I don't like chopped boiled eggs in potato salad so I developed this recipe using pickles and pickle juice for tang! The fresh veggies are crunchy and delicious. Yes, there are still eggs in the mayo-based dressing but you can sub an egg-free mayo. Try it - it's yummy!

2 lbs potatoes
2 stalks chopped celery
1 chopped green pepper
1/2 cup chopped onion
1/2 cup chopped pickle
1 1/4 cups mayonnaise
2 tablespoons pickle juice
2 teaspoons spicy brown mustard or 2 teaspoons Dijon mustard
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Boil potatoes in water for 25 minutes, drain and set aside to cool.
  • Combine remaining ingredients in large covered container and place in refrigerator while potatoes are cooling.
  • When potatoes are cool enough to handle, peel and cube them.
  • Add to vegetable mayonnaise mixture and toss.
  • Cover and chill at least 6 hours or overnight.
  • Delicious!

1 teaspoon paprika, or to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool enough to handle, 10 to 15 minutes. Cut into cubes.
  • Mix mayonnaise, celery, onion, vinegar, mustard, salt, and pepper together in a large bowl. Add potatoes and mix to combine. Stir in eggs and sprinkle with paprika.

3 tablespoons sugar
4-1/2 teaspoons all-purpose flour
3 teaspoons salt, divided
3/4 cup milk
1 egg, lightly beaten
1/4 cup cider vinegar
1 tablespoon prepared mustard
5 pounds red potatoes
12 hard-boiled large eggs
3 cups finely chopped celery
1 medium sweet onion, finely chopped
2 cups mayonnaise
3/4 teaspoon pepper

Steps:

  • In a small saucepan, combine the sugar, flour and 1 teaspoon salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in vinegar and mustard. Cool without stirring to room temperature., Cut potatoes into 1/2-in. cubes; place in a large kettle and cover with water. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until tender. Drain; rinse in cold water and drain again., Set aside one hard-boiled egg for garnish; chop the remaining eggs. In a large bowl, combine the potatoes, chopped eggs, celery and onion. Whisk the mayonnaise, pepper and remaining salt into cooled milk mixture. Pour over potato mixture; toss gently to coat. Cover and refrigerate for at least 2 hours. Garnish with reserved egg.

Whenever there is a pot luck function at work, I am TOLD that I have to bring the potato salad. No one else is allowed to and I am never given a choice. Thank you everyone who ever tried this potato salad and for leaving such glowing reviews for it. You all have made me look so good. I personally can not stand eggs or raw onions, so I leave them out but I know most people don't think a potato salad is complete without them. Thanks again for so many wonderful reviews. 1/2 lb bacon, prepared as in Homemade Fresh Bacon Bits
1 cup thinly sliced celery
1/2 cup finely chopped onion

  • Cook potatoes in boiling, salted water until tender.
  • Drain well.
  • Peel and cube potatoes.
  • Transfer to a large bowl.

  • Combine mayo, sugar, celery seed, vinegar, mustard, and salt.
  • Add mayo mixture to potatoes.
  • Toss lightly to coat potato mixture.
  • Carefully fold in the chopped eggs.
  • Cover and chill thoroughly.
  • Bacon bit tip: Partially freeze your package of bacon. Use a sharp knife and cut the frozen bacon into long strips about 1/4 inch wide. Turn the bacon and cut the strips into pieces also about 1/4 in wide. You now have perfect raw bacon pieces to fast fry. No need to separate. They will separate during cooking. Perfect bacon bits.

This recipe is best when small new potatoes are used although it works well using large red potatoes, there is nothing fancy about this but it is big on flavor, I make this often using green onions and fresh dill from my garden --- since everyone's tastes are different you may may need to adjust the amounts --- I sometimes purchase a whole piece of cooked deli ham, chop it up into cubes and add it to this salad --- cooking time is chilling time

3 lbs new small baby potatoes (washed and unpeeled)
6 large whole radishes, chopped
5 hard-boiled eggs, peeled (sliced with an egg slicer or knife)
4 green onions, chopped
2 cups sour cream
2 teaspoons sugar (or to taste)
1 teaspoon garlic powder (if you are a garlic-lover use 1-1/2 teaspoons)
1 tablespoon chopped fresh dill (or use 1 teaspoon dried dill or to taste)
1 teaspoon seasoning salt (or to taste or use white salt to taste)
fresh ground black pepper (optional and to taste) (optional)

Steps:

  • Wash and scrub the outside of the new potatoes (do not peel).

  • Remove to a bowl and cool to room temperature.
  • Slice the cooled potatoes in half.
