CROCK POT CHEESY BROCCOLI CHICKEN AND RICE

Steps:
- To a slow cooker, add rice, onion, garlic, and dried thyme. Pour chicken broth over rice.
- Season chicken all over with onion powder and salt. Then rub both sides with Dijon mustard. Place in the slow cooker on top of rice.
- Cover and cook on HIGH for 2 hours or on LOW for 5-6 hours.
- Uncover the slow cooker and transfer chicken to a cutting board. Once cool enough to handle, chop chicken into small pieces.
- Steam broccoli in the microwave and then drain. Add steamed broccoli to the slow cooker and stir to combine. (see notes)
- Add sour cream and chopped chicken to the slow cooker and stir to combine. Test rice for doneness - add up to 1 cup more of broth as needed if rice is now fully cooked yet.
- Sprinkle cheddar cheese all over the top of the chicken and rice mixture.
- Cover the slow cooker and cook on HIGH for another 30 minutes, or until the cheese is melted and the rice is soft. Serve warm with chopped parsley on top for garnish, if desired.

- Place soups, chicken broth, salt, Cajun and garlic seasoning into a crock pot over low heat. Whisk until smooth. Place chicken in, pressing to the bottom. Cover lid and cook on low for 6 hours or on high for 3 hours.
- When chicken is cooked, use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli.
- Serve over steamed rice and sprinkle with cheese.

Steps:
- Heat olive oil in a pan, and add rice until it begins to crackle, but not brown. This makes the rice dense, and helps it keep its shape while cooking.
- Whisk together the soups, water, and seasonings.
- Combine all ingredients (except broccoli) in crockpot, and cook on low 4-6 hours.
- During last 30-45 minutes, add broccoli if desired.

- In a small bowl or large liquid measuring cup, stir together the sauce ingredients: water, soy sauce, honey, rice vinegar, cornstarch, garlic, ginger, and red pepper flakes. Pour a thin layer into the bottom of a 6-quart or larger slow cooker (about one-third of the sauce). Arrange the chicken breasts on top. Pour on the remaining sauce.
- In a small bowl, stir together the 2 tablespoons cornstarch with 2 tablespoons water to create a slurry, then add to the slow cooker, pouring into the liquid around the chicken.
