Steps:
- Slice the green onions, keeping the white and light green parts separate from the dark green.
- Heat the butter in a saucepan over medium-low heat. Add the green onion (white and light green) and minced parsley and cook for 1 minute. Stir in the flour until smooth and bubbly. Cook, stirring, for 2 minutes.
- Gradually add the milk and heavy cream. Cook, stirring, until thickened.
- Stir in diced ham and cooked peas, along with salt and pepper to taste.
- Garnish with the remaining sliced green onions (dark green) and Parmesan cheese, if desired.
- Serve the creamed ham over rice, grits, toast points , or biscuits .

Steps:
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. To make the garlic parmesan cream sauce, melt butter in the skillet skillet over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth, thyme and basil. Cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in half and half and Parmesan until slightly thickened, about 1-2 minutes. If the mixture is too thick, add more half and half as needed; season with salt and pepper, to taste. Stir in spaghetti, ham and peas, and gently toss to combine. Serve immediately, garnished with parsley, if desired.
FETTUCCINE WITH CREAMY HAM SAUCE
To keep the fat low, but the flavor high, evaporated skim milk is used in the sauce. A little swiss cheese boosts the flavor even more. Found in BH&G New Dieter's cookbook.

- Cook fettuccine according to package directions, omitting oil or salt. Drain.
- Meanwhile, in a medium covered saucepan cook broccoli or cauliflower and mushrooms ina small amount of boiling water for 7 to 8 minutes or until vegetables are tender. Drain.
- In the same saucepan stir together evaporated skim milk, cornstarch, dry mustard, salt and pepper.
- Cook and stir over medium heat until thickened and bubbly.
- Add cheese; heat and stir until melted.
- Stir in ham and cooked vegetables; heat through.
- Pour over hot pasta.

- In a medium bowl, whisk together the sugar, mustard powder and flour. Mix in egg yolks until smooth. Heat half and half in the top half of a double boiler, or in a metal bowl over a pan of simmering water until just short of boiling. Stir in the egg yolk and sugar mixture, and then stir in the vinegar. Continue to stir over simmering water until thickened, about 5 minutes.

CREAMY HAM SAUCE
This creamy ham sauce I came by when I was flipping through my "Recipes with Pasta" mini cookbook by Louis Adams. It can be for pasta but I think you could give it more uses. My mom makes one very similar to this one but we haven't tried this one yet. When I make it...I would probably add more taste to it...like onion, garlic, etc. but you can make it however you desire. It's very versatile and you can play with the ingredients a bit. Give it your touch! I will update it when I make it!

- Cut the ham in small cubes and finely cut the sage leaves. Mix sage with ham cubes.
- In a skillet, heat the butter and add in the ham and sage leaves.
- Then, add the cream to the ham/sage skillet and let it cook a bit.
- Add the grated cheese and season with salt, pepper, and nutmeg.
- Cook a bit more and serve hot with whatever you wish (pasta, chicken, etc.).
- Note: you can add bacon if you wish. Remember, give it your "special" touch!

- Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
- Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
- Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.
