1 1/2 cups frozen hash-brown potatoes
1 1/2 cups milk
5 hot dogs, sliced

Steps:

  • In medium saucepan, combine all ingredients except crackers; mix well. Bring to a boil over medium-high heat. Reduce heat to medium-low; cook 2 to 3 minutes or until potatoes are tender, stirring occasionally.
  • To serve, ladle soup into individual bowls. Top each with crackers.

2 cups frozen cubed hash brown potatoes, thawed
1 package (10 ounces) frozen mixed vegetables, thawed and drained
1 cup water
1/4 cup chopped onion
3 teaspoons chicken bouillon granules
3 teaspoons minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
6 hot dogs, sliced
3 cups milk
1/4 cup all-purpose flour
2 tablespoons butter

Steps:

  • In a large saucepan, combine the first eight ingredients. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Stir in hot dog slices and 2-1/2 cups milk. Combine flour and remaining milk until smooth. Stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in butter until melted.

2 small potatoes
6 slices bacon
1 medium onion, chopped
1 stalk celery, chopped
1/4 cup flour
4 cups whole milk
1 (15 ounce) can creamed corn
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • Peel and dice potatoes into small pieces (should equal 1 c); cook until just tender; set aside.
  • Fry bacon until crisp; set aside to drain on paper towel; when cool, crumble bacon into small pieces.
  • Discard all but 3 Tbsp bacon fat; saute onion and celery in bacon fat until soft.
  • Sprinkle flour over onion and celery; cook, stirring constantly, for one minute; gradually stir in milk; bring to boiling over medium heat, stirring occasionally.
  • Stir in corn, potatoes, bacon, and seasonings; serve hot.

1 tablespoon butter
1 onion, diced finely
1 leek, cleaned and sliced thinly
1 large potato, diced finely
1 red pepper, diced

2 (6 1/2 ounce) cans baby clams, with juice
2 (15 1/4 ounce) cans creamed corn
1 (15 1/4 ounce) can whole corn (or grilled fresh corn on the cob kernels removed is really good!)
1 (8 ounce) jar clam broth
2 cups milk
1 cup light cream
salt and pepper
Old Bay Seasoning

Steps:

  • Heat oil and butter, sauté onion, leeks, garlic, celery, potato and peppers till translucent.
  • Add canned corns juice from canned clams and jar clam juice.
  • Simmer 15 minutes.
  • Add milk, cream, and simmer 5 more minutes.
  • Add clams season to your taste with salt, pepper, and Old Bay seasoning.

This really is old fashioned! It comes from "The Culinary Arts Institute Encyclopedia of Cooking and Homemaking" which was published in 1940. This wonderful book has been passed down through 4 generations of women in my family. Proof that some of the best stuff is the oldest and simplest.

2 cups diced potatoes
1 tablespoon butter
1/4 cup onion, diced

1 tablespoon water

Steps:

  • Combine, in a large pot,all ingredients except milk and flour/water.

1/2 cup bacon, save 2 tbsp bacon drippings. (can be substituted for thickly cut deli ham heated in a pan with 2 tbsp Crisco.)
2 -3 medium potatoes, peeled, chopped
1/2 small yellow onion, chopped (Most of the time, 1/4 of the small onion works for me!)
2 cups chicken stock
3 cups cream-style corn
2 teaspoons salt
1 cup half-and-half
1 cup milk (I use the milk to add a bit more looseness to the chowder. It makes it a dreamy kind of creamy)
salt and black pepper

Steps:

  • Place the bacon or ham in a large pot over medium heat, cook until bacon is crisp or ham is heated through and Crisco has melted. Drain and crumble, bacon, reserving about 2 tablespoons drippings in the pot.
  • Add potatoes and onion to the pot with the crumbled bacon or ham and drippings. Cook together stirring vegetables constantly for about 5 minutes. Add a pinch of salt and pepper to flavor the potatoes. Pour in the stock, stir in the corn. Season with salt and pepper. Bring to a boil, reduce heat to low, and cover. Simmer 10-20 minutes, stirring fairly frequently, until potatoes are tender.
  • Turn off heat to the stock and let cool a few minutes. In a small saucepan mix and heat the half-and-half/milk mixture, stirring constantly until it bubbles slightly. Remove from heat BEFORE it boils, slowly pour the heated milk mixture into the very warm stock, be careful not to splash the hot liquid!
  • Use a ladle to dish into bowls, season with salt and pepper to your personal taste, and enjoy!

1 teaspoon prepared yellow mustard
