2 cup heavy whipping cream
1 tsp garlic parsley salt (adjust to taste)

Steps:

  • Dice the bell pepper and onion into 1-inch cubes. Slice the mushrooms. Set the veggies aside.
  • Preheat a deep skillet with butter over medium heat. Add the mushrooms and cook them until they soften.
  • Add the bell peppers and onions to the skillet and cook them until they soften.
  • Cook the pasta in a boiling pot of hot water for about 4 minutes less than the box instructions. Add the partially cooked pasta into the skillet with the veggies.
  • Add the heavy whipping cream, pressed garlic, and broccoli to the skillet. Cook for about 5 minutes.
  • Fold in the parmesan cheese and stir until evenly combined.
  • Serve immediately and enjoy!

1 (12 ounce) package farfalle (bow tie) pasta
½ (8 ounce) package cream cheese, softened
1 (24 ounce) jar pasta sauce
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes
1 pound ground beef
1 onion, minced
2 cloves garlic, minced
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and return pasta to pot. Melt cream cheese into the pasta. Stir pasta sauce, Italian seasoning, and red pepper flakes into the pasta mixture.
  • Heat a skillet over medium heat. Break ground beef into small pieces and add to the skillet; cook and stir until some of the fat has rendered, 2 to 3 minutes. Add onion and garlic to the beef, continue cooking until the ground beef is completely browned, about 5 minutes more. Stir beef mixture into the pasta mixture.
  • Pour pasta-and-beef mixture into a 3-quart casserole dish. Sprinkle mozzarella cheese over the dish.
  • Bake in preheated oven until the mozzarella cheese melts, 5 to 10 minutes.

I created this recipe a few weeks ago with ingredients in the pantry. My husband is a big meat eater, and I love lots of veggies, so as a compromise, I grilled the chicken on the side and added lots of veggies to the pasta, & that made both of us happy.

1 box 16 oz. pasta rotini, mostaccioli, or shell pasta, cooked according to directions
1 jar(s) 16 oz. classic alfredo sauce
8 oz canned sliced mushrooms, drained
1 bunch green onions, chopped
1 medium red or green bell pepper, chopped
2 medium tomatoes, quartered & cut into eights
1 lb fresh broccoli floweretts
1 1/2 c heavy whipping cream
1 1/2 tsp lemon pepper( no salt added)
1 Tbsp italian seasoning
3 clove garlic, minced
3/4 c freshly grated parmesan cheese
2 Tbsp olive oil or canola oil

Steps:

  • 1. Cook pasta according to package directions and set aside. Add olive or canola oil to large skillet, and heat to medium high heat, then add chopped onions, bell peppers, broccoli, and tomatoes, let cook a few minutes till crisp tender, then add drained mushrooms, pasta, and spices, stir to mix.
  • 2. Add alfredo sauce, then pour whipping cream into Alfredo sauce jar, and rinse jar with cream and pour over pasta sauce, stir till heated through, about 10 to 15 minutes. Add freshly grated parmesan cheese, and stir till cheese begins to melt. Garnish with additional chopped green onions & freshly grated Cheese if desired. if desired. Serve while still hot.
  • 3. Note you can add chopped grilled Chicken or shrimp to this dish if desired. But I grilled and served my chicken on the side. This dish is quick and easy, and quite tasty. I used the veggies that I had on hand, but you can use what ever vegetables you have.

My kids' stepmother gave me this recipe years ago - at the time, it was one of the only things she could get them to eat. It's a very easy casserole to make, and quite tasty. Enjoy!

12 ounces rigatoni pasta
28 ounces whole tomatoes, drained and broken into small pieces
1 cup large-curd cottage cheese
1/8 teaspoon red pepper flakes
1 teaspoon dried thyme
1/2 teaspoon salt
pepper, to taste
1 (15 ounce) can cannellini beans, drained and rinsed
1/2 lb mozzarella cheese, grated

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Spray nonstick cooking spray on 13x9x2" baking pan. Put baking pan in oven to warm while preheating.
  • Cook the rigatoni in salted water.
  • While the rigatoni is cooking, combine the tomatoes, cottage cheese, red pepper flakes, thyme, salt, pepper, and cannelini beans in a large bowl.
  • Add the cooked rigatoni to the tomato mixture and combine well. Pour into the baking pan.
  • Top with grated mozzarella. Bake in 400 degree oven for 30 minutes. Allow to stand for 10 minutes before serving.

This makes a terrific side dish for chicken or pork chops, or a complete vegetarian meal. You can also add cubes of leftover ham, turkey or chicken to make a yummy one-dish meal.

2 1/2 cups dry fusilli or 2 1/2 cups rotini pasta
1 (16 ounce) bag california-blend frozen vegetables (mixed broccoli, cauliflower and carrots)
1 (10 3/4 ounce) can cream of mushroom soup (or your favourite creamed soup)
3/4 cup milk
1/2 cup freshly grated parmesan cheese
1 1/2 tablespoons mustard (preferably dijon)
1 (3 ounce) package cream cheese, softened
salt and black pepper

Steps:

  • Note: 1 1/2 cups of both fresh broccoli florets and fresh cauliflower florets, as well as 1 cup of sliced fresh carrots, can be substituted for the frozen veggies.
  • Bring a large saucepan of salted water to boil and cook pasta according to package directions; add frozen veggies in with pasta during last five minutes of cooking.
  • Drain pasta and veggies in colander.
  • In the same pan, over low heat, whisk together soup, milk, parmesan, and mustard; add cream cheese and whisk frequently while cream cheese melts.
  • Once mixture is smooth, add veggies and pasta into sauce.
  • Heat until mixture is combined and warmed through, stirring frequently.
  • Taste; add salt and pepper if desired; serve.
