4 medium red potatoes, cut into wedges
1 package (10 ounces) frozen beans or peas
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup milk

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Cook beans according to package directions. , Meanwhile, melt butter in a saucepan; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Drain potatoes and beans; place in a serving bowl. Add sauce and stir to coat.

6-8 red potatoes (cut into 1" cubes)
3-4 tablespoons butter
1/4 cup flour
2 cups milk (or to taste)
salt and pepper (to taste)
1-2 cups peas (fresh or frozen)

Steps:

  • Boil potatoes in salted water until just done/fork tender, approximately 10-15 minutes depending on the size of your potato cubes (you don't want them overdone or they will get mushy real quick). Drain and set aside.
  • In a medium-sized saucepan, melt butter over medium heat.
  • Slowly add flour, stirring, until flour/butter mixture becomes doughy (you may not need all the flour).
  • SLOWLY add milk, whisking constantly until mixture becomes smooth and creamy. You want it to be a gravy consistency so add more milk if it seems too thick. Add salt and pepper, to taste.
  • Add peas and bring to a slight simmer.
  • Carefully stir potatoes into creamy mixture until potatoes become well covered and serve!

1 pound baby red potatoes, quartered
1 cup shelled English peas
1 tablespoon butter
1 tablespoon all-purpose flour
salt and pepper to taste
1 cup milk

Steps:

  • Bring a large pot of water to a boil over high heat. Boil potatoes for 15 to 20 minutes, or until tender. Drain.
  • In a medium saucepan, bring 1 cup water to a boil. Simmer peas in boiling water for 6 to 7 minutes, or until tender (do NOT overcook). Drain.
  • Using the same saucepan, melt butter over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Now add potatoes and peas to the sauce; simmer for about 5 minutes, stirring often. Serve immediately.

8 slices Thick-sliced hickory-smoked bacon (reserve 2 raw slices)
1 Sweet Vidalia onion (sliced)
6 cups Fresh organic green beans (cleaned, stems and tips removed)
5 large Red-skinned potatoes (cut into bite-sized pieces, skin on)
4 cups Organic Chicken stock (+ enough to cover)
Kosher salt (own taste)
Freshly ground pepper (own taste)
1 tablespoon Bacon drippings or real butter

Steps:

  • Heat a medium-sized cast-iron skillet on low to medium heat before adding thickly sliced pieces of hickory smoked bacon, cook slowly until the bacon has browned and become crisp. Do not overcook the bacon.
  • Place the bacon on baker's rack to drain excess bacon grease and keep the crispiness of the bacon.
  • Drain most of the bacon grease from the cast iron skillet and place it on medium heat. Add the sliced onions and cook for about 3 minutes. Remove the cast-iron skillet from the heat.
  • Place 6 cups of fresh clean, tips removed, sliced green beans in a Dutch oven, and 2 slices of the reserved raw bacon. Add the cut-up bite-sized red-skinned potatoes, cover with about 4 cups of chicken stock or more if needed.
  • Add 1 tablespoon of bacon grease or unsalted butter, season the green beans and potato mixture with kosher salt and freshly ground black peppercorns to your own taste.
  • Place the dutch oven on low-medium heat and slowly cook until the potatoes and green beans are tender; about 45-50 minutes.
  • Chop the 6 slices of crisp bacon and reserve until ready to serve.
  • Once the Southern-Style Green Beans and Red Potatoes are tender, remove them from heat, place them in a serving bowl and sprinkle the top with chopped bacon.

1 lb fresh greenbeans (cooked al dente)
4 clove garlic
1/4 c butter
1/2 c flour
1 c potato water

2 Tbsp chives( fresh and diced)

  • 1. Place washed potatoes in sauce pan add enough salted water to cover them,add the garlic cloves. Bring to a boil and let cook till you can stick them with a fork and it goes right into the potato.
  • 2. In a sauté pan melt butter, add flour, stir flour into the butter , whisk this so it doesn't burn, cook about 1 minute to get rid of the flour taste.
  • 3. Carefully add 1 cup of water from the potatoes. Whisk to combine, bring to a boil and add milk whisk until this comes to a boil again and thickens.
  • 4. Chop up your chives and add to milk mixture. at this point you can add some shredded cheese if you like.
  • 5. Drain your potatoes, add green beans , pour milk mixture over both and mix together.
