1/2 cup (125ml) boiled hot water
1 packet (1 tbsp) unflavored gelatin (or agar-agar, see notes*)
1/2 cup (100g) granulated sugar
pinch of salt
1 cup (250ml) coconut milk, evaporated milk, half and half (10% M.F.), or table cream (18% M.F.) see notes below**
1 cup (250ml) mango puree, see notes below***
some diced mangoes and shredded coconut to garnish

Steps:

  • In a medium bowl, whisk together the gelatin and boiled hot water until no lumps remain.
  • Whisk in the sugar and salt until dissolved.
  • Stir in the coconut milk or cream, then mango puree until mixture is smooth.
  • Pour into 4 ramekins or small bowls. Cover and chill for a minimum of 2 hours before serving.

50 vanilla wafers, finely crushed
2 Tbsp. sugar
1/4 cup butter, melted
1 can (11.3 fl. oz.) mango nectar
2 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin
1 can (5 oz.) evaporated milk
1 mango, peeled, chopped
1-1/2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Heat oven to 350ºF.
  • Combine wafer crumbs, sugar and butter; press onto bottom of 8-inch square pan. Bake 10 min. or until lightly browned; cool completely.
  • Bring nectar to boil in saucepan. Add to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Beat with mixer on high speed 5 min. or until frothy and opaque.
  • Blend milk and mangos in blender until smooth; whisk into gelatin mixture. Stir in 1 cup COOL WHIP; pour over crust. Refrigerate 2 hours or until firm. Serve topped with remaining COOL WHIP.

2 cups all-purpose flour, sifted
½ cup confectioners' sugar
¾ cup butter
1 (8 ounce) package cream cheese, softened
½ cup white sugar
1 teaspoon vanilla extract
¾ (12 ounce) container whipped topping (such as Cool Whip®)
1 cup cold water
2 envelopes unflavored gelatin
1 cup boiling water
½ cup white sugar, or to taste
¼ teaspoon salt
¼ cup lemon juice
5 cups diced mango

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flour and confectioners' sugar together in a bowl. Cut butter into flour mixture using a pastry blender or 2 knives until mixture resembles coarse crumbs; press into a 9x13-inch baking dish.
  • Bake in the preheated oven until crust is lightly browned, 20 to 25 minutes. Remove from oven and cool completely.
  • Beat cream cheese, 1/2 cup white sugar, and vanilla extract together in a bowl using an electric mixer until smooth and creamy. Fold whipped topping into cream cheese mixture and pour over crust. Refrigerate mixture until cream cheese filling is chilled, about 30 minutes.
  • Pour cold water into a bowl and sprinkle with gelatin; stir well. Pour hot water over gelatin mixture and stir until gelatin is dissolved. Stir 1/2 cup sugar and salt into gelatin mixture until sugar is dissolved; add lemon juice and cool to room temperature. Fold mango into gelatin mixture and refrigerate until gelatin begins to set, 15 to 20 minutes.
  • Pour mango gelatin over cream cheese filling and refrigerate until completely set, about 1 hour.

1 pkg. (8-serving size) JELL-O Mango Flavor Gelatin
1-1/2 cups cold mango nectar
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened

Steps:

  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in cold nectar. Remove 1-1/2 cups of the gelatin; set aside for later use. (Do not refrigerate.) Pour remaining gelatin into 8 individual dessert dishes. Refrigerate 1 hour or until set but not firm. (Gelatin should stick to finger when touched.)
  • Beat cream cheese in medium bowl until creamy. Gradually add reserved 1-1/2 cups gelatin, beating until well blended. Spoon over gelatin in dishes.
  • Refrigerate 2 hours or until firm. Store leftover desserts in refrigerator.

50 g digestive plain sweet biscuit crumbs
50 g Oreo cookie crumbs
40 g melted butter
200 g cream cheese
1 tablespoon rum
1 tablespoon lemon juice
55 g sugar
200 g mango puree
1 tablespoon gelatin
3 tablespoons boiling water
200 ml whipping cream (whipped)
2 tablespoons icing sugar
1 mango (cubed)
100 g mango puree
2 teaspoons gelatin
3 tablespoons boiling water

Steps:

  • Toss cake base ingredients into melted butter and press firmly on to base of cake pan. Chill in the fridge for use later.
  • Whip whipping cream with 2 tbsp icing sugar till about 70% stiff or mousse state, keep chilled.
  • Dissolve gelatine powder in 3 tbsp boiling water. Keep warm but not hot for use later.
  • Cream cheese, sugar, lemon juice and rum together till smooth and creamy.
  • Add the warm gelatin solution to mango puree and blend well.
  • Stir mango mixture into cheese mixture and combine till well mixed. Blend in the whipped cream. Stir in the cube mango pieces (optional).
  • Pour cheese mixture onto cake base and chill for at least an hour.
  • Dissolve gelatin powder with 2 tbsp boiling water and stir this into mango puree. Pour topping gently onto chilled cheesecake. Chill for at least 3 hours before serving.
  • Notes: To obtain a smooth mirror like mango puree topping, please strain the mango puree mixture.

Steps:

  • Combine jelly crystals and boiling water.

2-3/4 cups boiling water, divided
4 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin, divided
1-1/2 cups BREAKSTONE'S or KNUDSEN Sour Cream, divided
1 pkg. KNOX Unflavored Gelatine
1/4 cup cold water
1 cup milk
1/2 cup sugar
1 tsp. vanilla
2 cups orange sherbet

Steps:

  • Add 3/4 cup boiling water to 1 pkg. orange gelatin mix in medium bowl; stir 2 min. until completely dissolved. Refrigerate 10 min. or until cooled. Whisk in 1/2 cup sour cream. Pour into 8-cup mold sprayed with cooking spray. Refrigerate 30 min. or until thickened but not set.
  • Stir unflavored gelatine into 1/4 cup cold water; let stand 5 min. or until gelatine is softened. Meanwhile, bring milk just to simmer in medium saucepan on medium heat. Add sugar and unflavored gelatine; cook and stir until sugar is dissolved. Remove from heat; cool 5 min. Add remaining sour cream and vanilla; stir with whisk until well blended. Spoon over orange layer in mold. Refrigerate 30 min. or until sour cream layer is set but not firm.
  • Add remaining boiling water to remaining gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in sherbet until melted. Carefully spoon over sour cream layer. Refrigerate 4 hours or until firm.

6 oz Orange Jello Mix
3 ounce instant vanilla pudding
11 ounce can Mandarin oranges, drained
1/2 of a 20 ounce can of Pineapple chunks, drained
One 8 ounce container cool whip

Steps:

  • Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

1 Tbsp. fresh lemon juice
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened

Steps:

  • Drain oranges, reserving 3/4 cup juice.
  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in reserved orange juice and lemon juice; pour 1-1/4 cups into 8x4-inch loaf pan sprayed with cooking spray. Refrigerate 1 hour or until gelatin is set but not firm.
