Why limit yourself to soups and salads when you're cooking for two? This chicken Parmesan dish proves you can have an elegant meal with a little planning.

3 reduced-fat round buttery crackers, finely crushed (about 2 Tbsp.)
2 Tbsp. KRAFT Grated Parmesan Cheese, divided
2 small boneless skinless chicken breasts (1/2 lb.)
1 can (14 oz.) fat-free reduced-sodium chicken broth, divided
1/4 cup water
1/2 cup orzo pasta, uncooked
1 tsp. oil
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
1 cup frozen mixed vegetables (corn, carrots, peas and green beans), thawed

Steps:

  • Mix cracker crumbs and 1 Tbsp. Parmesan on small plate. Rinse chicken with cold water; dip in crumb mixture, turning to evenly coat both sides of each breast. Press crumbs gently into chicken to secure.
  • Bring 1 cup broth and water to boil in medium saucepan on medium-high heat. Add orzo; simmer on medium-low heat 9 min. or until most of liquid is absorbed and orzo is tender. Meanwhile, heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until done (165ºF). Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.
  • Add Neufchatel and remaining broth to drippings in skillet. Bring just to boil on medium heat, stirring constantly. Simmer 3 min. or until sauce is thickened, stirring frequently. Meanwhile, add vegetables to orzo mixture; simmer 2 min. or until heated through, stirring frequently.
  • Spoon orzo mixture onto 2 serving plates; top with chicken. Stir remaining Parmesan into Neufchatel sauce; spoon over chicken.

This recipe is based off of a Cooking Light recipe, but it is not pan fried at all. You could easily double this recipe, but I cook for two, so this is perfect for us. I serve this with veggies and crescent rolls.

1 tablespoon parmesan cheese, grated (the powdery kind)
2 tablespoons Italian seasoned breadcrumbs
1/8 teaspoon salt
1 large egg, lightly beaten
2 (5 ounce) boneless skinless chicken breasts, pounded to 1/4 inches
3/4 cup spaghetti sauce (tomato-basil is good)
1/2 cup mozzarella cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly spray a pie plate or a foil-lined baking sheet with cooking spray; set aside.
  • Combine Parmesan, breadcrumbs, and salt in a shallow dish (I use a paper plate). Place egg in a separate shallow dish.
  • Dip each side of each chicken breast in egg, then dredge in the breadcrumb mixture. Place on prepared pan.
  • Bake for 18 minutes, flipping once halfway through, until done.
  • Take the chicken out and switch the oven to BROIL.
  • Divide the sauce evenly and pour over each piece of chicken. Sprinkle evenly with the mozzarella cheese.
  • Broil 2 minutes or until the cheese melts.

4 boneless skinless chicken breasts
1/2 cup flour
6 tablespoons butter, - divided (I use unsalted)
16 mushrooms, sliced
1 cup heavy whipping cream
salt and pepper
2/3 cup grated parmesan cheese
paprika

Steps:

  • Melt 3 T. of the butter over low heat (or in the microwave).
  • Coat the chicken in the flour then dip in the butter.
  • Arrange the chicken in a 9x13 baking dish.
  • Melt remaining 3 T. butter in a skillet.
  • Add mushrooms and saute until softened.
  • Spread the mushrooms over the chicken.
  • Pour in the cream.
  • Season with salt and pepper.
  • Top with the parmesan cheese.
  • Chill, covered with plastic wrap, in the refrigerator for about 12 hours.
  • Preheat oven to 400 degrees.
  • Sprinkle paprika over the chicken.
  • Bake, uncovered, 20 to 30 minutes.

1 1/2 cups heavy whipping cream
1/2 cup parmesan cheese
1 (4 ounce) can sliced mushrooms
1/3 cup sliced sun-dried tomato (optional)

Steps:

  • Brown chicken breasts over medium heat in a skillet with a little bit of olive oil, about 2 minutes per side.
  • Add remaining ingredients.
  • Cover and simmer for 15-20 minutes, or until chicken is cooked through.

1/4 teaspoon salt
1 egg (beaten)
1/2 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese
1/4 cup olive oil
2 slices mozzarella cheese
1 (14 ounce) jar pasta sauce

Steps:

  • Preheat Oven to 400 degrees F.
  • Place chicken breasts between 2 sheets of plastic wrap (1 at a time) and pound to 1/2 - 1/4 inch & then salt.
  • In bowl mix Breadcrumbs & 1/4 Cup Parmesan Cheese.
  • In separate bowl beat egg.
  • Heat 1/4 cup of olive oil in a large sauté pan on medium-high heat.
  • Dip chicken breasts 1 at a time in egg & then breadcrumb mix.
  • Place coated chicken breasts in oil and turn heat down to medium.
  • Fry chicken breasts 3-4 minutes per side.
  • Thickly coat bottom of a baking dish (large enough to fit both chicken breasts) with pasta sauce.
  • Place chicken breasts on top of sauce in baking dish.
  • Spread more sauce over top of the chicken, and then place 1 slice over top of each chicken breast.
  • Sprinkle remaining 1/4 Cup of Parmesan cheese over top of everything.
  • Bake for approximately 10-12 minutes (or until mozzarella begins to brown).
  • Perfect served over pasta with remaining sauce!

This comforting and decadently Creamy Parmesan Chicken can be made in just about 30 minutes. For a gourmet looking and tasting meal, this is a must try.

1 cup parmesan cheese (freshly grated)
½ cup breadcrumbs (such as Panko)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
1 teaspoon garlic powder
1 teaspoon smoked paprika
2 large chicken breasts (boneless and skinless cut in half horizontally or 4 smaller breasts)
¼ cup butter (unsalted (4 tablespoons))
3 cloves garlic (minced)
¼ cup fresh parsley (chopped)
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes
½ cup chicken broth (low sodium)
1 cup heavy cream

Steps:

  • Make the coating: In a shallow plate combine the parmesan cheese, breadcrumbs, salt, pepper, garlic powder, and smoked paprika. Dredge the chicken breasts through the cheese mixture and shake off any excess.
  • Cook the chicken: In a large skillet, melt 2 tablespoons of the butter over low heat. Add the chicken breasts and cook until golden on each side and cooked through, about 5 to 6 minutes per side. If you notice the chicken browns too quickly and doesn't cook in the middle, lower the heat and cook slowly. Transfer cooked chicken to a plate.
  • Make the sauce: If there's too much parmesan cheese left in the bottom of the skillet, wipe clean with a paper towel. Add the remaining butter to the skillet and add the garlic, parsley, Italian seasoning and red pepper flakes. Cook for about 30 seconds until the garlic is aromatic. Deglaze the pan with the chicken broth. Stir in the heavy cream. Taste for seasoning and adjust with salt and pepper as necessary.
  • Finish and serve: Return the chicken back to the skillet and simmer for another minute to warm up the chicken. Turn off the heat and spoon some of the sauce over the chicken. Serve immediately with pasta or steamed veggies.
