- For the orange curd: Whisk together the granulated sugar, eggs, orange zest and juice, lemon juice and salt in a medium saucepan. Place over medium-low heat and cook, whisking constantly, until the mixture thickens to the consistency of a pudding, 7 to 8 minutes. Remove from the heat and stir in the butter a couple of cubes at a time. Set aside to cool.
- For the trifle: Beat the heavy cream to stiff peaks in a large bowl with an electric mixer. In another bowl, stir together the mascarpone, confectioners' sugar and liqueur. Gently fold the mascarpone mixture into the whipped cream.
- Dollop a quarter of the cream mixture on the bottom of a 3-quart trifle dish. Cover with a layer of ladyfingers, breaking them up if necessary to cover the bottom of the dish entirely. Spread a third of the curd over the cookies. Cover with about 1/2 cup of the raspberries, spreading them evenly. Dollop and spread one-quarter of the cream mixture on top of the raspberries. Repeat the layers of cookies, curd, raspberries and cream mixture 2 more times, ending with the cream mixture (the layers will depend on the size and shape of your dish; you might have more or less layers). Chill the trifle for at least 1 hour and up to overnight.
- When ready to serve, decorate the top of the trifle with the orange slices and remaining raspberries.
CHOCOLATE ORANGE CREAM COCKTAIL
This is a drink that's as pretty as it is a sweet indulgence. In fact, we like to call it dessert in a martini glass. It tastes a bit like those Chocolate Orange Cream candy eggs, but a whole lot better and more grown up. Wanna really make this pretty? Drizzle some chocolate syrup lightly across the finished drink in a zig zag pattern. Oh yummy!

- Mix two parts bittersweet chocolate powder and one part superfine sugar on a small plate. Rub the outside rim of a martini glass with water and then dip the outside rim into the chocolate-sugar mixture. Set aside.
- Add Godiva liqueur and Bailey's to a shaker filled two-thirds with ice. Shake for 30 seconds and strain into martini glass. Float Gran Marnier Centenaire over the top and garnish with orange twist.

- Zest the lemons and remove the white pithe. Place in a large container with the alcohol. Let sit for 1 to 2 weeks.
- In a large pot, add the sugar and cream. Heat until the sugar has dissolved, about 5 minutes. Let this mixture cool completely. Add the lemon/alcohol mixture into the pot using a strainer to catch the zest. Pour mixture into 2 bottles. Store in refrigerator for 3-5 days before drinking.
- Continue to store in freezer.

I've been researching liqueur recipes to make as hostess gifts for Rosh Hashana. This one is delicious, great drizzled on some vanilla ice cream.

Steps:
- Wash the oranges well with soap and water.
- Pare very thinly the bright-colored rind from the oranges (no white).
- Blot the peel on paper towels to remove any excess oil.
- Put the peel in a 4 cup screw-top jar.
- Add 2 cups vodka.
- Close jar.
- Store in a cool, dark place for 2 days or until the vodka has absorbed the flavor.
- Remove the peel and add the remaining vodka, along with the superfine sugar.
- Close the jar and store in a cool dark place at least 1 month to age.

- Heat oven to 350°F
- Press cookie dough evenly on bottom and 1 inch up sides of ungreased 13x9-inch (3-quart) glass baking dish (If dough is sticky, use floured fingers).
- Sprinkle evenly with orange peel.
- In medium bowl, beat cream cheese, sugar, marmalade and liqueur with electric mixer on medium-high speed about 1 minute or until well blended.
- Add eggs; beat about 2 minutes or until well blended and mixture is creamy.
- Spread evenly in crust.
- Bake 29 to 36 minutes or until crust is golden brown and center is set.
- Cool 1 hour.
- In small microwavable bowl, microwave whipping cream and food color uncovered on High about 30 seconds or just until boiling.
- Add butter and baking chips; stir until chips are melted.
- Spread mixture evenly over bars.
- Refrigerate about 1 1/2 hours or until chilled and firm.
- To serve, cut into 6 rows by 4 rows, using thin, sharp knife and wiping blade occasionally.
- Cover and refrigerate any remaining dessert squares.

- In a cocktail shaker filled with ice, pour the vodka, triple sec, half-and-half, and orange juice.

- In a small, heavy saucepan, whisk the egg yolks with the eggs, orange juice, sugar and cornstarch. Cook over moderate heat, whisking constantly, until the mixture thickens and reaches 180° on a candy thermometer, about 5 minutes. Strain the custard through a fine sieve set over a bowl. Let cool to room temperature, stirring a few times. Press a sheet of plastic wrap directly on the custard and refrigerate until very cold, about 1 hour.
- Meanwhile, using a sharp knife, peel the oranges, removing all of the bitter white pith. Cut in between the membranes to release the sections. Cut the orange sections into 1/2-inch dice.
- Spoon the oranges into glasses or bowls and top each serving with 1 teaspoon of the orange liqueur, 1/4 cup of the orange custard and a scoop of the ice cream. Serve.
