Kosher salt
12 ounces cavatappi or other corkscrew pasta
1 cup crushed cheese crackers
2 1/4 cups whole milk
10 ounces bulk sweet Italian sausage
3 tablespoons grated Parmesan cheese
2 tablespoons all-purpose flour
8 ounces sharp cheddar cheese, shredded
2 ounces processed cheese (such as Velveeta), cut into 1/2-inch cubes
1/2 teaspoon Dijon mustard

Steps:

  • Preheat the oven to 425˚ F. Line a baking sheet with parchment paper; set aside. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain. Reserve the pot.
  • Meanwhile, combine 1/2 cup crushed cheese crackers and 1/4 cup milk in a medium bowl; let sit until slightly softened, about 10 minutes. Add the sausage and 2 tablespoons Parmesan and mix well to combine. Form the sausage mixture into 1-inch meatballs (about 28); arrange on the prepared pan. Bake until golden and cooked through, 6 to 8 minutes.
  • Add the flour and the remaining 2 cups milk to the reserved pot and whisk until smooth. Bring to a simmer over medium-high heat and cook, whisking, until slightly thickened, 8 to 10 minutes. Remove from the heat, add the cheddar and processed cheese and stir until smooth. Stir in 3/4 teaspoon salt and the mustard.
  • Add the pasta and 1/4 cup of the reserved cooking water to the cheese sauce and stir to coat. Add the meatballs and stir to coat; thin with the remaining 1/4 cup cooking water, 1 tablespoon at a time, if needed.
  • Combine the remaining 1/2 cup crushed cheese crackers and 1 tablespoon Parmesan in a small bowl. Divide the mac and cheese among bowls and sprinkle with the cracker mixture.

1 lb frozen cooked italian meatballs
2 (7 1/4 ounce) boxes macaroni & cheese dinner mix (I use Kraft)
1 1/2-2 cups milk
8 ounces sour cream
2 medium tomatoes, thinly sliced
2 -3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 350°.
  • Place meatballs on a foil lined baking sheet and bake 15-20 minutes or according to package directions.
  • Cook macaroni according to package directions, drain.
  • Add milk, cheese sauce packets and sour cream, stir to combine.
  • Place meatballs in the bottom of an oven proof casserole, top with macaroni, cover with tomato slices sprinkled with parmesan.
  • Bake uncovered 25-30 minutes.

Cheddar and cream cheese add a sharp and slightly tangy flavor to the rich sauce which coats perfectly cooked pasta. It's a great base recipe that can be tweaked to your taste by switching up the cheeses or adding some cooked veggies. Serve as a meatless main course with a green salad or as a side dish with roasted or grilled meats.

1 (16 ounce) package elbow macaroni
4 teaspoons kosher salt, divided
2 (8 ounce) packages sharp Cheddar cheese
6 tablespoons butter
⅓ cup all-purpose flour
¼ teaspoon ground mustard
3 ½ cups whole milk, or more to taste
3 ounces cream cheese, softened
½ teaspoon ground black pepper
⅛ teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of water to a boil. Add macaroni and 2 ½ teaspoons salt and cook, stirring frequently, for 5 to 6 minutes. Drain and set aside.
  • Shred Cheddar cheese by hand or in a food processor; set aside.
  • Melt butter in a large saucepan over medium heat. Whisk in flour and cook, whisking constantly, until smooth, 3 to 4 minutes. Whisk in mustard powder, then 3 ½ cups milk. Whisk occasionally until mixture comes to a simmer, then let simmer for 5 minutes.
  • Add cream cheese and cook, stirring often, until thick, creamy, and smooth, about 5 minutes. Add remaining 1 ½ teaspoon salt, pepper, and cayenne.
  • Stir in 2 cups shredded Cheddar. Turn off the heat and let cheese melt. Stir in cooked macaroni. Add up to ¼ cup milk if you feel like the mixture is too thick.
  • Layer ½ of the pasta mixture in the bottom of the prepared baking dish. Top with 1 ½ cups Cheddar. Spread remaining pasta mixture over top and sprinkle with remaining Cheddar.
  • Bake in the preheated oven until golden and bubbly, 25 to 30 minutes.

FOR THE MNIN MEATBALLS
1-1/2 lb lean ground beef
1/2 c dry bread crumbs (plain)
1 large egg
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
2 tsp dried parsley
FOR THE PASTA
2 c milk
1/4 c butter
1/4 c all purpose flour
salt to taste
1 dash(es) white pepper
1 c shredded cheddar cheese
1 lb dry macaroni noodles
EXTRA
3 Tbsp fresh chopped parsely (optional)
1 small roma tomato, seeded and finely diced (optional)

Steps:

  • 1. Line a baking sheet with parchment or aluminum foil. (If using aluminum foil, spray with a bit of cooking spray.)
  • 2. In a large mixing bowl, mix together all meat ball ingredients. Shape into 3/4 inch to 1 inch meat balls. about half the size of an average frozen meatball. Place each meatball evenly on parchment lined pan. Allow plenty of time to make mini meat balls. This step is a bit time consuming.
  • 3. Bake meatballs in a preheated 350 degree oven for 15-20 minutes.
  • 4. Meanwhile, cook macaroni noodles according to package directions. Set aside and keep warm if needed.
  • 5. In a deep skillet, melt butter over medium heat. Add all purpose flour and mix thoroughly with the melted butter for 1 minute.
  • 6. Pour milk into skillet and add cheese, salt & white pepper. Stir until thickened and bubbly about 10-15 minutes. Stir in pasta and cooked meatballs.
  • 7. Plate and garnish with a bit of fresh chopped parsley and/or diced fresh tomato if desired.

1 lb ground beef
1 lb hot italian sausage
4 cloves garlic, minced
½ cup fresh parsley, chopped
½ cup parmesan cheese
1 teaspoon salt
½ teaspoon pepper
1 cup italian bread crumbs
2 eggs
1 cup milk
24 oz marinara sauce
2 cups mozzarella cheese

Steps:

  • In a large mixing bowl, combine ground beef, Italian sausage, garlic, parsley, parmesan cheese, salt, pepper, bread crumbs, eggs, and milk. Mix until everything is fully infused together.
  • Roll into 4-5 ounce (113-142 g) meatballs. For even amounts, use a medium-sized ice cream scooper.
  • Preheat oven to 425°F (220°C).
  • Over medium heat, add 1 tablespoon of olive oil to a pan, and brown the meatballs on both sides for about 2-3 minutes or until you create a nice crispy sear. Cook about half way through. They will finish cooking in the oven.
  • In a casserole dish, spread a few tablespoons of marinara sauce to the bottom of the pan to help prevent sticking. Then place meatballs in the casserole dish and add the remaining jar of marinara sauce. Top with 2 cups of shredded mozzarella cheese.
  • Cover in foil and bake at 425°F (220°C) for 25 minutes or until the cheese is fully melted and the meatballs are fully cooked.
  • Serve and garnish with parsley.
