2 tablespoons butter
3 tablespoons honey
10 cups sliced Vidalia or other sweet onions (about 5 onions)
1/4 cup chicken broth
1/2 teaspoon salt
1/8 teaspoon white pepper
1/8 teaspoon ground mace
1/2 cup heavy whipping cream

Steps:

  • In a Dutch oven, melt butter over medium heat; stir in honey until blended. Add onions, broth and seasonings. Bring to a boil. Reduce heat; simmer, covered, 15-18 minutes or until onions are tender., Cook, uncovered, over medium-high heat 15-20 minutes or until liquid is almost evaporated, stirring occasionally. Stir in cream; cook 3-5 minutes longer or until sauce is thickened.

This dish is a perfect addition to the traditional holiday turkey dinner. In my family, neither Thanksgiving or Christmas dinner would be complete without serving creamed onions.

16 -20 fresh boiling onions, golf ball size, from produce department
2 tablespoons flour (I prefer Wondra.)
1 cup cold milk
2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika

Steps:

  • Fill a large stock pot with water and heat to a rolling boil.
  • Add unpeeled onions and blanch for about 3 minutes.
  • Drain and allow onions to cool.
  • Re-fill stock pot with water and again heat to boiling temperature.
  • Peel each onion by cutting the root end, not the tail end) and then squeezing the onion from its skin.
  • Add the onions to the boiling water and cook until fork tender but not mushy.
  • Meanwhile, stir together all remaining recipe ingredients in a medium saucepan and cook over medium heat, stirring constantly, until boiling. Continue to cook and stir about one more minute, until sauce has thickened.
  • Combine the fork tender cooked onions with the sauce and sprinkle with paprika.

VIDALIA ONION POT ROAST

1 fresh beef brisket, about 4 pounds, well trimmed
Salt and pepper to taste
2 tablespoons dry thyme
1 tablespoons dry rosemary
2 tablespoons olive oil
4 large vidalia onions (or other sweets), peeled and sliced, about 4 cups
1 cup dry red wine
3 carrots, thinly sliced, about 1 cup
2 tablespoons chopped garlic
2 cups hot beef stock lightened with 1 cup water added
2 celery stalks tied with 3 bay leaves into a bouquet garni

Steps:

  • Preheat oven to 375 degrees.
  • Season the beef brisket well with salt and pepper. Crush the thyme and rosemary together with a mortar and pestle and rub the herb mix into the beef, coating it evenly. Rub the beef well with 1 tablespoon of the olive oil.
  • Heat a large saute pan with 1 tablespoon olive oil over medium high heat for 2 to 3 minutes until the pan is nearly smoking. Add the beef to the hot pan and sear well on one side until browned before turning the beef over and searing the other side. When the beef has been well browned on both sides, remove from the pan and set aside.
  • Add the onions to the saute pan and cook them until golden brown. Add the red wine to the onions and reduce by half.
  • Pour the onions into a large heavy roasting pan and spread evenly across the bottom before putting the beef on the bed of onions. Add the carrots, garlic, hot beef/water and celery bundle to the beef in the roasting pan and place, uncovered, into the oven. All the combined liquid should rise only 2/3 as high as the meat is thick. Add additional water to maintain the braising liquid height.
  • Cook for 1 hour before turning the beef over. Cook the second side uncovered for 1 hour before covering the pan with a cover or foil and turning the oven down to 325 degrees. Continue to slowly braise the beef brisket for 1 1/2 to 2 additional hours.
  • Remove the pan from the oven, discard the celery bouquet and allow the beef to rest for 20 minutes before slicing and serving with some of the onion jus.

1 1/2 tablespoons unsalted butter
1 pound peeled fresh or thawed frozen pearl onions
Kosher salt and freshly ground black pepper
4 cups cauliflower florets (from 1/2 large head)
2 ounces Gruyere cheese, grated (1/2 cups)
1/8 teaspoon packed freshly grated nutmeg
2 tablespoons packed fresh flat-leaf parsley leaves, chopped

Steps:

  • 1. Preheat one Frigidaire Gallery® Double Wall Ovens to 400°F. Grease a 2-quart shallow baking dish with 1/2 tablespoon butter. 2. Spread the onions in the dish, sprinkle with salt and pepper, and dot with the remaining tablespoon butter. Roast until tender and caramelized, about 30 minutes. 3. Meanwhile, bring a large saucepan of water to a boil over high heat on a Frigidaire Induction Cooktop. Add the cauliflower and 1 tablespoon salt. Boil until very tender, about 10 minutes. Use a slotted spoon to transfer the cauliflower to a food processor. Puree until very smooth, scraping down the sides of the bowl occasionally. Add the cheese and nutmeg and process until very smooth. Season to taste with salt and pepper. 4. Fold the sauce into the roasted onions, cover tightly with foil, and return to the oven. Bake until the sauce is thickened and bubbling, about 15 minutes. Meanwhile, preheat the other Frigidaire Gallery® Double Wall Oven to the power broil setting, with a rack 6 inches from the broiler heat source. 5. Uncover the dish and transfer to the broiler. Broil until browned in spots, 1 to 2 minutes. Sprinkle with parsley and serve hot.

6 large vidalia onions, peeled and sliced very thinly
salt and pepper
1/2 cup butter
30 Ritz crackers (use one sleeve of crackers, coarsely crushed)
1 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 2-qt casserole dish.
  • In a large saucepan, melt butter.
  • Add onions to pan, over high heat, saute until soft, and just starting to brown, about 20-25 minutes
  • Remove from heat.
  • Place half of the onions in the baking dish; cover with half the crackers, and half of the Parmesan.
  • Repeat to make another layer of onions, crackers and Parmesan Bake, uncovered, until cheese on top is lightly browned, about 25 mins Serve warm.
  • Note: if made a day ahead, let cool, and keep refrigerated until time to reheat for serving.

When we first prepared this recipe, we weren't quite sure we'd like this soup served cold, but we figured we could always heat it up if we preferred it that way. However, when the soup was done and we tried it chilled, it was absolutely delicious! A wonderfully creamy and tasty soup, a keeper for my cookbook. It is an adaption of a recipe from Gourmet Magazine (June 1989). The original recipe made a huge batch - this is our scaled-down version with some substitutions. The recipe could easily be made vegetarian simply by omitting the bacon (although you could try veggie bacon) and using vegetable broth. Prep time includes chilling.

1 slice lean bacon, cut crosswise into 1/2 inch strips
2 tablespoons unsalted butter
1 tablespoon olive oil
2 large vidalia onions, sliced thin
2 cloves garlic
1 cup chicken broth
1/3 cup dry white wine
1/4 teaspoon dried thyme or 1 teaspoon fresh thyme
1/2 bay leaf
1/4 cup well-chilled heavy cream or 1/4 cup half-and-half
1/4 cup creme fraiche or 1/4 cup cream cheese
2 teaspoons fresh lemon juice
1 -2 dash Tabasco sauce, to taste
2 dashes freshly grated nutmeg
1/3 cup crouton
1/4 cup thinly sliced scallion
salt, to taste
fresh ground black pepper or tricolor pepper, to taste

Steps:

  • In a heavy kettle cook the bacon over moderate heat, stirring occasionally, until it is crisp and transfer it with a slotted spoon to paper towels to drain.
  • Add the butter and oil to the kettle and in the fat cook the onion and garlic, covered, over low heat, stirring occasionally, for 25 to 30 minutes, or until they are colored lightly and softened.
  • Add chicken broth, wine, thyme, and bay leaf and simmer the mixture, covered, for 20 minutes.
  • Discard the bay leaf and in a blender or food processor purée the mixture in batches.
  • Strain the mixture into a bowl, pressing hard on the solids- this is an important step, so don't skimp on the time it might take to separate the solids; discard solids.
  • Chill the mixture covered, for 3 to 4 hours, or until it is cold.
  • Whisk in the heavy cream (I use 1/2 and 1/2), crème fraîche (I use softened cream cheese), lemon juice, Tabasco, nutmeg, and salt and pepper to taste- I used a stick blender to get the milk and cheese smooth- and serve the soup in chilled bowls, sprinkle with the bacon, croutons, and scallion.
  • Notes: The texture of this came out very much like tomato soup- at first, after doing the puree in the food processor, I considered just putting the whole mess into the soup, because when I put the puree into the strainer the drip of liquid was slow; but I took about 15 minutes with a spatula, moving the puree around and pressing it through the strainer and scraping it off the bottom, and sure enough, eventually I had most of it through and what came out into the bowl (and scraped off the bottom of the strainer) was quite a different texture than what I would have gotten otherwise; I ended up with about 4 cups of liquid (also containing*very* fine puree) and about a 1/2 cup of solids.

If the onions become tender before the sauce has thickened, mix a little corn starch and water and drizzle a small amount in and stir over heat until it reaches the desired thickness. Alternatively add more cream if it is too thick. The onions should be tender but not mushy and the sauce should be thick and creamy.
