This is a wonderful breakfast for those following the Core program with Weight Watchers. I found the recipe on the Weight Watchers message board, I do not remember who posted it, but THANK YOU!!

Steps:

  • Combine first 3 ingredients in a blender container; puree until smooth.
  • Layer cheese mixture with fresh fruit.
  • Top with crumbled Shredded Wheat Cereal if desired.

Need an impressive dessert for a dozen? These fruit and pudding parfaits boast angel food cake, whipped topping, plus a few unexpected ingredients.

3 Tbsp. orange juice
1/4 tsp. almond extract
1 pkg. (10 oz.) prepared angel food cake, cut into 1-inch cubes
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2-1/2 cups cold milk
1-1/2 cups thawed COOL WHIP Whipped Topping, divided
2 pkg. (12 oz. each) frozen unsweetened mixed berries (blueberries, raspberries, sliced strawberries), thawed, well drained

Steps:

  • Mix juice and extract until blended. Drizzle over cake cubes in large bowl; toss to evenly coat.
  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in 1 cup COOL WHIP.
  • Place half the cake cubes in 12 dessert dishes; top with layers of half each of the berries and pudding mixture. Repeat layers.
  • Refrigerate 2 hours. Top with remaining COOL WHIP just before serving.

Had some leftover barley and a sweet craving and this was the result. The taste is akin to a cold rice pudding and just as creamy and satifying. More a concept than a recipe, I don't imagine this will be of interest except to others doing the WW Core program. Feel free to improvise to suit your own tastes. Sweetness can also be adjusted to make this a suitable breakfast.

1 cup cooked barley (not hot)
1/2-1 cup nonfat plain yogurt
2 -4 teaspoons Splenda Sugar Blend for Baking or 2 -4 teaspoons Equal sugar substitute
1/4 teaspoon vanilla extract
cinnamon (optional to taste)
1/2 cup strawberry, halved or quartered
1/4 cup blueberries

Steps:

  • In a small bowl, mix together the yogurt, sweetener and vanilla. Stir in the barley. Add additional yogurt if you want a creamier consistency. Adjust sweetner to taste as well.
  • Mix in the berries (or whatever you have on hand).
  • Divide into dessert bowls and serve.

1 cup heavy whipping cream
3 tablespoon sugar
1 teaspoon vanilla extract
Dash salt
1 cup sour cream
1 can (21 ounces) cherry, strawberry, raspberry or blueberry pie filling, divided

Steps:

  • In a bowl, whip cream until soft peaks form. Gradually add sugar, vanilla an salt; beat until stiff peaks form. Fold in sour cream. Set aside six cherries from pie filling. , Spoon half of the remaining pie filling into parfait glasses; top with half of the cream mixture. Repeat layers. Top with reserved cherries.

This is my FAVORITE dessert! Once you try it you;ll want it ALL the time! And it's super easy and fun to make! And with only 170 calories or so, you can have it whenever! Yummy!

1/2 cup prepared sugar-free pudding, flavor of choice
1/2 cup mixed berry
1/4 banana (Sliced)
1/4 cup whipped cream

Steps:

  • Put a small spool of pudding in the bottom of your parfait glass.
  • Then add a layer of bananas.
  • On top of that put a layer of berries.
  • Then a layer of pudding.
  • Than a layer of whipped cream.
  • Continue this prosses as desired.

Great for break, lunch or as a dessert. I really like it with the White Chocolate Cheesecake or Amaretto Cheesecake yogurt, but any flavor will do. There seems to be some questions as to how I arrived at this being 1 pt when others are saying 4 pts. According to the online WW Point Tracker, which is what I track with: 1/2 cup Fiber One cereal = 0 pts; 6 ounces Weight Watcher's 1 point yogurt = 1 pt; 1/4 cup blueberries = 0 pts; 1/2 cup strawberries = 0 pts. Remember, Zaar's nutritional information facts are based on generic "low fat yogurt". I highly recommend you track each item for yourself in your point tracker instead. Hope that helps!

2 cups skim milk
1/8 ounce mint leaf
1 large banana
1 cup strawberry
1/3 cup water
1 ounce sugar-free fat free instant banana cream pudding mix
1/4 cup whole wheat couscous

Steps:

  • Bring water to a boil in a microwave-safe bowl in microwave.
  • Carefully remove from microwave and stir in couscous.
  • Cover with plastic wrap and let stand 5 minutes until couscous is tender.
  • Meanwhile, prepare pudding according to package directions using fat-free milk.
  • Stir in couscous (it is okay if couscous is still warm).
  • Let stand 5 minutes until pudding is set.
  • To make parfaits, layer about 2 tablespoons of pudding, then 2 tablespoons of bananas, 2 tablespoons of pudding, then 2 tablespoons of strawberries in each of 4 tall parfait or other tall thin glasses. Repeat layers once.
  • Garnish with mint sprigs if desired.
  • Serve immediately.
  • Yields 1 parfait per serving.
