Provided by Nagi

Categories     Curry     Mains

Number Of Ingredients 17

1 batch homemade Paneer ((Indian fresh cheese; recipe linked below))
30g / 2 tbsp ghee or unsalted butter ((for pan frying, Note 2))
30g/2 tbsp ghee or unsalted butter ((Note 2))
1 1/2 onions (, finely chopped (brown or yellow))
1 tsp fenugreek seeds (whole) ((Note 3))
1 tsp ground cumin
1 tsp ground coriander
3/4 tsp salt (, kosher/cooking salt (if using table salt, reduce by 1/4 tsp))
1/4 tsp black pepper
2 garlic cloves (, finely chopped)
2 tsp ginger (, finely grated (20g))
2 tomatoes (, peeled, seeded and diced (Note 4))
1 green chilli (, finely sliced (cayenne, Note 5))
700g/ 1.4lb fresh spinach leaves (English spinach) (, thoroughly washed and roughly chopped (~9 cups very tightly packed) (Note 6))
1/4 cup water
1/3 cup + 1 tbsp cream ((pure, heavy or thickened))
1 tbsp lemon juice

Steps:

  • Saute onion & spices: Melt butter in a large pot over medium heat. Add onion, fenugreek, cumin, coriander, salt and pepper. Cook for 3 minutes until onion is softened but not golden.
  • Add garlic and ginger, cook for 2 minutes.
  • Add the tomato and chilli, cook for 3 minutes on a medium heat.
  • Add spinach: Add about 1/3 of the spinach - or as much as you can handle in the pot (!) - and stir until wilted. Then add more spinach along with the water, cook again until wilted. Repeat until all the spinach is wilted.
  • Cook 10 minutes: Cook, stirring every now and then, for 10 minutes still on a medium heat.
  • Cream & lemon: Add the cream and lemon juice. Cook, stirring gently, for 3 minutes.
  • Puree half spinach: Remove half the spinach into a tall container and blend it to a puree using a stick blender. Pour pureed spinach back into the pot, and stir to combine.
  • Add Pan Fried Paneer: Gently stir in golden pan-fried paneer (see below). Stir gently to mix through.
  • Serve over basmati rice with fluffy, chewy homemade naan on the side!

"CREAMY" SPINACH CURRY

This recipe recalls the popular Indian dish saag paneer. Its use of tofu instead of paneer, an Indian cheese, makes it lighter and more convenient.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Vegetarian Recipes

Time 45m

Number Of Ingredients 10

2 tablespoons safflower oil
1 large onion, chopped
4 garlic cloves, sliced
1 1/2 teaspoons garam masala
14 1/2 ounces vegetable broth
6 bunches flat-leaf spinach (about 3 pounds), trimmed, washed, and chopped
Coarse salt and ground pepper
1 package (12 1/2 ounces) extra-firm tofu, drained and cut into small cubes
1/2 cup whole-milk Greek yogurt
Cooked brown rice, for serving

Steps:

  • In a Dutch oven or large pot, heat oil over medium heat. Add onion and garlic; cook, stirring occasionally, until onion is tender, 5 to 7 minutes. Add garam masala; cook, stirring, until fragrant, about 1 minute.
  • Add broth; bring to a boil. In batches, fill skillet with spinach; cook until wilted, adding more spinach as room becomes available, 2 to 3 minutes; season generously with salt and pepper.
  • Reduce heat to medium-low; simmer spinach until soft and liquid is mostly evaporated, about 30 minutes. Remove from heat and gently stir in tofu and yogurt; serve over rice.

CURRIED SPINACH SOUP

Curried Spinach Soup image

I absolutely LOVE this soup and make it all the time. I've adapted the recipe to be more healthy by using olive oil instead of butter and fat-free sour cream. Serve topped with croutons.

Provided by NATDTAT

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Vegetable Soup Recipes     Spinach Soup Recipes

Time 35m

Yield 8

Number Of Ingredients 9

1 large potato - peeled and cubed
6 tablespoons olive oil
½ cup chopped green onions
12 cups spinach - rinsed, stemmed, and dried
⅓ cup all-purpose flour
2 teaspoons curry powder
4 cups chicken broth
1 tablespoon lemon juice
1 (8 ounce) carton nonfat sour cream

Steps:

  • Place the potato in a saucepan with enough water to cover. Bring to a boil, and cook until tender. Drain, and set aside.
  • Heat 2 tablespoons of olive oil in a large saucepan or soup pot. Add the green onions, and cook until tender. Stir in the cooked potatoes, then gradually mix in the spinach, stirring after each addition until spinach is limp. Transfer the mixture to a food processor or blender, and puree until smooth.
  • Heat the remaining olive oil in the same pan, and whisk in the flour and curry powder. Gradually whisk in broth so that no lumps form. Return the spinach mixture to the pan, stirring to blend, along with the lemon juice. Bring to a boil over medium heat, stirring constantly until thickened.
  • Place sour cream in a medium bowl. Ladle about 1 cup of the hot soup into the sour cream, and mix until well blended. Stir this back into the pot of soup. Heat through, but do not allow to boil. Serve immediately.

CURRIED SPINACH AND TOFU

Curried Spinach and Tofu image

SMART SUBSTITUTIONS This recipe is inspired by saag paneer, an Indian dish traditionally made with soft, fresh cheese; here, the cheese is replaced with tofu, which is lower in fat. Reduced-fat sour cream, instead of coconut milk, thickens the curry sauce.

Yield serves 4

Number Of Ingredients 11

2 tablespoons vegetable oil, such as safflower
1 medium onion, minced
4 garlic cloves, minced
Coarse salt and ground pepper
1 tablespoon curry powder, preferably Madras
1/2 teaspoon ground ginger
2 packages (10 ounces each) frozen chopped spinach, cut into pieces (do not thaw)
1 1/2 cups water
3/4 cup reduced-fat sour cream
2 packages (12.5 ounces each) extra-firm silken tofu, drained and cut into 1/2-inch cubes
Cooked rice, preferably basmati, for serving (optional)

Steps:

  • Heat oil in a large skillet over medium-high. Add onion and garlic, and season with salt and pepper. Cook, stirring occasionally, until onion begins to brown, 5 to 7 minutes. Add curry powder and ginger; cook, stirring, until fragrant, about 1 minute.
  • Add spinach and the water; bring to a boil, breaking up spinach with a spoon. Reduce heat to medium; simmer, stirring occasionally, until almost all liquid has evaporated, 10 to 12 minutes.
  • Stir in sour cream and tofu; cook just to heat through, 3 to 5 minutes (do not boil). Serve with rice, if desired.
  • Tofu is sold in two types of packaging in grocery stores: refrigerated and shelf stable. Shelf-stable tofu can be stored at room temperature until opened, up to about 1 year (check the label for the use-by date); look for it in the Asian-food section.
