Meet the Cook: Main-meal soups are something I'm always on the lookout for. Since I love cheese and our kids like anything with Mexican flavor, I knew this one would be popular at our house. I've served it with tacos, nachos or a loaf of bread. Our three children are grown, and we've just become proud grandparents. -Susan Salenski, Copemish, Michigan

1 cup chicken broth
1 large tomato, peeled, seeded and diced
1/2 cup finely chopped onion
2 tablespoons chopped green chilies
1 garlic clove, minced
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and pepper to taste
3 cups whole milk, divided
1-1/2 cups shredded Monterey Jack cheese

Steps:

  • In a 3-qt. saucepan, combine the broth, tomato, onion, chilies and garlic; bring to a boil. Reduce heat; cover and simmer for 10 minutes or until vegetables are tender. Remove from the heat and set aside., In another saucepan, melt butter. Stir in the flour, salt and pepper until smooth; gradually stir in 1-1/2 cups milk. Bring to a boil; cook and stir for 1 minute or until thickened. Slowly stir into vegetable mixture. Reduce heat; add cheese and remaining milk. Cook and stir over low heat until cheese is melted. Serve immediately.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
salt and pepper
3 cups milk, divided
1 1/2 cups shredded monterey jack cheese (6 ounces)

Steps:

  • In a 3 quart saucepan, combine the first 5 ingredients; bring to a boil.
  • Reduce heat; cover and simmer for 10 minutes or until vegetables are tender.
  • Remove from the heat and set aside.
  • In another saucepan, melt butter.
  • Stir in flour, salt and pepper.
  • Cook and stir over medium heat until smooth.
  • Gradually stir in 1 1/2 cups milk; bring to a boil.
  • Boil for 1 minute stirring constantly.
  • Slowly stir into vegetable mixture.
  • Add cheese and remaining milk.
  • Cook and stir over low heat until cheese is melted.
  • Serve immediately.

Delicious, creamy Monterey Jack cheese melts smoothly over fresh, gently sweetened, cubed avocado on crispy grilled country bread.

1 ripe avocado from Mexico, peeled, pitted and cubed
2 tablespoons mango jam
1 teaspoon fresh lemon juice
1 tablespoon minced red onion
Salt and black pepper to taste
2 tablespoons butter with canola oil
2 teaspoons Dijon mustard
4 slices country white bread
4 thin slices Monterey Jack cheese

Steps:

  • Halve the avocado and remove the pit. Score the flesh on each half in a criss-cross pattern. Carefully scoop the cubes into a bowl with a spoon.
  • Place mango jam in a small bowl and microwave on high until warm and thinned, about 20 seconds.
  • Gently stir the jam into the avocado; blend in lemon juice, red onion, salt and pepper.
  • Mix the butter-canola blend and Dijon mustard together in another bowl; stir until smooth. Spread mixture evenly on one side of the bread. Turn slices over onto a cutting board.
  • Lay the cheese on the unbuttered sides of the bread. Divide the avocado mixture on top of the cheese and spread evenly. Gently top with slice of bread, butter side up.
  • Heat a non-stick skillet on medium-high heat. Place the sandwiches in the pan and cook on each side until golden brown and crispy, 2 to 3 minutes. Cut in half diagonally and serve.

3 large baking potatoes (not peeled)
3/4 cup(s) onion, chopped
1 teaspoon(s) garlic powder
1/2 teaspoon(s) turmeric, ground

1 large cream of chicken soup (family size)
1/2 cup(s) sourcream
1 cup(s) milk
1 cup(s) water
2 cup(s) monterey jack cheese
1 tablespoon(s) parsley flakes
1 - smoke kielbasa (sliced thin)
ADD WATER AS NEEDED WHILE BAKING

Steps:

  • Oven 400* Bake potatoes in Microwave and cut into small chunks, chop onion set all aside.....
  • In a Dutch Oven, place Cream of Chicken, Sour cream, Milk, Water into pan and stir well to get any lumps out
  • Stir in all spices, stir in potatoes, kielbasa and onions mix well....Stir in 1 Cup of Cheese, mix well...sprinkle the rest of the cheese on top...
  • Place lid on top and put dutch oven in to the oven and bake for 45 minutes....checking on it every 15 minutes and stir....You may have to add a little more water to it if you feel the need....after the 45 minutes then remove the lid for another 15 minutes...
  • The top will brown slightly, serve hot.....

1/8 teaspoon garlic salt
8 ounces monterey jack cheese, cut into 1-inch cubes

Steps:

  • In a large saucepan, combine the water, tomato and chilies.
  • Bring to a boil; boil for 5 minutes.
  • Stir in the milk, soup and garlic salt.
  • Cook and stir over medium heat until heated through.
  • Place cheese cubes in serving bowls; ladle hot soup over cheese.
