I love the flavor of green enchiladas, but sometimes I don't love rolling all the tortillas, lol! Here is a casserole that gives that great, tangy flavor, but in much less time. Garnish with sour cream, if you like. Mexican rice and borracho beans are great sides for this Tex-Mex family meal.

1 cooking spray
1 ½ pounds boneless, skinless chicken thighs, cooked
2 cups shredded Monterey Jack cheese, divided
2 teaspoons chili powder
1 (28 ounce) can tomatillos, drained
2 (4 ounce) cans mild chopped green chile peppers
1 bunch green onions, trimmed and cut into 3-inch lengths
½ cup chopped cilantro
1 jalapeno pepper, seeded and minced
2 cloves garlic, peeled
salt and ground black pepper to taste
1 cup chicken broth
12 corn tortillas

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Chop cooked chicken thighs into small pieces and place in a medium mixing bowl. Stir 1/2 cup Monterey Jack cheese and chili powder into the chicken.
  • Combine tomatillos, chile peppers, green onions, cilantro, jalapeno, and garlic in the bowl of a food processor. Process until pureed, about 3 minutes. Add chicken broth and pulse to mix. Season with salt and pepper.
  • Cut tortillas in half and place directly on the hot oven racks. Heat for 2 to 3 minutes. Carefully remove tortillas and set aside.
  • Place 1 cup of the green sauce on the bottom of the prepared baking dish. Layer 1/2 of the tortillas over the sauce. Add 1/2 of the chicken mixture. Spoon 1/2 of the remaining green sauce over the chicken, then sprinkle on 1/2 of the remaining cheese. Repeat the layers of tortillas, chicken mixture, green sauce, and cheese.
  • Bake in the preheated oven until the cheese is melted and the sauce is bubbly, about 20 minutes.

This casserole is even better the next day, that is if it even makes it overnight! ---you may omit the jalapeno pepper if desired, we like onions so I always use two and lots of fresh garlic, you can increase the green chiles to whatever amount you desire, and use as much shredded cheese and cooked chicken as desired, the amounts listed are only a guideline, this also works well with cooked turkey, prep time does not include cooking the chicken --- this is *very* good!

2 -3 tablespoons butter
1 large onion, chopped
2 -3 tablespoons fresh minced garlic (or to taste)
1 jalapeno pepper, seeded and finely chopped (optional)
1 1/3 cups chicken broth
1 1/4 cups canned green chilies, drained (can use more!)
1 -2 teaspoon cumin
2 (10 ounce) cans cream of chicken soup, undiluted
salt and pepper
24 corn tortillas (you might use a couple less than 24, or use as many as needed)
4 cups cooked chicken (or use cooked turkey)
2 cups cheddar cheese (or to taste) or 2 cups monterey jack and cheddar cheese blend, shredded and divided (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a medium heavy pot or saucepan, heat 2-3 tablespoons butter over medium heat; add in chopped onion, garlic and jalapeno pepper, saute for about 3-4 minutes.
  • Add in the chicken broth, green chiles, cumin and chicken soup, season with salt and pepper; bring to a boil and simmer for about 3 minutes or until heated through and combined; remove from heat.
  • Spread about 1 cup of the soup mixture into the bottom of the prepared baking dish.
  • Arrange 5-6 tortillas over the soup mixture, then top with about 1 cup chicken, then about 1/2 cup shredded cheese (or to taste).
  • Repeat the layers (ENDING with the cheese).
  • Spread the remaining soup mixture over the cheese.
  • Bake uncovered for about 25 minutes or until hot and bubbly.

I was just running out of ideas and looked around my kitchen cupboards and refrigerator. This is what I came up with. I hope you enjoy it!

1 pkg 8 oz of cream cheese, low fat or regular
1 can(s) 28 oz of green chile enchilada sauce
1 can(s) 7 oz of chopped green chiles
1/2 tsp cumin
salt to taste
2 large cooked (boiled) chopped chicken breast, i guess you'd say it was a half of breast each? (or thighs)
20 corn tortillas cut up
1 pkg shredded mexican blend cheese (2 cups)

Steps:

  • 1. Preheat oven to 350 Cut up cream cheese to 1 inch cubes, (better if room temp) add to mixing bowl, add green chili sauce, green chilies, cumin and salt to taste. Mix until the cream cheese has blended in nicely.
  • 2. Add chopped chicken and mix.
  • 3. Spay 13 x 9 baking dish with Pam (or other non stick spray) Cut up tortillas into strips then cut in half again. Line baking dish with some of the tortillas evenly.
  • 4. Then add the rest of the tortillas to the creamy chicken mixture, mix until all the tortillas are coated.
  • 5. Pour into the the baking dish.
  • 6. Spread evenly and top with the cheese.
  • 7. Bake in your 350 degree oven for approx 30 - 40 mins, until bubbly hot! Cool for 10 mins then cut and serve! I think this might taste a little better if you top it with a little sour cream.

Yummy, creamy, fast, and easy! This could easily be doubled or made diet friendly by using low-fat cream cheese and light tortillas. The idea for this came from the back of the green enchilada sauce can, but it had twice as much chicken and enchilada sauce, but the same amount of cream cheese and chilies, also no spices were listed--and was for actual enchiladas--I'm way to lazy to roll up enchiladas 8)

2 boneless skinless chicken breasts, cubed (or ~ 6 chicken tenders)
1 (8 ounce) package cream cheese, cut into cubes
1 (4 ounce) can chopped green chilies
4 flour tortillas (soft taco size)
1 (10 ounce) can green enchilada sauce
8 ounces shredded cheese (I prefer pepper jack)
1 dash pepper
1 dash seasoning salt
1 dash garlic powder

Steps:

  • Heat oven to 400°F.
  • Cook chicken over medium-high heat until cooked through.
  • Add seasonings to chicken while cooking.
  • Add cream cheese and chilies.
  • Cook and stir until blended.
  • Arrange 2 tortillas on the bottom of a greased 8x8-inch pan (I cut the tortillas in half and put the straight edges along the edges of the pan, letting the tortillas over-lap).
  • Sprinkle the tortillas with a small amount of the cheese.
  • Pour the chicken mixture over the tortillas.
  • Sprinkle small amount of cheese over chicken mixture.
  • Arrange remaining tortillas on top.
  • Pour enchilada sauce over top and sprinkle with remaining cheese.
  • Bake for 20 minutes.

Not the most "healthy" recipe, but it's very tasty! Very creamy and rich enchilada chicken casserole. If you prefer the more traditional rolled enchiladas, all you have to do is place the chicken and sauce mix (approx 3 Tbsp) in the center of each corn tortilla, roll, and place in casserole dish with the seam side down...then cover the rolls with remaining sauce and cheese. I was feeling lazy, so I did it casserole style.

1 lb boneless skinless chicken breast
water
1 chicken bouillon cube
1 teaspoon ground cumin
1 teaspoon cumin seed
1 teaspoon garlic powder
1 teaspoon onion powder
16 ounces sour cream
12 ounces canned diced green chiles
1 1/2 cups colby cheese, shredded
1/2 cup onion, diced
3 tablespoons garlic, minced
18 corn tortillas

Steps:

  • Preheat oven to 375 degrees.
  • Place chicken breasts in large soup pan and cover with water. Add cumin, garlic powder, onion powder, and bouillon cube. Boil over med-high heat for 25 minutes or until chicken is done. Remove chicken from pot and place in a plastic bowl. Reserve 2 c of the "broth".
  • Mix 2 c of broth, sour cream, green chiles, onion, garlic, and 1/2 cheese. Bring to a boil stirring continuously. Cook for 10 minutes or until sauce thickens slightly and remove from heat.
  • Shred chicken breasts and add 1 c of the sauce to the chicken. Mix well.
  • Using a soup ladle, spread a small amount of the sauce in a 9x13" casserole dish. Place 6 of the corn tortillas along the bottom of the dish, overlapping slightly. Spoon 1/2 of the chicken mixture over tortillas. Repeat.
  • Pour remaining sauce over top layer of tortillas and sprinkle remaining cheese over the entire dish.
  • Cover with aluminum foil and bake for 45 minutes at 375 degrees. Take casserole out of oven, remove foil, and bake for an additional 5 minutes to brown cheese.
  • Remove from oven and let stand for about 3-5 minutes. Serve and enjoy!

  • Bake at 350°F for 30 minutes or until bubbly.

2-1/2 cups ziti pasta, uncooked
1 can (10.75 oz.) reduced-sodium condensed cream of chicken soup
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
1 can (7 oz.) chopped green chiles, undrained
1/2 tsp. ground cumin
3 cups cooked chopped chicken
1 pkg. (8 oz.) KRAFT Big Slice Colby Jack Cheese Slices
2 Tbsp. chopped fresh cilantro

Steps:

  • Cook pasta as directed on package, omitting salt. Meanwhile, mix soup, sour cream, green chiles and cumin in large bowl until blended.
  • Drain pasta. Add to soup mixture along with the chicken; mix well. Spoon half the pasta mixture into 13x9-inch baking dish sprayed with cooking spray; top with half the cheese slices. Repeat layers.

This is one of my most popular dishes. I am always making a batch for friends and parties, husband's work functions, blah, blah, blah. It is not too spicy and very tasty.

12 corn tortillas
2 cups corn oil
2 (16 ounce) bags Mexican blend cheese
1 whole chicken, cooked
1 tablespoon coarse black pepper
0.5 (1 ounce) package ranch dressing mix (Hidden Valley)
1 (8 ounce) can tomatoes and green chilies
1 (8 ounce) can green enchilada sauce
1 (6 ounce) can green chilies, diced
1 (16 ounce) container sour cream
1 (10 1/2 ounce) can cream of chicken soup

Steps:

  • Get newspaper and line counter with it. Cover newspaper with paper towels. This will protect your counter from the oil mess.
  • Heat oil in medium skillet -(ready when a drop of water in oil "pops" at you).
  • Quickly dip each tortilla in oil. Long enough to coat the tortilla. You only want to soften them, too long in the oil and they will turn crunchy.
  • "Drain" tortillas on paper towels.
  • Line 9x12 glass cooking dishing with six of the tortillas and set aside.
  • In medium sauce pan combine diced green chiles, green chile sauce, soup and sour cream. Stir over medium heat until all the ingredients blend into a smooth, creamy mix.
  • Tun off heat and set aside.
  • Seperate meat from chicken, be careful of bones. NOTE: I usually buy a pre-cooked one from Albertson's.
  • In a large bowl mix tomatoes, chicken, and one bag of chesse.
  • Spread chicken mixture over tortillas in cooking dish.
  • Douse chicken with half of the cream sauce.
  • Cover with remaining six tortillas.
  • cover entire casserole with second bag of cheese.
  • Cook for 15 minutes, or until cheese is melted, at 375.
  • Serve with remaining sauce as a condiment.
