2 tablespoons olive oil (divided)
1/2 medium sweet onion (finely diced)
1 cup sliced mushrooms
9 ounces baby spinach
1/8 teaspoon nutmeg
1 tablespoon flour
1/2 cup fat-free milk
3/4 cup shredded Colby Jack cheese

Steps:

  • Heat 1 Tbsp. oil in large skillet over medium high heat; add onions and cook for 2-3 minutes, until translucent. Add mushrooms cook for 5 minutes, or until browned. Add spinach, nutmeg, salt and pepper and cook until spinach is wilted. Remove pan from heat and set aside.
  • Heat remaining oil over medium heat. Whisk in flour and cook, stirring 1-2 minutes, or until bubbling. Slowly whisk in milk and continue to whisk until bubbling. Remove from heat. Add cheese and mix until melted.
  • Add cheese to vegetable mixture and mix until well combined.

16 oz baby spinach
24 oz cremini mushrooms (stems removed, roughly chopped)
1 onion (chopped)
4 cloves garlic (finely minced)
4 Tbsp unsalted butter ((more as needed))
2 oz cream cheese
kosher salt (to taste)
crushed black pepper (to taste)

Steps:

  • On low heat, melt butter in a large pan. Cook onions for 20 minutes, until transparent and lightly browned.
  • Increase the heat to medium-high and add mushrooms. Season liberally with kosher salt. Cook until they are done shrinking and are a deep brown color.
  • Stir in garlic. Cook for 30 seconds, until fragrant.
  • Add spinach, one handful at a time, until all of the spinach is incorporated. Cook for another 2-3 minutes until the spinach has completely wilted, then turn off the heat.
  • While the pan is still hot, stir in cream cheese and season salt and pepper. Serve warm.

  • In a small skillet, saute mushrooms in oil and butter until tender. Add spinach; cover and cook for 1 minute or until wilted., Stir in the cream cheese, salt and pepper. Serve immediately.

2 tablespoons extra-virgin olive oil
3 cloves garlic, smashed
2 cups sliced cremini mushrooms
Kosher salt and freshly ground black pepper
10 ounces baby spinach
1 to 2 tablespoons balsamic vinegar

Steps:

  • Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
  • Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

1 package frozen chopped spinach (thawed) or 2 bunches fresh spinach
1/2 large onion, chopped
1 lb mushroom, sliced
2 tablespoons vegetable oil
1 teaspoon dried garlic or 2 cloves fresh diced garlic
3 tablespoons sour cream
salt and pepper

Steps:

  • If using fresh spinach, unbundle and soak in a sink full of cold water.
  • Swish around and drain water out of the sink.
  • Repeat.
  • This is to remove sand and grit.
  • Chop coarsely when ready to cook.
  • Drain spinach and steam on medium heat in large pan.
  • Meanwhile saute mushrooms, onion and garlic in oil on med-high heat.
  • When spinach is tender, drain all remaining water (if any water remains the dish will be too watery) and add mushroom/onions.
  • Turn off heat and stir in sour cream, add salt and pepper to taste and mix well.
  • Add more sour cream if you wish-- this is up to the cook.
  • Serve hot and enjoy!

4 tsp canola oil, divided
8 oz cremini mushrooms, sliced
10 oz baby spinach, fresh
1/3 c shallots, finely chopped
2 tsp fresh garlic, minced
3/4 c 2% milk
1 Tbsp all-purpose flour
3/8 tsp salt
1/4 tsp black pepper, freshly ground
1 dash(es) nutmeg
2 1/2 oz cream cheese, 1/3 less fat okay

Steps:

  • 1. Heat a large skillet over medium-high heat. Add 1 1/2 teaspoons oil; swirl to coat. Add mushrooms; cook 6 minutes or until liquid evaporates. Remove mushrooms from pan.
  • 2. Add 1 1/2 teaspoons oil to pan; swirl to coat. Add spinach; cook 1 minute or until spinach wilts. Remove from heat.
  • 3. Heat a Dutch oven over medium heat. Add remaining 1 teaspoon oil; swirl to coat. Add shallots and garlic; cook 1 minute, stirring constantly. Combine milk and flour, stirring with a whisk.
  • 4. Add milk mixture, salt, pepper, and nutmeg to pan; bring to a boil, stirring constantly. Cook 3 minutes or until thickened, stirring constantly. Add cheese; stir until cheese melts and the mixture is smooth.
  • 5. Add mushrooms and spinach to milk mixture, and toss gently to coat.

20 medium sized mushrooms
1 tablespoon butter
2 cloves garlic, minced
4 cups fresh spinach
8 oz cream cheese
salt, to taste
pepper, to taste
¼ cup breadcrumb
¼ cup parmesan cheese

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Remove the stems from the mushrooms. Place the top half on a baking sheet.
  • Mince the stems.
  • Melt the butter in a pan and add the minced stems and minced garlic. Stir and cook for 2 minutes.
  • Add the spinach, cook until it wilts.
  • Add the cream cheese, salt, and pepper. Stir until the cream cheese is melted and everything is well-combined.
  • Take a spoonful of the spinach mixture and fill each mushroom top.
  • Mix bread crumbs and Parmesan cheese in a bowl and sprinkle the mixture on top of the dip stuffed mushrooms.
  • Bake for 12-15 minutes or until golden brown.

175g wholemeal penne
50g unroasted, unsalted cashews
10g dried porcini mushrooms
1 tsp vegetable bouillon powder
1 tbsp rapeseed oil
120g chestnut mushrooms, halved if large, thinly sliced
2 large garlic cloves, finely grated
200g baby spinach

Steps:

  • Cook the penne following pack instructions and put the kettle on to boil. Meanwhile, put the cashews and dried mushrooms in a medium heatproof bowl along with the bouillon powder, and pour over 200ml boiling water from the kettle. Leave to soak for 5 mins. After this time, blitz the mixture with a hand blender until smooth and creamy.
  • Heat the oil in a large non-stick frying pan over a medium heat and fry the fresh mushrooms and garlic for a couple of minutes until just starting to soften. Add the spinach and continue to cook, stirring frequently until the spinach has wilted. Drain the pasta, reserving a little of the cooking water. Tip the pasta into the pan with the mushroom mixture, season with plenty of black pepper and toss everything together well. Remove from the heat and stir through the creamy mushroom sauce, adding a drop of the reserved cooking water if needed to loosen. Serve straightaway.

Bay-crumbed salmon with creamed spinach & wild mushrooms image

Serve Tom Kerridge's salmon with creamed spinach and a light white wine and mushroom sauce for a fabulous fish course. It's also a great dish for Good Friday

4 bay leaves
50g dried breadcrumbs (preferably panko)
½ lemon , zested and juiced
500g spinach
300ml double cream
100ml white wine
30g dried porcini mushrooms , very roughly chopped
1 whole skinless salmon fillet (about 850g)
50g butter

Steps:

  • Crush the bay leaves as finely as possible using a pestle and mortar, then mix with the breadcrumbs, lemon zest and some seasoning, then set aside. Put the spinach in a colander and pour over boiled water from the kettle to wilt it. Rinse under cold water to cool, then squeeze out as much of the water as possible. Bring the cream, white wine and mushrooms to the boil in a pan, then remove from the heat and set aside.
  • Spread out the wilted spinach in the base of a baking dish or roasting tin that's large enough to snugly fit the salmon. Pour over the creamy mushrooms. Season to taste. Lay the salmon on top, down the middle of the dish, with the rounded-side up. Season the salmon and drizzle over the lemon juice, then scatter over the breadcrumbs so the fillet is completely covered. Will keep chilled for up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Dot the butter over the salmon and bake for 30-35 mins until the fish is just cooked through, the crumb is golden and the cream has bubbled into the spinach. Leave to rest for a few minutes, then serve the salmon and spinach straight from the dish.
