2-3 tablespoons olive oil
1 head of cauliflower, cut into florets
1 medium onion, diced
5 cloves garlic, peeled whole
3 cups vegetable stock (or chicken stock)
1/2 cup half and half cream
1/3 cup of freshly grated Parmesan cheese
salt and pepper, to taste
fresh thyme leaves
Parmesan cheese
cream (drizzle)
olive oil (drizzle)

Steps:

  • Heat olive oil in a large stockpot over medium heat.
  • Add cauliflower, onion, and garlic and sauté until the vegetables have caramelized (roughly 15 minutes).
  • Add stock and reduce the heat to medium-low and simmer for about 20 minutes or until the cauliflower florets are soft and tender.
  • Puree the mixture in a blender until smooth. Add some water to get it going in the blender. Then, pour the soup back into the pot.
  • Stir in the cream and Parmesan cheese and simmer for 1-2 minutes.
  • Season with salt and pepper to taste.
  • Top with optional toppings and serve immediately.

This creamy roasted garlic cauliflower soup is low in fat and carbs but packed with flavour and nutrition. Once the garlic is roasted, it can be ready in about 20 minutes. It's thick, creamy, rich in flavour and perfect for dunking crispy bread in.

2 bulbs of garlic
2 small or 1 large white onion, diced
2 carrots, peeled and chopped
4 cups chopped cauliflower
1/2 tsp thyme
1/2 tsp rosemary
3.5 cups vegetable stock
salt and pepper, to taste

Steps:

  • Preheat oven to 400 degrees.
  • Cut the tops of the bulbs of garlic so each clove is slightly exposed. Place each bulb on a small piece of tinfoil then drizzle 1/4 tsp of olive oil over each bulb. Wrap up in the foil and roast for 35 minutes.
  • Add the onion and carrot to a soup pot with a splash of the vegetable stock and cook until starting to soften, about 5-6 minutes.
  • Add the cauliflower, stock, rosemary and thyme. Squeeze the roasted garlic out of the bulbs and add to the pot.
  • Simmer until the cauliflower and carrots are completely soft and tender, approximately 20-25 minutes.
  • Carefully pour into a blender an mix until smooth and creamy.
  • Season with salt and pepper.

Cauliflower Soup and Garlic and Cheese Sourdough

Coarse salt and coarse black pepper
1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 small heads cauliflower, or 1 large, cut into small bunches of florets
3 ribs celery and leafy tops from the heart of stalk, finely chopped
1 medium onion, chopped
2 tablespoons chopped fresh thyme leaves
2 tablespoons all-purpose flour
1 quart chicken broth
1 cup half-and-half or whole milk
Hot sauce, optional
3 tablespoons chopped fresh parsley leaves or chives, for garnish
1/2 cup grated Parmesan, for passing at the table
3 sandwich size sourdough English muffins (recommended: Thomas' brand) split
3 tablespoons butter
1 garlic clove, minced
Grated cheddar and Parmesan
Paprika

Steps:

  • In a large pot, heat up the olive oil and 2 tablespoons of the butter, over medium heat. Season with salt and pepper. Add the cauliflower florets and stir with a wooden spoon. Add celery, onion and thyme and cook for 3 minutes. Push the vegetables to 1 side of the pot. Melt 1 more tablespoon of butter on empty side of pot and add flour to the butter. Cook for 1 minute, stirring the flour in the butter. Mix in chicken broth and half-and-half. Bring up to a simmer and cook for 15 minutes. Puree soup using an emersion blender, food processor or blender and return to pot. I like to leave it a little chunky. Check seasoning and add a dash of hot sauce, if desired.
  • Garnish soup with hot pepper sauce, chopped parsley or chives and serve with grated cheese to sprinkle on top.
  • Preheat broiler.
  • Toast English muffin halves and then place on a cookie sheet. In a small saucepan, melt the butter with the garlic over low heat. Brush toasted muffins with garlic butter and top with lots of grated cheddar and Parmesan cheeses. Sprinkle a little paprika over toasts, then place under broiler until cheeses are melted and browned. Serve cheesy toasts with soup for dipping.

1 head cauliflower, cut into 2-inch pieces (about 8 cups)
30 cloves garlic, peeled
1/4 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound russet potatoes, peeled and cut into 1/2-inch chunks
2 stalks celery, chopped
1 yellow onion, chopped
1 tablespoon fresh thyme leaves
1 cup dry white wine
One 6-ounce piece Parmesan rind
6 cups low-sodium chicken broth
Freshly grated Parmesan, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cauliflower, garlic and 1/4 cup of olive oil to a rimmed baking sheet. Sprinkle generously with salt and pepper and toss to coat. Roast until the cauliflower is fork tender and lightly charred in places, about 25 minutes.
  • In the meantime, heat a Dutch oven over medium-high heat. Add the remaining 2 tablespoons of olive oil, potatoes, celery, onion and thyme. Sprinkle with a generous pinch of salt and pepper. Cook, stirring often, until the vegetables have slightly softened, about 5 minutes. Add the white wine to deglaze the pan, scraping up any brown bits that have developed at the bottom of the pan. Add the chicken broth, Parmesan rind and roasted cauliflower and garlic. Bring to a boil, then turn the heat down to low and cover. Simmer for 25 minutes, stirring occasionally to prevent the cheese rind from sticking to the bottom of the pan. Remove the cheese rind and discard.
  • In batches, carefully transfer the mixture to a high powered blender. Blend until completely smooth (see Cook's Note).
  • Once all the soup is blended, add it back into the Dutch oven. Season with salt and pepper to taste. Ladle into bowls and garnish with a pinch of pepper and a sprinkle of Parmesan.

1 tsp. oil
9 slices OSCAR MAYER Bacon, cut into 1/2-inch-thick slices
1 small onion, chopped
1 lb. baking potatoes (about 3), peeled, chopped
4 cups small cauliflower florets, chopped
1 qt. (4 cups) fat-free reduced-sodium chicken broth
1 cup milk
1/4 cup KRAFT Grated Parmesan Cheese
1/4 tsp. black pepper

Steps:

  • Heat oven to 375°F.
  • Cut 1/2-inch-thick slice off top of garlic head, exposing tops of all cloves; place, cut side up, on sheet of foil. Drizzle with oil. Wrap garlic head in foil.
  • Bake 40 min. or until garlic is very soft; cool.
  • Meanwhile, cook and stir bacon in Dutch oven or small stockpot until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from pan. Add onions to reserved drippings; cook 5 min. or until crisp-tender, stirring frequently.
  • Squeeze pulp from garlic cloves into Dutch oven. Add all remaining ingredients; mix well. Bring to boil; simmer on medium-low heat 30 min. or until potatoes are tender, stirring occasionally.
  • Blend soup, in small batches, in blender until smooth. Serve topped with bacon.

I love cauliflower and I love garlic so this was a no-brainer for me when I found it in the 12/2004 issue of Sunset magazine. The roast garlic gives this soup a wonderful, mellow flavor. This makes a large amount of soup so it's perfect for a dinner party or holiday meal.

1 head garlic, unpeeled (2 1/2 oz.)
1 tablespoon butter
3 heads cauliflower (about 4 1/2 lbs. total)
2 quarts low-fat chicken broth
1/2 cup whipping cream
1/4 teaspoon ground nutmeg
salt, to taste
fresh ground pepper, to taste
2 tablespoons thinly sliced fresh chives

Steps:

  • With a sharp knife, cut top 1/2 off garlic head (off the pointy part of the head). Set garlic on a sheet of foil and top with butter. Gather sides of foil up and pinch together to form a loose, sealed pouch.
  • Bake garlic in a 400° oven until garlic is soft when pressed, 45 to 50 minutes. Unwrap and let stand until cool enough to handle.
  • Meanwhile, cut cauliflower heads into 1-inch florets, discard leaves and stems. In a 4 to 5-quart pan, combine cauliflower and broth. Cover, bring to a simmer over high heat, then reduce heat and simmer until cauliflower is very tender when pierced, 12 to 15 minutes.
  • Squeeze garlic cloves from papery skins into pan with cauliflower and broth; pour in cream. Working in batches, transfer to a blender and whirl until smooth (I use an immersion blender at this point). Return soup to pan and add the nutmeg and salt and pepper to taste.
  • Set pan over medium-low heat and stir occasionally until hot. Pour into a large bowl or tureen and sprinkle with chives.

I never tell people what is in it, cause it is so much fun listening to all of the creative guesses. Parsnip? Cream? Onion? What exactly makes this soup taste so good? The cashews! Just make sure you puree the nuts really well in a high-speed blender such as a Vitamix in order to achieve the most creamy, airy consistency. This soup stands alone as a fantastic family dinner with a grain ball or a piece of bread on a cold Winter's night. Give this soup an opening night at your kitchen - and let this cauliflower bloom! This soup is so easy, and absolutely phenomenal! Not to be missed.

8 cups of strong vegetable broth
1 garlic, roasted (whole)
2 -3 leeks, the white part only washed and chopped
1 large head cauliflower, chopped
1/4 cup raw cashews
4 tablespoons chives, chopped finely (to garnish)
organic brown rice, quinoa or millet, to serve

Steps:

  • Place the whole head of garlic unpeeled in an oven at 200 C / 400 F for about 30 minutes. Allow to cool slightly.
  • In a large saucepan fry the leek in a little olive oil until soft. (About 3 minutes).
  • Add in the cauliflower and stir for a couple of minutes until well coated.
  • Squeeze in the roasted garlic pulp.
  • Cover with the vegetable broth. Bring to the boil, reduce the heat to a medium flame, and simmer partially covered for about 30 minutes until the cauliflower is soft. I like to stir frequently and mash the cauliflower with the spoon as it cooks to make it easier to blend.
  • Let the mixture cool enough to put batches in the blender, and puree with the cashews until smooth and creamy.
  • Transfer to a clean pot and heat on low to serve. Season with Celtic salt to taste.
  • To serve - top each bowl with a grain ball and a generous sprinkle of chives.

This is a recipe I came up with after trying a few different Cream of Cauliflower Soup recipes. I think the roasted garlic and the white wine imparts such a wonderful flavor in the soup. I like it to have a little consistency and not to be broth-like so I don't usually need to add any additional chicken broth, however, if you prefer a thinner soup you may need to add a little broth depending on how big your cauliflower heads are. I know it may look a little labor-intensive, but once you taste it I think you will agree it is well worth the time and effort especially if you serve it on a cold winter night.

2 heads garlic
1 teaspoon olive oil
1/2 cup butter (1 Stick)
2 onions, diced
1 carrot, peeled and diced fine
4 (14 ounce) cans chicken broth
1/2 cup flour
1 cup dry white wine
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
2 teaspoons salt
3/4 teaspoon white pepper
1 tablespoon Tabasco sauce (or to taste)
1/4 teaspoon ground cayenne pepper (or to taste)
2 heads cauliflower
2 cups heavy whipping cream
2 cups swiss cheese, shredded
1 (14 ounce) can chicken broth, for thinning if needed

Steps:

  • Preheat oven to 300 degrees.
  • Remove loose outer leaves from garlic and slice off tops of bulbs so that each clove is open at the top.
  • Place heads of garlic on a piece of aluminum foil.
  • Place on cookie sheet.
  • Drizzle garlic heads with 1 tsp olive oil.
  • Seal foil and bake for 1 hour.
  • Open foil and bake for an additional 20 minutes.
  • Remove from oven and let cool.
  • When cool enough to handle squeeze garlic from husks.
  • Using a fork mash garlic and set aside.
  • In large heavy stockpot melt butter.
  • Add diced onions and carrots and saute over medium-low heat until soft, about 30 minutes.
  • While sauteing onion and carrot mixture clean cauliflower removing leaves and separate into small to medium florets.
  • Once onions and carrots are soft add flour and saute' for about 3 minutes.
  • Slowly whisk in wine to flour mixture, mixing thoroughly.
  • Add 4 cans of chicken broth, thyme, black pepper, salt, white pepper, tabasco sauce, cayenne pepper and mashed roasted garlic, mixing thoroughly.
  • Add cleaned cauliflower and bring to a boil.
  • Lower heat, cover and simmer over low heat about 45 minutes.
  • Using a slotted spoon remove about one-half of cauliflower from stock.
  • Using an immersion blender or food processor blend until smooth, making a paste.
  • Return pureed cauliflower to stock pot and add heavy cream and shredded Swiss Cheese.
  • Bring to a simmer and cook for an additional 10 minutes.
  • Depending on the thickness you may or may not need to add a little more chicken broth.
  • If using additional broth to thin only add a little at a time.

5 cups chicken broth
3 tablespoons fresh parsley, finely chopped
salt and pepper

1/4 teaspoon dried tarragon (optional but good to use)
6 tablespoons flour
1 cup full-fat whole milk or 1 cup half-and-half cream
1/2 cup whipping cream
1/4-1/3 cup grated parmesan cheese
3 tablespoons sour cream

Steps:

  • In a Dutch oven, saute onions, carrots, celery and garlic in 1/3 cup butter (can use less butter if desired) until tender (about 5 minutes).
  • Add in cauliflower, broth, parsley, salt, pepper, basil and tarragon (if using).
  • Cover and simmer for about 25-30 minutes, or until cauliflower is firm-tender.
  • Meanwhile in a saucepan, melt remaining 6 tablespoons butter.
  • Whisk in flour until smooth.
  • Gradually add/whisk in milk or half and half cream, whipping cream and the broth/cauliflower mixture; bring to a boil and cook stirring for about 2 minutes,or until thickened.
  • Add in Parmesan cheese; mix to combine.
  • Remove from heat and add/stir in the sour cream.
  • DELICIOUS!

1 cup skim milk

Steps:

  • In a large sauce pan, saute onion in olive oil until transparent.
  • Add cauliflower and cook on medium for 5-7 minutes stirring often.
  • Sprinkle flour over tender crisp cauliflower and then pour in chicken broth.
  • Add milk and cook until mixture begins to thicken.
  • Stir in thyme and brie and remove from heat. Stir until brie is melted and then add salt and pepper if desired.
  • Use an emersion blender to blend soup or transfer to a blender or food processor instead.
  • Garnish with green onions before serving.
  • To freeze: Cool completely. Pour into freezer containers, label and freeze up to four months. To serve: defrost overnight in the fridge. Warm in microwave or on stove top without letting soup come to a full boil.
