4 cups soft bread cubes
¼ cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1 ¾ cups milk
¼ cup margarine
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
2 eggs, beaten
¼ cup white sugar
¼ cup brown sugar
½ cup milk
½ cup margarine
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
  • In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
  • Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
  • While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

Sweet-Tart with cheesecake texture/sourdough bread pudding all-in-one! Honey-crisp apples and fresh cranberries inspired me to bake a bread pudding, with a touch of real maple syrup. It's comfort food for this February day, when we are expecting a blizzard in New England.

2 large honeycrisp apples, peeled and sliced
1 1/2 cup(s) fresh cranberries, chopped
1 pound(s) ricotta cheese
2 large eggs, stirred
2 teaspoon(s) vanilla extract
1/2 cup(s) sugar
6 slice(s) sourdough bread, crust removed, cut into strips
2 tablespoon(s) real maple syrup

Steps:

  • Grease a 2 quart casserole, preheat oven to 350 degrees. Slice apples, chop cranberries. Cut crust off bread and cut bread into about 1/2 inch strips.
  • Mix the two eggs beaten with the ricotta cheese, add the vanilla. Take half the bread and place it first in the casserole, second layer will be half the apples and half of the cranberries, then pour about half of the egg/cheese mixture over and spread evenly.
  • Repeat the layers: bread, fruit, egg & cheese mixture, and last top this with two tablespoons of real maple syrup.
  • Bake uncovered for one hour. Cool slightly and serve!

2 cups milk
2 eggs
3/4 cup sugar
8 slices cinnamon-raisin bread, cubed
1 large apple, peeled, chopped
1 tsp. vanilla
2 Tbsp. sugar
1/8 tsp. ground cinnamon

Steps:

  • Preheat oven to 350°F. Beat ricotta cheese in large bowl with wire whisk until creamy. Add milk, eggs and 3/4 cup sugar; beat until well blended. Add bread cubes, apples and vanilla; stir gently until bread cubes are evenly moistened.
  • Pour into greased 3-qt. shallow baking dish.
  • Bake 45 to 50 min. or until center is almost set. Combine 2 Tbsp. sugar and the cinnamon; sprinkle over pudding. Cool. Store leftover pudding in refrigerator.

1/2 loaf French bread or baguette, with crust, cut into small cubes
1 pound brown sugar
1 1/2 cups water
1 1/2 teaspoons ground cinnamon
2 large Granny Smith apples, peeled, cored and chopped
1 cup walnuts, chopped
1/2 pound cream cheese, chilled and chopped
Crema or heavy cream for garnish

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 x 13inch glass casserole or lasagna pan.
  • Melt the butter in a medium saucepan, add the bread cubes and stir to coat evenly. Spread the cubes on a baking sheet and bake 15 minutes or until lightly brown and crisp. Remove the bread and turn the oven temperature up to 400 degrees F.
  • Combine the sugar and water in a saucepan and bring to a boil. Remove from the heat. Stir in the cinnamon and set aside.
  • In a large mixing bowl, combine the chopped apples, walnuts, cream cheese and toasted bread cubes. Drizzle with the reserved sugar syrup and mix to evenly distribute. Transfer the mixture to the prepared pan.

4 eggs
1 1/2 cups milk
2 cups heavy cream
1/2 cup sugar
6 cups bread (about 10 slices)
1 tsp cinnamon
1/4 cup butter, melted
2 cups apples, peeled and sliced (about 3 apples)
1/2 cup heavy cream
1/2 cup brown sugar
1 tsp vanilla
4 tbsp butter

Steps:

  • Preheat oven to 350ºF. Prepare a 9 x 13 inch baking dish by greasing with butter or cooking spray.
  • Prepare bread by slicing into one inch cubes.
  • In a large mixing bowl whisk the eggs until bubbly. Add in the milk and cream and whisk to combine.
  • Measure out the sugar and remove one tablespoon and combine with the melted butter. Add remaining to the milk and egg mixture.
  • Add 1/2 tsp cinnamon to the melted butter and 1/2 tsp to the eggs and milk.
  • Stir the egg and milk mixture until the cinnamon and sugar is well combined.
  • Add in the cubed bread pieces until they are all well coated. Folding with a wooden spoon or spatula careful to not break up the bread too much.
  • To the prepared baking dish add half of the creamy bread mixture, top with a layer of sliced apples. Add another layer on top emptying all of the contents of the mixing bowl. Layer with another layer of sliced apples. Drizzle with the melted butter, sugar and cinnamon mixture.
  • Bake for 50 minutes. When the bread pudding is done, you want it to jiggle just a little in the center. Allow to rest for 10-15 minutes until ready to serve.

1 cup milk
1 cup heavy cream
1 1/2-2 cups apples
1/2 cup raisins
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla extract
1 teaspoon almond extract
3 -4 cups stale bread cubes
1 cup light brown sugar
1/4 cup butter, softened
1 cup chopped pecans
1 1/2 cups semi-sweet chocolate chips
2 tablespoons butter
1/2 cup heavy cream
1 tablespoon coffee-flavored liqueur
1/2 cup maple syrup
1/4 cup butter
1/2 cup brown sugar
chopped pecans (optional)

Steps:

  • Preheat oven to 350° and grease a 9x13 pan (may need to use 2 pans, like a 9x13 and an 8x8, if your bread slices are big) or if making bread pudding muffins grease 12 muffin tins.
  • Place bread cubes in a bowl.
  • Mix together apple, nutmeg, cinnamon, sugar (if using any, I find it too sweet when I add suagr but others in my family like this with added sugar), 6 eggs, and both milks, almond extract, and vanilla in a a separate bowl. Pour this mixture over bread cubes and let sit for at least 10 minutes.
  • Pour into bread mixture into the greased dish or muffin tins.
  • Combine crumble ingredients until it looks like crumbly and sprinkle over bread pudding.
  • Bake for 30 minutes for muffins or 40-50 minutes for 9x13 dish OR until set, watch carefully!
  • Sauce for the Grown Ups:.
  • Combine chips, butter, and heavy cream and melt in microwave until melted (Stirring every 30 seconds).
  • Then mix in liqueur and serve over bread pudding!
  • Sauce for the Little Ones:.
  • Mix syrup and butter and place in microwave until melted (stirring every 30 seconds).
  • Then stir in the brown sugar and microwave again until dissolved (stirring every 30 seconds).
  • You may make this dish ahead and leave in the fridge over night, then bake in the morning.

RHUBARB AND RICOTTA BREAD & BUTTER PUDDING

This indulgent spring bread and butter pudding is full of seasonal rhubarb and rich ricotta, perfect for entertaining a crowd with a sweet tooth

400g rhubarb
150g golden caster sugar
300ml whole milk
300ml double cream
½ tsp vanilla extract
3 large eggs , plus 1 egg yolk
about 250g bread (soft white rolls, sliced bread, or brioche)
35g butter
200g ricotta
25g icing sugar , plus extra for dusting
1 lemon , zested
1 orange , zested
crème fraîche , or cream and Greek yogurt, to serve

Steps:

  • Trim the rhubarb and cut it into 3cm pieces. Heat 100ml water in a pan with 50g of the sugar. Bring to the boil and add the rhubarb. Simmer for 11/2 mins, then carefully lift the rhubarb out with a slotted spoon. Arrange it on a plate or tray so that it can lie in a single layer (if you keep the pieces too close to each other, they'll continue to cook and soften - you want them to stay intact).
  • Put the milk and cream in a heavy-bottomed pan, add a pinch of salt and bring to the boil, then add the vanilla. Beat the eggs, extra yolk and the rest of the sugar together in a bowl. Pour the warm milk and cream onto this, stirring all the time. Heat oven to 180C/160C fan/gas 4.
  • Butter the bread. Drain the ricotta (if there is any liquid on top), then add the icing sugar to it. Spread the buttered bread thickly with ricotta. Sprinkle the citrus zest on top, then layer these slices with the rhubarb in a 20 x 30cm ovenproof dish. Pour the egg and cream mixture through a sieve and leave to sit for 30 mins (this makes the pudding lighter).
  • Put the dish in a roasting tin. Add enough boiling water to the tin to come halfway up the sides of the dish. Bake for 40-45 mins or until puffy and set on the top, and golden in colour. Leave to cool for about 10 mins (the pudding will continue to cook and 'set' during this time). Dust with icing sugar and serve with crème fraîche, or cream mixed with Greek yogurt.

2 tablespoons unsalted butter, melted
6 slices challah, each 1 1/4-inches thick, cut into 1/2-inch cubes
1/2 cup golden raisin
1 cup milk
15 ounces ricotta cheese
1/2 cup sugar
2 eggs
1 cup sour cream
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Coat a 1 1/2-quart souffle dish with 1 tablespoon melted butter. Add bread and raisins to dish. Pour milk over top; stir to combine. Set aside.
  • Mix together the ricotta, sugar, eggs, sour cream, lemon zest and vanilla. Pour ricotta mixture over bread; mix lightly. Drizzle remaining 1 tablespoons butter over bread and sprinkle with cinnamon. Cover dish with aluminum foil; place in slow cooker bowl. Fill bowl with boiling water to reach 1-inch up the side of dish.
  • Cover top of slow cooker with a dish towel; top with lid. Cook for 2 1/2 hours on high or until internal temperature registers 140 on an instant read thermometer. Cool at least 20 minutes.

1 cup granny smith apple, peeled and chopped
1/2 cup brown sugar, packed
2 eggs
1 cup evaporated 2% milk
1/2 cup skim milk
1 1/2 teaspoons vanilla
1/4 teaspoon cinnamon, ground
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl, toss bread cubes and apples together.
  • In separate bowl, whisk together brown sugar and eggs.
  • Add evaporated milk, skim milk, vanilla, cinnamon, nutmeg and whisk again.
  • Pour egg/milk mixture over bread cubes and apples.
  • Stir well and let stand 5 minutes for bread to absorb liquid.
  • Transfer mixture to an 8 x 8"- baking pan coated with non-stick spray, ensuring apples are evenly distributed.
  • Bake 50 minutes or until bread is deep golden brown and puffed up.
