CREAMY BACON PASTA BAKE
Creamy bacon sauce makes this pasta bake a delicious, comforting dinner. This is the perfect recipe to make-ahead and feed a crowd.

- Preheat the oven to 180°C/350°F.
- In a large, oven-proof pan, fry the bacon until it starts to crisp. Remove from the pan and set aside. Drain off the bacon fat and reserve for cooking with.
- In the same pan, melt the butter and add the onion. Allow to cook until soft.
- Add the garlic and sage and cook for a minute before adding the flour.
- Stir the flour into the butter then whisk in the milk and cream. Reduce the heat and allow to simmer for 5-7 minutes until the sauce is thick and creamy. Remove from the heat then stir in the bacon, Parmesan and half of the grated cheese. Season to taste.
- Add the cooked pasta and some of the pasta cooking water. Stir to coat the pasta in the sauce. At this stage, the sauce should look quite thin. The pasta will absorb more sauce as it cooks so if it looks too dry at this stage, add more pasta cooking water.
- Top with the remaining cheese and more sage leaves if desired then place in the oven.
- Allow to bake for 15-20 minutes until the cheese is golden brown.
- Remove from the oven, allow to cool for 10 minutes then serve.

CREAMY PASTA WITH BACON
I have to admit whenever I first saw this I was skeptical...but after one bite, I was hooked. It has a flavor that I didn't expect, especially after hearing the ingredients. I don't know where it originally came from as I got this recipe from my mom. Unsure of serving amount...makes quite a bit though.

Steps:
- Cook pasta and drain.
- Fry bacon, drain off grease, and crumble into small pieces.
- Saute mushrooms, garlic, and green onions in bacon grease.
- Add pasta, parmesan, bacon pieces, whipping cream, and black pepper to sauted mushroom mixture.
- Simmer until slightly thickened.
- Enjoy!

- Fry the bacon pieces in a little olive oil until cooked, add the mushrooms and continue cooking for approximately 2 minutes.
- Now add the tin of tomatoes and simmer for a few minutes.

- Cook bacon in heavy large skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towel to drain. Pour off all but 1 tablespoon fat from skillet. Add carrots, peas and parsley and sauté 1 minute. Mix in cream and Parmesan and simmer sauce until it thickens slightly, about 3 minutes. Season to taste with salt and pepper. Place fettuccine in large bowl. Add cream mixture and toss well. Sprinkle with cooked bacon and serve.

- Prep the ingredients and cook the pasta: cut the bacon into lardons then chop the garlic. Boil the pasta in salted water until al dente. Reverse some pasta water and drain the spaghetti.
- Heat up oil on medium-high heat, carefully add the bacon lardon and cook until crispy but not burnt (reserve some cooked bacon to serve on the pasta later). Reduce the heat then add chopped garlic to the pan, stir to combine and continue to cook for about 30 seconds to 1 minute. make sure not to burn the garlic.
- Carefully add pasta water to the pan (be careful as it might bubble) stir to combine and deglaze the bottom of the pan too. Continue to cook for about a minute or two until the liquid reduces. Add heavy cream, chilli flakes and black pepper then stir to combine. Taste for salt and pepper and adjust accordingly. Be careful not to oversalt as the bacon contains salt and so is the pasta water.
- Lastly, add the cooked spaghetti to the creamy sauce, toss or stir to combine. Add some pasta water to loosen the dish if it appears to be dry. Take the pasta off the heat and serve immediately.
