CABBAGE AND NOODLES
A great side dish or a meal on its own. This is a Polish/Hungarian dish. Can use bacon but I cut back on that to make it meatless. Also can garnish with poppy seeds. Adding peas for color and nutrition. Bacon is a yummy addition for those that eat meat. Just brown drain most of the fat then add butter and oil and brown onions. Be sure to give the onions a nice brown color using a med high heat.

GARLIC NOODLES
These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

- Add shredded cabbage to the onions and toss to combine. Add 3 tablespoons of water to the pan, reduce to medium low, and cover with a lid. Allow mixture to simmer for 15 minutes (or until cabbage is tender). stirring occasionally.
- Remove lid from pan, stir in remaining 2 tablespoons of butter, then toss cooked egg noodles with onions and cabbage. Turn heat up to medium and allow everything to cook together for 8-10 minutes, giving everything a toss frequently. Be sure to adjust the heat so that the cabbage and noodles get slightly crispy in places, but so that it does not burn. If the pan seems a bit dry, you can add a few more tablespoons of butter, or a little bit of water or reserved cooking liquid.
- Remove pan from the heat and season to your taste with salt and pepper. Sprinkle with paprika before serving.

- Remove the outer leaves of the cabbage, quarter it, and remove the core. Slice the quarters into strips, about 50 mm/ 1/4 inch. If the quarters are very large, you could halve them crosswise in the middle before slicing, so that the strips are not excessively long.
- Melt 1 tablespoon butter in a large thick-bottomed pot or Dutch oven. Cook the onion for a few minutes until translucent.
- Add the cabbage and stir well. If the cabbage doesn't fit in the pot from the beginning, place only half of it into the pot and stir for a few minutes until it loses volume. You can then add the rest of the cabbage.
