Recipe video above. For all those days when nothing but a creamy pasta will do! This one is loaded with all the essential food groups - chicken, bacon, cream and parmesan. It's saucier and richer than the classic Alfredo.

6 oz / 180 g fettuccine or other pasta
5 -7 oz / 150 - 200 g bacon (, chopped)
6 oz / 180 g chicken breast (, cut in half horizontally)
1 tbsp (30 g) butter
2 garlic cloves (, minced)
1/2 small onion (, finely chopped (brown, white or yellow))
3/4 cup (185ml) heavy cream / thickened cream
3/4 cup (185ml) pasta cooking water ( (Note 1))
1/2 cup FRESH grated parmesan ((or 1/4 cup store bought grated) (Note 2))
Fresh parsley
Parmesan

Steps:

  • Bring a large pot of salted water to boil. Add pasta and cook for time per packet MINUS 2 minutes (finishes cooking in Sauce).
  • SCOOP OUT a mugful of pasta cooking water, then drain.
  • Meanwhile, cook bacon until golden, drain on paper towels.
  • Season chicken on both sides, cook in bacon fat, 2 minutes each side.
  • Wipe pan - optional, to keep sauce pretty and white, and for a buttery clean tasting sauce rather than very bacony (Note 3).
  • Over medium heat, melt butter. Add garlic and onion, cook for 3 - 4 minutes until onion is light golden and soft.
  • Add cream, about 3/4 cup pasta water and parmesan. Stir, then simmer for 2 minutes until it reduces slightly - you don't need to be exact here. Season with salt & pepper.
  • Add pasta and toss gently in the sauce for about 1 1/2 minutes. The sauce will thicken and coat the pasta, do this step until you get the sauce consistency you want. If your sauce gets too thick, add a splash of pasta water.
  • Toss through bacon and chicken.
  • Serve immediately, garnished with parmesan and parsley!

¼ cup butter
¼ cup all-purpose flour
1 cup turkey stock
½ cup pasta sauce
1 cup water
½ (1 ounce) package dry onion soup mix
1 teaspoon crushed garlic
salt and pepper to taste
⅓ cup shredded Monterey Jack cheese
⅓ cup shredded sharp Cheddar cheese
1 pound cooked turkey breast, cubed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan or deep skillet, melt the butter over low to medium heat; blend in flour. Slowly add turkey stock, pasta sauce, and water. Mix well. Stir in onion soup mix and garlic; season with salt and pepper.
  • Sprinkle in the Monterey Jack, Cheddar cheese and turkey. Stir until the cheese is melted and the meat is heated through. Spoon sauce over pasta and serve.

300 g pasta (I use fusilli, but penne, spaghetti and linguine all work well too)
2 tablespoons olive oil
1 onion (sliced)
150 g mushrooms ((or other vegetables), sliced)
3 cloves garlic
300 g leftover turkey or chicken (shredded (see note))
300 ml double (heavy) cream
Salt and pepper to taste
4 tablespoons fresh parsley (finely chopped (or another herb - fresh sage or basil also work well))
Grated parmesan to serve

Steps:

  • Cook the pasta in boiling salted water according to your preferences or the packet instructions.
  • Meanwhile, put the olive oil and onions in a pan and cover with a lid. Cook over a low heat, stirring occasionally, for about 3 minutes, or until the onions have softened but not coloured.
  • Turn the heat up and add the mushrooms, fry for 3 minutes, stirring frequently, until the mushrooms and onions have browned nicely.
  • Lower the heat again and add the garlic and the turkey and cook for a further 2 minutes. Add the cream, salt and pepper, and cook for a further 5 minutes until the turkey is piping hot all the way through and the sauce has reduced slightly.
  • Meanwhile drain the pasta, reserving a couple of tablespoons of the cooking water.
  • Tip the pasta and cooking water into the sauce and stir to combine. Sprinkle over half the parsley and stir again.
  • Serve garnished with extra parsley and lots of parmesan cheese!

8 ounces wide egg noodles
½ cup frozen green peas
3 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of mushroom soup
⅓ cup milk
¼ cup mozzarella cheese

Steps:

  • In a medium pot cook egg noodles in boiling salted water. When pasta is 3 minutes away from being cooked, add in frozen peas or broccoli. Cook until vegetables and noodles are tender. Drain well.
  • Meanwhile, boil the chicken in a medium saucepan until cooked completely. Drain chicken and cut into bit size pieces.
  • In a large saucepan mix cream of mushroom soup and milk until warm and lumps are dissolved.
  • To the large saucepan add the cooked and chopped chicken, noodles and vegetables. Blend ingredients with the milk and soup mixture. Stir in grated mozzarella cheese until melted.
  • Serve warm.

2 tablespoons butter
1 pound baby Bella mushrooms, thinly sliced
1 ½ jar (22 ounces total) prepared alfredo sauce
1 ½ cups turkey or chicken stock
½ cup ricotta cheese
2 teaspoons EACH: garlic powder AND dried basil
⅛ - ½ teaspoon red pepper flakes
1 cup defrosted peas
2 cups shredded or diced turkey or chicken
1 ½ cup shredded (or diced) white cheddar cheese

Steps:

  • PREP: Position a rack in the center of the oven and preheat the oven to 375ºF. Spray a nonstick 13x9 baking dish with cooking spray; set aside.
  • SAUTE: Heat the butter in a large saucepan and saute the mushrooms over medium-high heat until they brown; about 7-9 minutes. Then, stir in the alfredo sauce, chicken stock, and ricotta cheese. Season with garlic powder, basil, and red pepper flakes. When the sauce is smooth and heated through, stir in the peas and turkey (or chicken.) Then, fold in the prepared egg noodles and stir to combine.
  • BAKE: Add the prepared turkey pasta mixture to the baking dish and sprinkle with cheese. Bake the turkey pasta bake for 15-18 minutes or until the cheese is bubbly and golden brown on top. You could also give it a minute under the broiler at the end to help it along. Sprinkle with freshly chopped parsley on top if desired and serve!

1 shallot, chopped
2 stalks celery, thinly sliced, plus chopped leaves for topping
2 carrots, shredded
1 teaspoon chopped fresh thyme
Freshly ground pepper
1/2 cup dry sherry or white wine
1 1/2 cups heavy cream
Pinch of freshly grated nutmeg
1 1/4 pounds skinless, boneless chicken breasts, cut into thin strips
1 cup grated gruyere cheese (about 4 ounces)
1/4 cup grated parmesan cheese
1/4 cup chopped fresh parsley
12 ounces fresh fettuccine
1 cup sugar snap or snow peas, strings removed and thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, melt the butter in a large skillet over medium-high heat. Add the shallot and cook until slightly softened, about 1 minute. Add the celery, carrots, thyme, 3/4 teaspoon salt and a few grinds of pepper and cook until the vegetables soften, about 2 minutes. Add the sherry and cook until slightly reduced, about 2 minutes. Stir in the heavy cream and nutmeg and bring to a boil. Reduce the heat to medium low and simmer until the sauce thickens slightly, about 5 minutes.

  • Cook pasta until al dente and according to package directions; set aside. Meanwhile, pat chicken dry on both sides with a paper towel. Sprinkle taco seasoning over chicken on both sides. 2 tbsp butter
3 garlic cloves (crushed/minced)

1 tsp lemon juice

500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Steps:

  • Heat a large pan over high heat.
  • Drizzle a few teaspoons of olive oil over the chicken then season with salt and pepper.
  • Brown the chicken in the pan for a few minutes until the chicken is opaque white and starting to turn golden brown. Remove from the pan and set aside.
  • Add the butter and garlic to the pan and allow to cook for 30 seconds.
