CREAMY BABY POTATOES RECIPE
Creamy Garlic Sauce Baby Potatoes Recipe - boiled BABY POTATOES mixed with super CREAMY WHITE GARLIC SAUCE.

Steps:
- First, lets boil baby potatoes, fill a pot with salted water & bring it to a boil. Add baby gold potatoes. Bring to a gently boil, reduce to medium heat and cook until baby potatoes are soft when pierced with a knife. Carefully drain water, set aside.
- Next, in large skillet preheat 2 tablespoons of olive oil on a medium heat. Add 1 finely chopped garlic clove & saute for 1 minute.
- Add 2 cups of chopped onion and saute for 5 minutes, stirring few times. Next, add 2 cups of grated carrots and saute for 5 more minutes stirring few times.
- After, sprinkle 1 tablespoon of flour over saute onions and stir until combined. Pour in 2 cups of heavy whipping cream, stir continuously and bring it to a gentle boil. Season with salt and pepper to taste.
- Add boiled baby potatoes to the skillet, stir with creamy sauce until combined and heated thru. Garnish with 1/4 cup of finely chopped parsley. Serve with Ribeye Steak on the Stove or Bang Bang Chicken Recipe. Enjoy!

- Preheat the oven to 425 degrees F.
- To make the potatoes: In a medium saucepan combine the vermouth, water, parsley, tarragon, lemon zest, and salt. Set aside.
- Cut the potatoes in half horizontally. Slice a small portion off of the rounded ends-- so the potatoes stand up without rolling around -- and discard. Add the halved potatoes to the saucepan. Bring to a boil over medium heat; adjust the heat to maintain a gentle simmer and cook until just fork tender, about 8 minutes. Set the potatoes aside to cool in the liquid for 5 minutes.
- Drain the potatoes, reserving 2 teaspoons of the cooking liquid. Discard the herbs and lemon zest. With a small spoon or melon baller, scoop out a little of each potato, to make a little "bowl" for the cheese.
- Toss the potatoes with the oil in a small bowl, and stand them up on a baking sheet. Bake until lightly browned, about 15 minutes.
- Meanwhile, make the filling: In a medium bowl, cream the cheese with the creme fraiche and the 2 teaspoons of reserved cooking liquid. Fold in the minced parsley, tarragon, chives, and chervil. Season with pepper, to taste.
- Remove the potatoes from the oven and let cool slightly. While the potatoes are still warm, spoon a dollop of the cheese mixture into each potato. Set the potatoes on a platter and top off with the chive segments to garnish. Serve.

- Drain and cover to keep warm.

COMPANY BABY POTATOES
Just wanted to do something different with potatoes. My husband likes potato skins a little crispy and we both love garlic. The ingredients are approximate and I used rosemary because that is what I had on hand. They looked like I had spent a lot of time preparing them! They were so easy and could be prepared ahead of time that I called the Company Baby Potatoes. (Plus they were GOOD!)

- Wash potatoes.
- Place them in a sauce pan and cover with water.
- Boil until soft (approximately 20 minutes).
- While potatoes are boiling put olive oil, garlic cloves (cut in large pieces), rosemary and garlic salt in heavy skillet.
- Heat the oil on low until potatoes are done.
- When the potatoes are done remove them from water and dry on paper towels.
- Increase the skillet heat to medium and remove garlic cloves.
- Add potatoes to skillet and saute about 10 minutes or until just browned, turning occassionly.
- To serve remove potatoes to a serving bowl, pour remaining oil over them and dust with chopped parsley and grated romano cheese.
