PEACHES 'N CREAM ICEBOX PIE
Lots of peachy flavor in this easy no-bake icebox pie! Best made with fresh peaches but other fresh, frozen or canned fruit is good too. Pie may be refrigerated for at least three hours and then served--but it's firmer and easier to slice if made ahead and frozen, then defrosted for 10 to 15 minutes prior to slicing.

Steps:
- In medium mixing bowl, beat cream cheese until smooth.
- Add condensed milk and blend well.
- Add lemon juice and the vanilla extract. Blend well to combine.
- Pour into premade pie shell.
- Cover and refrigerate pie for at least three hours, or freeze.
- (Note: The pie will slice best if made ahead then frozen overnight or until serving time. Pie may be frozen with or without the peach topping. Defrost for 10 to 15 minutes prior to slicing).
- Peach Topping:.
- In a medium bowl, stir the sliced peaches with marmalade and cinnamon. Top pie with the peach mixture.
PUMPKIN ICEBOX PIE WITH SNICKERDOODLE CRUST
A cinnamon-sugar coated snickerdoodle cookie dough is pressed into a pie plate, making a fun and easy crust for this dreamy, creamy pumpkin icebox pie.

- Make the crust:
- Preheat oven to 375°F. Butter pie pan.
- Whisk cinnamon and 1 Tbsp. sugar in a large bowl. Whisk flour, baking soda, and salt in a medium bowl.
- Beat 4 Tbsp. butter and remaining 1/2 cup sugar in the bowl of a stand mixer fitted with the paddle attachment on medium-high speed until pale and fluffy, about 3 minutes. Add egg yolk and vanilla and beat until just combined. Reduce speed to low and gradually add flour mixture; beat until just combined.
- Transfer dough to a work surface, flatten into a disc, then press into cinnamon sugar to coat both sides. Transfer to prepared pan and press evenly into bottom and up sides with a flat measuring cup. Poke holes all over the bottom with a fork, then freeze 15 minutes.
- Bake crust until lightly golden brown, 10-12 minutes. Let cool completely.
- Make the filling:
- Beat cream cheese and pumpkin purée in the bowl of stand mixer fitted with the paddle attachment on high speed until smooth, about 3 minutes. Add maple syrup, ginger, nutmeg, salt, and 1/2 tsp. cinnamon and continue to beat until streak-free.
- Meanwhile, cook brandy, gelatin, and 1/4 cup water in a small saucepan over low heat, stirring constantly, until dissolved. Stir into pumpkin mixture.
- Using an electric mixer on high speed, beat 1/2 cup cream in a large bowl until stiff peaks form, then fold into pumpkin mixture. Pour filling into crust and smooth surface. Chill at least 6 hours or up to overnight.
- Before serving, beat remaining 1 cup cream in a large bowl with electric mixer on high speed until soft peaks form. Top pie with whipped cream and sprinkle with cinnamon.
- Do Ahead
- Crust can be made up to six hours before filling. Filled pie can be stored in the refrigerator for one day before serving.

- In your food processor, combine the graham crackers, sugar, and butter and process until well-combined. It should resemble wet sand. Pour the crust mixture into a pie plate, pressing it down to ensure evenness and sturdiness. Place in the fridge (icebox!) while you whip up the filling.
- Add your toasted pecans to your food processor (no need to clean it out) and process until they transform into a smooth pecan butter – like peanut butter; about 3 to 4 minutes. Transfer to a large mixing bowl and add the condensed milk, cinnamon, and vanilla bean paste, and using an electric mixer (or you can do this with your stand mixer), whip until evenly mixed.
- Add the soft cream cheese and whip again until nice and smooth. In a second large bowl, whip 1 pint of the heavy cream with an electric mixer until stiff peaks form; about 3 to 4 minutes. Fold the cream, a little at a time (I do it in thirds) into the pecan butter mixture until nicely incorporated.
- Pile the filling into the chilled crust and smooth the top. Top your pie with the glazed pecans and, if you like, you can whip the extra 1 cup of heavy cream (stiff peaks again) and top your pie with that, as well (optional). Redi-whip also works here, tbh.
